1/3 cup sour cream (or Greek yogurt)
3 tablespoons freshly squeezed lime juice
2 tablespoons cilantro leaves
3/4 teaspoon Kosher salt
1/2 teaspoon garlic powder

Steps:

  • Add the flesh of the avocados and the remaining ingredients to a blender or food processor fitted with the blade attachment and blend until smooth and pureed.
  • Serve right away or transfer to an airtight container with a layer of plastic wrap across the surface of the sauce until ready to serve.

A creamy, savory summer soup that is ready in less than 30 minutes. This cream of avocado soup uses much less cream than typical cream soups because avocados are so creamy on their own.

2 cloves garlic (minced)
½ yellow onion (minced)
2 cups chicken broth (divided)
2 large avocados (pitted and peeled and cut into cubes)
1 tbsp lime juice
¼ cup cilantro leaves
salt and pepper (to taste)
½ cup heavy cream

Steps:

  • Add garlic and onions and ¼ cup of chicken broth to soup pot and bring to medium high heat. Cook garlic and onions until garlic is lightly browned and onions are translucent.
  • Add in remaining chicken broth, avocados, lime juice and cilantro. Bring to a simmer and cook 5-10 minutes, until all the flavors come together. Season with salt and pepper, to taste.
  • Pour soup into blender. Blend until smooth. Add in cream and blend slowly just until cream is incorporated.
  • Serve soup immediately. If desired, garnish with fresh slices of avocado, cilantro, and a swirl of sour cream.

2 cups sour cream
1 cup sugar
1 tablespoon rum
vanilla
1 envelope unflavored gelatin
1/4 cup cold water
1 cup heavy cream, whipped

Steps:

  • Beat sour cream, sugar, rum and vanilla utnil thick and frothy.
  • Soften gelatin in the 1/4 cup cold water about 5 minutes, then set over hot water until completely dissolved.
  • Beat quickly into sour cream mixture, wich should be almost room temperature now.
  • When gealtin is throughly beaten into cream, fold whipped cream under.
  • Pour into glass dishes and chill until set.
  • Serve with fresh fruit.

This recipe is from my mom, she said she got it from a lady at the church dinner she attended; and that it was real good and thought I would like to share with my friends on Just A Pinch! So here it is.

4 medium avocados
8 oz dairy sour cream
2 small onions, grated
2 Tbsp lime juice
2 Tbsp white worcestershire sauce
1 c mayonnaise
salt to taste
1 1/2 c hot water
1/2 c cold water
4 pkg knox unflavored geltine

Steps:

  • 1. Place scooped out avocado and remaining ingredients in a blender EXCEPT waters and gelatine. Sprinkle gelatine over the 1/2 cup of cold water and let set about 5 minutes; add this to the hot water and stir until dissolved. Blend into the avocado mixture. Pour into a ring mold that has been rinsed with cold water and refrigerate until set. Unmold on to lettuce leaves.

2 1/4 teaspoons unflavored gelatin (from a 1/4-ounce envelope)
1/2 cup cold water
2 firm-ripe California avocados (1 pound total), quartered, pitted, and peeled
1 1/2 cups sour cream
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon grated onion
1 teaspoon salt
1/4 teaspoon white pepper
Accompaniment: crackers
Special Equipment
a 3 1/2- to 4-cup ceramic, plastic, nonstick, or stainless steel mold

Steps:

  • Sprinkle gelatin over cold water in a small heavy saucepan and let soften 1 minute. Cook over low heat, 1 to 2 minutes, then remove from heat.
  • Coarsely mash avocados with a fork in a large bowl. Stir in gelatin mixture along with remaining ingredients until combined well.
  • Pour mixture into lightly oiled mold and chill, covered tightly with plastic wrap, until firm, at least 4 hours.
  • Run tip of a thin knife between mold and mousse. Tilt mold sideways and tap side of mold against a work surface, turning it, to evenly break seal and loosen mousse. Keeping mold tilted, invert a plate over mold, then invert mousse onto plate.

It doesn't taste very avocado-ey because avocados are dense so it needs to be thinned out to make it pourable as a dressing. Rather, think of the avocado as the better-for-you means to get a creamy dressing fix!Excellent use for avocados that are a bit overripe or with brown spotty bits. Use as dressing for all your favourite salads. Particularly good salads that call for Ranch, Caesar or other mayo-rich dressings.Makes 1 1/4 cups - enough for a side salad for 6 to 8 (depending on how much you use!)

3 tbsp extra virgin olive oil

1 garlic clove, small (, minced using garlic crusher (Note 2))
