- In a large skillet, heat the oil over medium heat. Once hot, add onions and cook until translucent, about 5 minutes. This is an optional step, but it adds to the flavor of the soup.
- Place onions in your slow cooker and add remaining ingredients. Stir to combine.
- Cover and cook on high until the chicken and veggies are cooked through, about 4 hours on high or 6 hours on low (times vary depending on your slow cooker).
- Once cook time is up, carefully remove the chicken and check with a meat thermometer that your chicken is cooked to at least 160℉. Shred it with two forks or simply dice it. Add back to the slow cooker, stir, and taste. Add additional salt or garlic powder if desired. Enjoy warm!

- In a large skillet, sauté the squash, onions and shallot. Sauté them until the squash starts to soften. Then add in the garlic and continue stirring for about 1-2 minutes more.

- Season flour with salt and freshly ground black pepper in a container with a lid. Dredge chicken pieces in the flour to coat.
- Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Cook and stir chicken in hot oil until browned completely, 4 to 5 minutes per batch. Put browned chicken pieces in the slow cooker.
- Heat remaining 2 tablespoons oil in the skillet over medium heat; cook and stir onion in the hot oil until translucent, about 5 minutes. Add garlic, jalapeno pepper, and Thai chile pepper; continue to cook and stir until the garlic is fragrant, 2 to 3 minutes.

- Heat oil in a large (4 1/2 quart)Dutch oven. Add chicken and brown about 15 to 20 minutes. Remove chicken and add onion, garlic and celery to pan; sauté on medium heat about 5 minutes.
- Return chicken to the pan with vegetables.
- Add tomatoes, chicken broth, wine, salt, pepper, sage, thyme and bring to a boil; simmer about 45 minutes to 1 hour.
- Add squash, bring to boil and simmer 30 minutes or until squash is tender.

BUTTERNUT SQUASH SOUP
This savory butternut squash soup has shredded chicken, white beans, spinach, and crisp bacon-perfect with some rustic toasted bread!

- Place a large soup pot over medium-high heat, and drizzle in about 2 tablespoons of oil; once hot, add in the bacon and cook until crispy, then remove with a slotted spoon, and drain on paper towel; reserve the bacon for your garnish.
- Into the bacon drippings (you can add a little more oil if there isn't much fat rendered), add the diced onion, and saute for about 5 minutes, or until softened and translucent, and slightly golden; add in the pressed garlic, and stir.
- Once the garlic is aromatic, add in a couple of good pinches of salt and pepper, plus the Italian seasoning, and stir to combine; add in the butternut squash and the chicken stock/broth, and stir.
- Place a lid on the pot and bring the soup to a boil; then, reduce the heat, and allow the soup to simmer for about 15-20 minutes, or until the squash is tender.
- Remove from heat and, using either a hand-held immersion blender or regular blender, puree the soup. (If using a regular blender, take care to do it in smaller batches as to not spatter hot soup on yourself and your kitchen!)
- Once the soup is pureed, stir into it the drained and rinsed navy beans, the cooked chicken, the baby spinach, the chopped parsley, and the squeeze of lemon, and stir to combine, allowing the spinach to wilt in.
- Check your seasoning and add a pinch of two of extra salt and pepper, if needed.
- Ladle into bowls and garnish with some of the crispy bacon, and serve with some croutons or crusty bread on the side.

AUTUMN PORK STEW
Note: The apples disintegrate into the stew so don't worry how you cut them.

- In a large Dutch oven or heavy bottomed pot, place olive oil and bacon and cook over medium high for 8-10 minutes until the bacon is crispy.
- Add the onions and lower heat to medium low and cook for 20 minutes, stirring occasionally.
- Add garlic and cook for one minute.
- With a slotted spoon or spider, remove bacon and onion mixture to a large bowl.
- Lay pork pieces out and salt and pepper both sides.
- Heat the pot with the bacon fat to medium high and once hot, sear meat in three or four batches. Do not over crowd pan and sear each side for three to four minutes. Remove to bowl with bacon and onions as you sear each batch. The searing process should take 30-40 minutes total. Don't rush this step; just make sure each piece is nice and golden brown.
- Once the last batch is done, pour the bowl back in the pot and add the white wine. Stir to get all brown bits from bottom of pot.
- Add carrots, apples, apple sauce, one can of stock and bay leaves. Bring to boil, lower to a simmer, and place cover partially on. Simmer for two hours, stirring occasionally.
- After two hours, add second can of stock and the potatoes and bring to a rolling simmer. Cook five minutes then add squash and cook for an additional 15 minutes. (Be careful at this point as the mixture will be thick and if not watched, may stick and burn). The pork is very tender so as you stir, try not to break the meat up too much.
- Once the potatoes and squash are cooked, serve stew in bowls.

- Heat oven to 425 degrees. Line a baking sheet with parchment paper.
- Bring 2 tablespoons water to a boil in a small saucepan or kettle, or using the microwave, then let stand for 2 minutes to allow the temperature to drop slightly while you grind the saffron. Using a mortar and pestle (or small bowl and the handle of a wooden spoon), grind the saffron with a pinch of sugar to a fine powder (scant 1/4 teaspoon), add the hot water, gently stir, cover and let steep until ready to use.
- Place the butternut squash in a mound in the center of the prepared baking sheet. Add 1 tablespoon oil and 1 teaspoon salt, and season with pepper. Toss to combine. Scatter the squash across the baking sheet in an even layer, and roast for 10 minutes. Flip the squash and roast until golden and almost tender, about 10 minutes more.
- Meanwhile, in a medium pot, heat remaining 1/4 cup oil over medium-high, add the onion and cook, stirring occasionally, until golden brown, 10 to 12 minutes.
- Reduce heat to medium, sprinkle the onion with a little salt, add the turmeric and stir until fragrant, about 30 seconds. Add the chickpeas, season well with salt and pepper, and cook, stirring frequently, until slightly browned and crisp, about 10 minutes. With the back of a wooden spoon, crush a few chickpeas to release their starches. Taste the chickpeas and make sure they're seasoned to your liking.
- Push the chickpeas to the sides and make a little space in the middle of the pot; if the pot is dry, drizzle in a little more oil. Add the tomato paste to the oil to cook off its raw taste, stirring continuously and taking care not to burn the paste, about 1 minute. Mix the tomato paste with the chickpeas, add 2 cups water and bring to a gentle boil, scraping up any bits stuck to the bottom of the pot. Reduce heat to medium-low, and add the prunes and half of the saffron water. Stir, cover and simmer for 10 minutes.
- Add the roasted squash, lemon juice, 1 tablespoon sugar and the remaining saffron water. Gently stir to combine, cover and simmer over low heat until the flavors meld, about 15 minutes. The stew should be saucy but not soupy: add more water if the stew is too thick, or simmer uncovered if it's too loose. Taste for seasoning and add more lemon juice or a little more sugar if needed to balance all the flavors. Serve over rice with herbs, scallions and a dollop of plain yogurt.
