Avocado Orange Salad with Citrus Dressing image

This Avocado Orange Salad is the perfect lunch or dinner for busy days! Just a handful of simple ingredients and you can make this delicious, filling, sweet and spicy salad! Top it with a citrus dressing and it's like sunshine on a plate!

3 cups Arugula (or your favorite greens)
3 avocados
1 DOLE Fridge Pack Mandarin Oranges segments without the juice
2 shallots (sliced)
1/2 cup cashews (toasted or roasted)
1/8 teaspoon chili flakes
2 tablespoons lemon juice
1/4 cup Mandarin Orange juice ( from the DOLE Fridge Pack)
1 Tablespoon honey mustard
1/8 teaspoon salt
1/8 teaspoon oregano
pinch chili flakes
1/3 cup olive oil

Steps:

  • Prepare the salad dressing by mixing all ingredients in a small bowl. Use a whisk to blend all ingredients together until the dressing is thick and emulsified. Adjust the chili flakes to your taste. Also, read notes for adjusting the sweet : tangy balance of the dressing and work accordingly.
  • To make the salad, start by adding your greens to a large salad plate. Drizzle 2 Tablespoons of the salad dressing over the greens and toss them well to coat.
  • Peel the avocado and remove the seeds. Use a small spoon to remove each avocado half from its shell, and then use a small paring knife to slice the avocados into slices.
  • Arrange the avocado slices over the greens in clumps of 3-5 slices. Add the Mandarin Oranges over the greens, followed by the shallots and nuts, and sprinkle some chili flakes on top. Chili flakes are optional, but even a tiny pinch adds a great contrast of spice to the sweetness of the Mandarin Oranges.
  • Drizzle about 3 tablespoons of the dressing (more or less to your tastover the finished salad and serve right away. Enjoy!

1 teaspoon minced fresh parsley

8 cups torn spinach or mixed greens
3 medium oranges, peeled and sliced
1 cup sliced red onion
1/2 cup crumbled blue cheese
1/4 cup slivered almonds, toasted

Steps:

  • In a small bowl, whisk the first 7 ingredients. On a serving platter or individual plates, arrange greens, oranges and onion. Drizzle with dressing. Sprinkle with cheese and almonds.

arugula leaf
2 avocados, peeled and stoned
2 oranges
1 small red onion, thinly sliced
1 tablespoon fresh basil leaf, coarsley chopped
2 tablespoons chopped pitted black olives
2 tablespoons sherry wine or 2 tablespoons red wine vinegar
4 tablespoons extra virgin olive oil
1/2 shallot, finely chopped
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Place a little arugula on each serving plate or on a large platter.
  • Thinly slice the avocados and arrange the slices on top.
  • Using a sharp knife, peel and remove the pith from the oranges, remove any pips and then cut the flesh into 1/2in slices. Arrange on top of the avocado
  • Sprinkle the red onion slices and basil over the salad.
  • Put all the vinaigrette ingredients into a screw-top jar and shake well.
  • Pour the dressing over the salad and serve immediately.

1/2 cup wine vinegar
3/4 cup salad oil
1/2 cup orange juice (fresh is best)
1/2 teaspoon dry mustard
2 teaspoons grated orange peel
1 lemon, juice of
1/4 cup sugar
1/2 teaspoon salt
2 cups mandarin oranges
2 small purple onions
2 avocados
2 heads romaine lettuce
1 head lettuce (any leaf-type lettuce)

Steps:

  • Make dressing: Combine vinegar, oil, orange juice, mustard, orange peel, lemon juice, sugar, and salt.
  • Drain mandarin oranges.
  • Slice onions into very thin slices.
  • Combine mandarin oranges, sliced avocados and onion rings.
  • Cover orange/avocado/onion mixture with dressing and refrigerate.
  • Immediately before serving, break up lettuce and spoon orange/avocado mixture over lettuce.

This is one of my favourite salads. I mainly like to make it up in Asian soup spoons so you have little mouthful serves as hors d'ouvres. Oranges and dressing can be prepared in advance. Walnuts can be used if preferred.

2 oranges
2 ripe avocados
2 tablespoons lemon juice
50 g pecan halves
2 tablespoons unsweetened orange juice
1 teaspoon lemon juice
4 tablespoons sunflower oil
salt & freshly ground black pepper

Steps:

  • Segment the oranges by slicing off the tops and bottoms. Work around the orange using a sharp knife to cut downwards, to remove the peel and pith. Once peeled, hold in one hand and carefully cut between membranes to remove the segments. (If possible collect the juices for the dressing.).
  • Cut avocados in halves and remove stones. Remove skin and then slice avocado. Use lemon juice to coat avocado to prevent browning.
  • Arrange the orange and avocado on small plates, as desired, decorating with the pecans. Drizzle with the dressing.
  • Dressing: combine all dressing ingredients in a screw top jar. Shake to combine. Season to taste with salt and freshly ground black pepper.

4 navel oranges
1 large avocado, ripe but firm
1/2 purple onion, cut into slices 3/8-inch thick (1-cm)
1 pinch salt
2 tablespoons light olive oil
1/4 teaspoon dried Italian seasoning

Steps:

  • With a sharp knife, cut the skin and all the white pith off the oranges. Working over a small bowl to catch the juice, segment the orange slices, cutting on either side of each segment to release it from the membrane. Arrange for great presentation in a salad bowl.
  • Halve, pit, and peel the avocado and cut crosswise into thin slices. Add the salad bowl.
  • Separate the onion slices into rings. Arrange in the bowl with tor orange segments and avocado slices.
