A simple yet elegant salad sure to impress your guests!

4 large tomatoes, chopped
4 avocados - peeled, pitted and diced
1 red onion, thinly sliced
¼ teaspoon ground black pepper, or to taste
1 (8 ounce) bottle balsamic vinaigrette salad dressing

Steps:

  • In a large serving bowl, toss together the tomatoes, avocados and red onion. Dust lightly with black pepper, and pour salad dressing over. Cover and chill for at least one hour before serving to blend flavors.

Warming the vinaigrette makes this salad special and really brings out the aroma of the fresh basil. It's from Martha Stewart's Quick Cook. I think that adding some grilled shrimp or chicken to this recipe would make a wonderful luncheon dish.

2 avocados, halved and pitted
soft leaf lettuce
2 large ripe tomatoes, peeled,seeded and diced
1/2 cup chopped basil leaves
4 tablespoons red wine vinegar
1/2 cup olive oil
2 tablespoons Dijon mustard
salt and pepper

Steps:

  • In a saucepan, combine the tomatoes, basil, vinegar, olive oil, mustard and salt and pepper.
  • Heat thoroughly bring to a simmer.
  • Immediately remove from heat.
  • Slice the avocados and place on the soft lettuce on individual salad plates.
  • spoon on the warm vinaigrette and serve immediately.

1 (14 ounce) can cannellini beans, drained and rinsed
1 pint grape tomatoes, halved
1 large avocado - peeled, pitted, and cut into chunks
4 green onions, thinly sliced
2 tablespoons olive oil
2 tablespoons lemon juice
kosher salt and ground black pepper to taste

Steps:

  • Place the beans, tomatoes, avocado, and green onions into a mixing bowl. Drizzle with the olive oil and lemon juice; season with salt and pepper to taste. Gently toss until combined. Serve immediately or chill overnight.

  • First make the dressing by adding all ingredients to a blender. You can also whisk them together in a medium bowl, but you'll need to make sure that the basil is finely diced. I prefer the blender method because it minces the garlic for you. Set aside the dressing until pasta is ready.
  • Next cook the pasta according to the directions on the package. Al dente is best here. Once pasta is done, rinse with cool water and drain, then add to a large bowl.
  • Stir in chickpeas, tomatoes, feta, avocado, red onion and optional olives. Fold in dressing and gently stir until pasta is well combined. Season with freshly ground black pepper and torn basil leaves. Serves 6.
