- Whisk eggs with 1 tablespoon of water to make the eggs light and fluffy. Set aside.
- Drizzle olive oil into a skillet over medium heat, add peppers, garlic and onion and saute about 2-3 minutes until just tender. Whisk eggs one more time and pour into skillet with vegetables. Scramble eggs.
- Divide scrambled eggs across the flour tortillas. Top with salsa and avocado slices.
- Wrap and serve warm.

- In a medium size bowl, whisk the eggs, salt, and Parmesan until well combined.
- In a medium size saucepan over medium-high heat, melt the butter and pour the egg mixture into the pan. Let the egg cook just until it starts to set, then add the cheddar cheese, black beans, onions, and peppers to the center of the egg wrap.
- Cover with a lid and cook for another 3 minutes, or until the egg is fully cooked through and the cheese is melted.
- Add avocados and remove from the pan. Fold in the egg wrap's left and right sides, then roll from the bottom to the top to form a burrito.

- In a large skillet over medium-high heat, cook and crumble the sausage until just browned through. Add in the diced red bell pepper and saute for another few minutes until the peppers is crisp tender. Remove from the skillet and divide this mixture evenly among the four tortillas.
- In the same skillet (drain any grease), add in the eggs, milk, and salt + pepper to taste. Scramble the eggs to desired doneness and again divide the eggs evenly among the 4 tortillas.
- Coarsely chop up the parsley and dice the green onions. Add an even amount to each tortilla.
- Thinly slice the avocado and add 1/4th of it to each tortilla.
- Divide the cooked white rice evenly among the tortillas.
- In a small bowl, whisk together the mayo and Sriracha with a dash of salt + pepper. Pour this mixture on top of each burrito (to taste) and tightly roll up the burritos.

- Preheat the oven to 425°F and line a large baking sheet with parchment paper. Place the potatoes onto the sheet, drizzle with olive oil, and sprinkle generously with salt and pepper, the smoked paprika, and pinches of red pepper flakes. Toss to coat, spread evenly on the pan, and bake for 30 minutes or until golden brown and crisp around the edges.
- Heat a grill pan on the stove to medium heat. Place the red pepper on the pan and let it char for 4 to 5 minutes per side, or until the pepper is soft and each side has black grill marks. Alternatively, you can roast it in the oven until soft. Remove from the grill, remove the stem and ribbing, and slice the pepper into strips.
- Assemble the burritos: Divide the spinach leaves and red cabbage, if using, among the tortillas. Top with the scrambled eggs, red pepper strips, black beans, pico de gallo, potatoes, avocado, and cilantro. Sprinkle with salt and pepper and a squeeze of lime. - Heat broiler to high and line two sheet pans with foil.
- Place the tortillas on the sheet pans. Sprinkle half of the cheese over the tortillas. Broil, one pan at a time, until the cheese is just beginning to melt, about 20 seconds.
- In a medium nonstick skillet, heat 1 tablespoon oil over medium. Add the scallions and cumin and cook, stirring, until fragrant, about 1 minute. Serve immediately, or wrap in foil and refrigerate for up to 24 hours. Reheat in a 400-degree oven or toaster oven until warm, about 8 minutes.
