SQUASH AND APPLE BAKE



Squash and Apple Bake image

This is a recipe that combines all the best flavors of fall! Great for a Thanksgiving dinner instead of candied yams.

Number Of Ingredients 7

½ cup packed light brown sugar
¼ cup butter, melted
1 tablespoon all-purpose flour
1 teaspoon salt
½ teaspoon ground mace
2 pounds butternut squash - peeled, seeded, and cut into 1/2 inch slices
2 large apples - cored, and cut into 1/2 inch slices

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together brown sugar, butter, flour, salt, and mace. Arrange squash in an ungreased 9x13 inch baking dish. Top with slices of apple, then sprinkle with the sugar mixture. Cover with a lid or aluminum foil.
  • Bake for 50 to 60 minutes in the preheated oven, or until squash is tender.

Here's what you need: turkey sausages, butternut squash, apples, olive oil, salt and pepper, craisin, almond, sage leaf

Number Of Ingredients 8

6 turkey sausages
1 butternut squash, peeled and cubed
2 apples, peeled and thinly-sliced
olive oil
salt and pepper
craisin
almond, toasted, sliced
sage leaf

Steps:

  • Preheat the oven to 350°F.
  • Place the butternut squash in a bowl. Drizzle with olive oil and season generously with salt and pepper. Then, put the butternut squash in an oven-safe pan and roast for 30 minutes.
  • Toss the butternut squash and add the sliced apples to the pan and roast for 20 more minutes.
  • Distribute the sausage links over the top of the apples and butternut squash. Bake for an additional 20-25 minutes. Check to make sure the sausage is cooked through.
  • Remove the pan from the oven and allow the dish to cool for 10 minutes before removing the sausages for slicing.
  • Put the sliced sausages back in the pan and add optional garnishes. Serve.

  • Place you cubed butternut squash and apples into a large bowl, and drizzle in about 2 tablespoons of oil. Sprinkle over a generous couple of pinches of salt and black pepper, along with 1 tablespoon of the maple syrup, the dried sage and the Herbes de Provence; toss to coat.
  • Turn the mixture out onto your prepared baking sheet, and roast for about 35 minutes, stirring occasionally for even roasting, or until the squash is tender.
  • While the butternut squash and apples roast, place a large skillet (cast-iron is great) over medium-high heat, and add a small drizzle of olive oil; once the pan is very hot, add the crumbled sweet Italian sausage in and cook until browned and cooked through, a few minutes. Remove from the pan and keep in a bowl.
