A light orange dressing nicely accents sweet dried cranberries and crunchy almonds. It you prefer, you can use your favorite salad greens in place of the ready-to-serve package.

3 tablespoons olive oil
1 tablespoon sugar
1 tablespoon red wine vinegar
2 teaspoons orange juice concentrate
1/8 teaspoon salt
Pinch coarsely ground pepper
4 cups ready-to-serve salad greens
1/2 cup sliced almonds, toasted
1/4 cup dried cranberries
1/4 cup thinly sliced red onion

Steps:

  • In a jar with a tight-fitting lid, combine the first six ingredients; shake well. In a large bowl, combine the salad greens, almonds, cranberries and onion. Add vinaigrette; toss to coat.

Greek Pasta Salad with Red Wine Vinaigrette image

Skip the store-bought pasta salad and whip up a homemade version with this crowd-pleasing recipe for Greek pasta salad.

Number Of Ingredients 13

2 1/2 cups uncooked pasta, such as penne or rotini
2/3 cup sliced red onions
15 cherry tomatoes, halved
1 cup diced cucumbers
3/4 cup sliced olives
3/4 cup diced green peppers
1 cup crumbled feta cheese
1/3 cup red wine vinegar
2 teaspoons freshly squeezed lemon juice
1 1/2 teaspoons minced garlic
1 teaspoon sugar
2 teaspoons dried oregano
1/2 cup extra-virgin olive oil

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook it until al dente. Strain the pasta and transfer it to a large bowl to cool slightly. While the pasta cools, make the dressing.
  • In a small bowl, whisk together all of the dressing ingredients, except for the olive oil. While whisking, stream in the olive oil. Season the dressing with salt and pepper, to taste.
  • Add the red onions, tomatoes, cucumbers, olives, green peppers and feta cheese to the bowl with the pasta.
  • Pour the dressing over the pasta, tossing to combine, then cover the salad with plastic wrap and refrigerate it for at least 3 hours and up to overnight. When ready to serve, toss the pasta salad again and enjoy cold or at room temperature.

Number Of Ingredients 12

½ pound thick-cut bacon, chopped
2 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
2 teaspoons maple syrup
1 teaspoon kosher salt
½ teaspoon ground black pepper
3 Bartlett pears, halved, cored, and thinly sliced
4 heads endive, leaves separated
3 cups fresh baby spinach
1 cup toasted walnuts
1 cup dried cranberries
4 ounces Gorgonzola cheese, crumbled

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Let bacon drain on paper towels, reserving 2 tablespoons drippings in skillet. To drippings, whisk in olive oil and next 4 ingredients until well combined; keep warm. In a large bowl, toss together pears and remaining 5 ingredients. Add drippings mixture, tossing gently to coat. Top with cooked bacon. Serve immediately.

1 large or 2 medium shallots, thinly sliced
3 tablespoons red wine vinegar
1 garlic clove, finely chopped
1/4 teaspoon coarse sea salt or kosher salt, plus more for serving
2 (15-ounce) cans chickpeas, drained
1 large carrot, peeled and coarsely grated
1/2 cup chopped flat-leaf parsley
1/3 cup extra-virgin olive oil
Freshly ground black pepper

Steps:

  • In a large bowl, combine the shallots, vinegar, garlic, and 1/4 teaspoon salt. Set aside for 10 minutes to allow the shallots and garlic to mellow.
  • In a medium saucepan over high heat, bring 2 quarts of water to a boil. Add the chickpeas and blanch for 1 to 2 minutes. Drain.
  • Add the carrot, parsley, and oil to the shallot mixture. Toss in the chickpeas and season with salt and pepper, to taste. Serve immediately.
