AUTUMN CASSEROLE
This is a wonderful way to serve sweet potatoes and cranberries at your Thanksgiving or Christmas dinner. Serve as a side dish, or like me save it for dessert. Easy and delicious.

Steps:
- Bake yams in a pan until they're just soft about 60- 75 minutes at 350 degree.
- Let yams cool and then peel them.
- Slice layers of yams into a greased caserole dish- then add a few cranberries.
- Slice an apple (cored, but leave skin on) into the dish, then sprinkle with ginger and cinnamon, add some raisons and nuts.
- Another layer of apples, spices, nuts and raisons.
- The last layer is yams again with cranberries sprinkled all around.
- Pour a couple tablespoons of maple syrup over top then about 1/2 cup of cider or water.
- Bake covered@ 300 degrees for 45-60 minutes.

Steps:
- Place the pearl barley in a pan and cover with cold water, bring to the boil and simmer for 30 minutes, keeping the water topped up.
- Drain the barley and reserve any liquid.
- Cook the lamb in a large pan over a high heat until sealed and browned on all sides then remove from the pan.
- Melt the butter in the same pan, add the flour and cook until the roux is a golden brown colour then stir in the tomato puree
- Add the stock slowly, stirring all the time, bring to the boil.
- Add the pearl barley, any reserved liquid and the vegetables and cook gently for 30-35 minutes.
- Season to taste before serving.

Apple, raisins and spices give this tasty sausage-rice casserole a taste of autumn. We enjoy it with a green salad on a cold fall day. It would be a nice potluck dish, too-just double the recipe if needed.

- Preheat oven to 350°. In a large skillet, cook sausage, apple, onion and celery over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. , Transfer to a greased 2-qt. baking dish. Cover and bake 25-30 minutes or until heated through.
