2-1/2 cups cubed peeled butternut squash
1 large sweet potato, peeled and cubed
3 medium carrots, sliced
1/4 cup thawed orange juice concentrate
3 cups fat-free milk
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons reduced-fat sour cream
2 tablespoons minced chives
1 tablespoon sesame seeds, toasted

Steps:

  • Place the squash, sweet potato and carrots in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 12-16 minutes or until tender. Cool slightly. Transfer to a food processor; add juice concentrate. Cover and process until smooth. , Transfer to a large saucepan; stir in the milk, salt and pepper. Cook and stir over low heat until heated through (do not boil). Top each serving with 1-1/2 teaspoons sour cream, 1 teaspoon chives and 1/2 teaspoon sesame seeds.

2 lbs baby carrots (or 2 lbs peeled and sliced carrots)
2 cups peeled diced potatoes (about 1 large potato)
2 medium apples, peeled, cored and sliced
1 cup chopped white onion
1 celery rib, chopped
1/2 cup apple juice
1/2 cup white wine (or use another 1/2 cup apple juice or white grape juice)
3 1/2 cups vegetable broth (or chicken broth)
1/4-1/2 teaspoon salt, to taste
1/4 teaspoon pepper
1/2 teaspoon thyme
3/4 teaspoon tarragon
1/4 teaspoon ground nutmeg
1 tablespoon brown sugar
1 cup shredded extra-sharp cheddar cheese
1 cup light sour cream

Steps:

  • Place carrots, potatoes, apples, onion and celery in a large soup pot. Add juice, wine, and broth and bring to a boil. Cook/simmer for about 15-20 minutes or until carrots are very tender.
  • Stir in salt, pepper, thyme, tarragon, nutmeg and brown sugar.
  • Remove from heat and puree (in batches) in a food processor or blender.
  • Return pureed soup mixture to pot and place on med-low heat. Stir in shredded cheese and sour cream. Stir often, until cheese is melted and soup is heated through.
  • Serve.

2 pounds sweet potatoes (about 4 medium)
2 pounds carrots (about 8 large)
1-1/2 pounds parsnips (about 6 medium)
2 large onions, quartered
6 garlic cloves, peeled
1/4 cup canola oil
3 cartons (32 ounces each) chicken broth
1 cup fat-free evaporated milk
1 teaspoon salt
1/2 teaspoon pepper
Minced fresh parsley and sage

Steps:

  • Preheat oven to 400°. Peel and cut sweet potatoes, carrots and parsnips into 1-1/2-in. pieces; place in a large bowl. Add onions and garlic cloves; drizzle with oil and toss to coat. Divide mixture between 2 greased 15x10x1-in. baking pans. Roast 40-50 minutes or until tender, stirring occasionally., Transfer vegetables to a Dutch oven. Add broth, milk, salt and pepper. Bring to a boil; simmer, uncovered, 10-15 minutes to allow flavors to blend., Puree soup using an immersion blender. Or cool soup slightly and puree in batches in a blender; return to pan and heat through. Sprinkle servings with minced herbs.

1 tablespoon olive oil
1 medium onion, peeled and diced
1 pound shredded carrots
1 teaspoon red curry paste
1 teaspoon kosher salt
½ teaspoon cinnamon
½ teaspoon cumin
¼ teaspoon nutmeg
⅛ teaspoon cloves
4 cups chicken broth
1 cup Asian coconut milk
2 tablespoon dry sherry
1 cup fresh basil leaves

Steps:

  • In a large heavy bottom soup pot, heat the olive oil on medium high heat. Add the onions and saute for 5 minutes.
  • Add the carrots and continue to saute for an additional five minutes, stirring occasionally until the carrots are soft.
  • Stir in the curry paste, salt, cinnamon, cumin, nutmeg, and cloves.
  • Stir in the chicken broth, Asian coconut milk, and dry sherry.
  • Bring the soup to boil and then turn down the heat to medium-low. Cover the pot and cook the soup for 20 minutes. Turn off the heat.
  • Stir in the basil and place the lid back on.
  • Allow the soup to cool for 10 minutes.
  • Carefully transfer the soup to a blender. With the lid securely on and the vent slightly opened, puree the soup until smooth and the basil is un-noticable.
  • Serve warm and garnish with a few drops of coconut milk and fresh basil leaves.
