3 cups small florets purple cauliflower (about 1 small head)
3 tablespoons extra-virgin olive oil
2 tablespoons za'atar spice blend
Kosher salt
12 slices French bread (1/2-inch slices)
Extra-virgin olive oil

4 cups coarsely chopped avocado (about 4 small avocados)
3 to 4 teaspoons minced Fresno chile (about 2 chiles), depending on your heat preference
2 teaspoons minced garlic
1/4 cup fresh lime juice, plus more as needed
Kosher salt
1 1/2 cups labne (about 6 ounces)
2 tablespoons honey

Steps:

  • For the roasted cauliflower: Put a baking sheet in the oven and preheat to 450 degrees F.
  • Meanwhile, toss together the cauliflower florets, olive oil and za'atar in a medium bowl. When the oven is at temperature, pour the cauliflower onto the hot baking sheet, making sure to scrape out all the oil and za'atar. Bake for 10 to 12 minutes, until the cauliflower is crispy and tender. Let cool slightly.
  • For the toast: Preheat a grill or grill pan over medium heat. Lay the sliced bread out on a clean work surface, brush on both sides with oil and season with salt. When the grill is hot, add the bread and grill for 1 to 2 minutes per side, until the bread is charred and toasted. Remove to a baking sheet.
  • For the avocado: Place the avocado, 3 tablespoons of the Fresno chile, and the garlic in a large bowl. Mash together with the back of a fork until evenly incorporated but still chunky. Stir in the lime juice and season with salt. Let sit for 5 minutes, then taste and adjust the salt and lime juice as needed. You can also stir in the remaining 1 teaspoon Fresno chile for more heat!
  • For the labne: Mix together the labne and honey. Set aside.
  • To assemble: Divide the avocado mixture evenly over the toasts, spreading it to the edges. Top with the labne, leaving a 1-inch border. Add a few pieces of roasted cauliflower to each toast. Serve immediately.

I had a giant jar of Za'atar I was sick of saving for hummus and savory yogurt - that's when I came up with this avocado toast that rivals many of the best avocado toasts I've had.

1 thick slice bread, preferably something with an airy crumb and good crust
1 half of a ripe avocado
high quality olive oil
maldon salt or other fleur de sel
za'atar spice mix

Steps:

  • Toast your bread.
  • Mash your half avocado and spread on bread, it will be a thick layer.
  • Drizzle your avocado toast with olive oil, about 2 teaspooons worth.
  • Sprinkle a pinch or three on za'atar on the avocado, how much you use is up to your taste-start small you can always add more.
  • Sprinkle toast with a pinch of fleur de sel, crushing it between your fingers as your sprinkle it over your toast.
  • Eat!

  • Set a medium pot, filled with 2-3 inches of lightly salted water with a teaspoon of white vinegar (optional) to boil on the stove. Crack the eggs into a bowl, taking care to keep yolks intact, set aside.
  • Cut the avocado in half, remove the seed and scoop out the flesh into a small bowl. Add 1 teaspoon zest, the juice from half a lemon, 2 teaspoons oil, salt and pepper and stir and mash with a fork to combine. It does not need to be smooth. Taste. Adjust salt, you want this to be slightly salty and lemony.
  • Once the water is boiling turn heat down so it’s just simmering. Gently slip the the Eggs right into the simmering water. Cook for 2-3 minutes or until egg white is set. Turn heat off.

  • Line a plate with a paper towel. Crack the egg into a small ramekin and set it aside. Fill a medium saucepot with 3 cups (720 ml) of water and bring to a boil over high heat. Once the water is boiling, reduce the heat to low and add the white vinegar. Use a spoon to stir the water, creating a small whirlpool in the pot. Carefully pour the egg directly from the ramekin into the center of the swirling water. Once the egg is in the pot, put your bread in the toaster while the egg cooks.
  • Allow the egg to cook for 3 minutes for a runny egg yolk. If you like a more well-done egg, add another minute of cooking time. Once the egg is finished, remove it from the water with a slotted spoon and transfer it to the lined plate.
  • While your egg cools slightly, spread the avocado mixture over your toasted slice of bread. Spread the harissa over the avocado and sprinkle with the remaining za’atar. Place the poached egg on top of the avocado toast, and garnish with a little bit of fresh basil.
