Time 50m

MIX TOGETHER UNTIL WELL BLENDED:
1 1/2 c pumpkin puree
1/2 c vegetable oil
2 large eggs
1/4 c dark molasses
1/2 c buttermilk
ADD AND MIX WELL:
1 2/3 c white sugar
1/3 c brown sugar
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
1 tsp vanilla
MIX THE FOLLOWING DRY INGREDIENTS TOGETHER & ADD SLOWLY TO THE BATTER:
3 to 3 1/2 c flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
ONCE ALL OF THE ABOVE INGREDIENTS ARE MIXED THEN ADD:
1 pkg cinnamon chips
FOLLOW DIRECTIONS BELOW AND THEN MIX TOGETHER AND SPRINKLE THE TOPS OF THE MUFFINS:
1/3 c white sugar
1 tsp cinnamon sugar

Steps:

  • 1. Preheat oven to 350 degrees. Prepare muffin tins (any size) by spraying with baking spray (Pam) and lining with paper or foil muffin papers. Mix together the first group of ingredients and then add the second group of ingredients.
  • 2. Add third group of dry ingredients together and slowly add to the batter. Once all the dry ingredients have been well mixed into the batter add one package of cinnamon chips. *Note: I found Hershey's cinnamon chips at both QFC (Kroger) and Albertson's here in the Northwest.
  • 3. After the chips have been stirred in well, scoop the batter into your muffin tins. This will make 12 jumbo muffins (plus a few minis) or 24 regular sized muffins. Before baking sprinkle each muffin with about a teaspoon of cinnamon sugar (less for minis) and bake at 350 degrees for 15 minutes for minis and 20-25 for regular or jumbo muffins.

AUTUMN CINNAMON CHIP MUFFINS

Autumn Cinnamon Chip Muffins image

Seriously, this may be the BEST muffin I've ever made! I've taken two of my favorite recipes, tweaked them to make one AMAZING muffin! My adult son wanted to call these "Hot Damn These Are Good Muffins!" I think that says it all!

Time 1h

Number Of Ingredients 26

TOP MUFFIN:
1 c unsalted butter, softened
2 c sugar
1/2 tsp salt
2 tsp cinnamon
3 large eggs
1 tsp vanilla extract
3/4 c plain nonfat yogurt
2 1/2 c flour
2 tsp baking powder
1/2 tsp ground flaxseed (optional)
10 oz bag of cinnamon baking chips
BOTTOM MUFFIN
2 1/2 c flour
2 c sugar
2 tsp baking powder
2 tsp cinnamon
1/2 tsp ground flaxseed (optional)
1/2 tsp salt
2 large eggs
1 1/3 c 100% pure pumpkin
1/3 c olive oil
2 tsp vanilla extract
TOPPING:
2 Tbsp sugar
2 tsp cinnamon

Steps:

  • 1. Preheat oven to 375 degrees F. Line a muffin pan with paper liners (trust me, you want to use the liners!)
  • 2. FOR TOP HALF OF MUFFIN: In a large mixing bowl, cream together butter, sugar, salt, and cinnamon; add eggs and mix well. In a small separate bowl, combine flour, baking powder, ground flax, and cinnamon chips; add to wet ingredients and fold together just until combined. Set aside.
  • 3. FOR BOTTOM HALF OF MUFFIN: In a separate mixing bowl, combine flour, ground flax, sugar, baking powder, cinnamon and salt. Make a well in center of flour mixture and add eggs, pumpkin, olive oil and vanilla; blend together until smooth.
  • 4. Place a spoonful or two of pumpkin mixture into bottom of muffin liners. Top with cinnamon chip mixture until muffin cups are 2/3 to 3/4 full. In a small bowl, combine topping mixture and sprinkle over tops of muffins.
  • 5. Bake in preheated oven for 24-30 minutes (depending on the size of muffin pan) or until a toothpick comes out clean. Jumbo muffins take about 30 minutes. Remove pan and allow to cool.
  • 6. *** I added about 1/2c. chopped walnuts to half of the pumpkin mixture. I'm the only one that likes nuts in my house!

  • Blueberry Muffin Tops. I don’t know about anyone else, but when I think of muffins, my mind goes straight to blueberry. I know there are all kinds of incredible muffins out there, but I can’t help it.
  • Chocolate Chip Muffin Tops. Whether you call them chocolate chip muffin tops or simply “muffin cookies,” these soft, fluffy treats are hard to beat. They’re super light and have that wonderful muffin texture, but you’ll bake them just like you’d bake a batch of chocolate chip cookies.
  • Double Chocolate Muffin Tops. If the phrase “death by chocolate” doesn’t sound that bad to you, these are the muffin tops for you. These 10-ingredient, gluten-free muffin tops are pure chocolate decadence.
  • Banana Bread Muffin Tops. Banana bread muffin tops aren’t as light and fluffy as many of the other options on the list. Instead, they’re dense, chewy, and unbelievably filling.
  • Lemon Blueberry Muffin Tops. If you prefer your sweets to be more tart and tangy than sweet, try this recipe for lemon blueberry muffin tops. They have a similar soft consistency to those oversized, iced sugar cookies they sell at Walmart but feature the sweet and sour flavors of blueberries and lemons.
  • Pumpkin Chocolate Chip Muffin Tops. These burnt-orange and brown-spotted treats may look a little odd, but biting into them is like biting into a pillow or maybe even a cloud.
  • Applesauce Oatmeal Muffin Tops. If you prefer muffin tops that are denser and more crumbly, then these applesauce oatmeal tops are the ones for you. They taste primarily of apples, which is perfect for apple lovers like me, but the best part about them is their brown sugar, walnuts, flour, cinnamon, and butter streusel topping.
  • Chocolate Chip Peanut Butter Muffin Tops. It’s hard to beat that classic combination of peanut butter and chocolate. And when you add applesauce, brown sugar, vanilla extract, and oats into the mix, the result is even better.
  • Gingerbread Muffin Top Cookies. These rich, warm, and buttery gingerbread muffin top cookies are pretty much just gingerbread cookies – only much bigger, much fluffier, and much chewier.
  • Cranberry Muffin Top Cookies. If you’re looking for the quintessential holiday muffin top treat, check out this recipe for cranberry muffin top cookies.
