ONE-PAN AUTUMN CHICKEN BREASTS WITH APPLES



One-Pan Autumn Chicken Breasts with Apples image

This dish is a one-pan meal and brings the season of fall inside.

2 tablespoons olive oil, divided
1 tablespoon butter
4 (6 ounce) bone-in, skin-on chicken breasts
salt and ground black pepper to taste
2 medium apples, cored and thinly sliced (such as Autumn Glory®)
1 small yellow onion, thinly sliced
1 tablespoon chopped fresh sage
1 ½ teaspoons chopped fresh rosemary
½ teaspoon chopped fresh thyme
½ teaspoon salt
¼ teaspoon poultry seasoning
¼ teaspoon black pepper
½ cup chicken broth
¼ cup heavy whipping cream
2 teaspoons honey
1 teaspoon Dijon mustard

Steps:

  • Heat 1 tablespoon olive oil and butter in a large oven-safe skillet over medium-high heat. Season both sides of the chicken breasts with salt and pepper and add to the hot skillet, skin-side down, leaving at least 1 inch between the breasts to ensure even cooking and browning. Cook until skin is browned, about 6 minutes. Turn and cook an additional 6 minutes until browned on both sides. Transfer chicken breasts to a plate.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Add remaining 1 tablespoon olive oil to the skillet and stir in apples and onion. Cook, stirring occasionally, for 4 minutes. Season with sage, rosemary, thyme, salt, poultry seasoning, and pepper; stir to combine.
  • While apples are cooking, whisk together chicken broth, whipping cream, honey, and mustard in a small bowl. Pour broth mixture in with the seasoned apples and onions and gently scrape browned bits from the bottom using a wooden spoon. Slide chicken breasts back into the skillet, nestling them between onions and apples.
  • Transfer skillet to the preheated oven and cook until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

4 bone-in chicken thighs (about 1-1/2 pounds), skin removed
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
1/2 cup apple cider or juice
1 medium onion, chopped
1/3 cup barbecue sauce
1 tablespoon honey
1 garlic clove, minced
2 medium Fuji or Gala apples, coarsely chopped

Steps:

  • Sprinkle chicken with salt and pepper. Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown chicken; remove and keep warm. , Add cider, stirring to loosen browned bits from pan. Stir in onion, barbecue sauce, honey, garlic and chicken. Press cancel. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Let pressure release naturally for 5 minutes; quick-release any remaining pressure. Press cancel. A thermometer inserted in chicken should read at least 170°. , Remove chicken; keep warm. Select saute setting and adjust for low heat. Add apples; simmer, stirring constantly, until apples are tender, about 10 minutes. Serve with chicken.

1 tablespoon canola oil
4 bone-in chicken thighs (about 1-1/2 pounds), skin removed
1/4 teaspoon salt
1/4 teaspoon pepper
2 medium Fuji or Gala apples, coarsely chopped
1 medium onion, chopped

1/3 cup barbecue sauce
1/4 cup apple cider or juice

Perfect for a fall day with a bit of a chill in the air, serve this stew with bread rolls on the side for dunking.

1 whole chicken, cut in parts
¼ cup apple cider vinegar
½ tsp nutmeg, ground
6 whole cloves
½ tsp salt
3 carrot(s), peeled and sliced
¼ tsp pepper
6 apple(s), peeled and sliced
2 tsp Dijon mustard
1 cup cabbage, shredded
1 ¾ cup low-sodium chicken broth, warm
1 cup applesauce

Steps:

  • Spray large casserole dish with vegetable cooking spray and heat over medium high temperature.
  • Add chicken and cook, turning to brown on all sides, about 10 minutes.
  • Sprinkle with nutmeg, salt and pepper.
  • Spread mustard over chicken pieces; add warm broth, vinegar, cloves and carrots; bring to a boil.
  • Cover, reduce heat to low and cook 15 minutes. Add apples and cook 5 minutes. Add cabbage, stirring into liquid.
  • Cook, covered, about 10 minutes more or until fork can be inserted in chicken with ease.
  • With slotted spoon, remove chicken and vegetables to warm serving bowl and keep warm.
  • Stir applesauce into liquid; boil on high temperature 5 minutes and pour over chicken and vegetables.
  • Serve with brown rice, if desired.
