Avocado gives these pops a great creaminess without a lot of unhealthy fats. Taste and adjust sweetness and saltiness to taste before freezing.

1 avocado, peeled and pitted
½ cup coconut milk
¼ cup agave nectar
¼ cup lime juice
2 teaspoons vanilla extract
¼ teaspoon salt

Steps:

  • Blend avocado, coconut milk, agave nectar, lime juice, vanilla extract, and salt in a blender until smooth, about 1 minute. Pour mixture into ice pop molds and freeze until solid, 2 to 3 hours.

1 cup water
½ cup white sugar
3 avocados, peeled and pitted
1 lime, juiced
¼ teaspoon salt

Steps:

  • Bring water and sugar to a boil together in a saucepan; stir continually until sugar dissolves. Set aside to cool.
  • Pour sugar-water mixture into a blender with avocados, lime juice, and salt; blend until smooth. Pour the mixture into 10 ice pop molds.
  • Freeze until solid yet still soft, about 2 hours; insert wooden sticks and continue freezing until firm, 12 to 24 hours.

2 avocados, pits removed
1 cup (packed) mint leaves
1/2 cup fresh lime juice
1/2 cup simple syrup
Pinch of kosher salt

6 (3-ounce) ice-pop molds

Steps:

  • Scoop avocado flesh into a blender; add mint, lime juice, simple syrup, and salt and purée until smooth. Divide among ice-pop molds and insert sticks. Freeze until solid, at least 2 hours.
  • Do Ahead
  • Ice pops can be made 1 week ahead. Keep frozen.
