AUTHENTIC VEGETABLE CHOW MEIN

Authentic Vegetable Chow Mein image

The real thing - I modified from Epicurious which was a beef chow mein. I like to use a variety of vegetables including broccoli, onion, baby corn, asparagus and capsicum. We don't particularly enjoy bok choy but you can use it.

Provided by Wendys Kitchen

Categories     One Dish Meal

Time 25m

Yield 4 serving(s)

Number Of Ingredients 13

8 ounces fresh thin Chinese egg noodles
1 tablespoon soy sauce
1 tablespoon rice wine (preferably Shaoxing) or 1 tablespoon medium-dry sherry
1 tablespoon oyster sauce
1 teaspoon cornstarch
1/4 teaspoon white pepper
1/2 cup reduced-sodium chicken broth
1/4 cup peanut oil (or less)
1 teaspoon finely chopped peeled fresh ginger
1 teaspoon finely chopped garlic
3 scallions, cut into 2 1/2-inch pieces (1 cup)
5 ounces fresh shiitake mushrooms, stems discarded and caps quartered (2 1/2 cups)
6 ounces choy sum, cut into 2 1/2-inch pieces (2 1/2 cups) or 6 ounces inch-wide broccoli florets

Steps:

  • Bring 8 cups unsalted water to a boil in a 6- to 8-quart pot, then add noodles, stirring to separate, and cook 15 seconds. Drain in a colander and rinse under cold water until noodles are cool, then shake colander briskly to drain excess water.
  • Stir together soy sauce, rice wine, oyster sauce, and cornstarch with 1/4 teaspoon white pepper in a small bowl until smooth, then stir in chicken broth.
  • Heat wok over high heat until a drop of water evaporates within 1 to 2 seconds of contact, then add 1/2 cup peanut oil and heat until just smoking. Carefully add noodles all at once, flattening top to form a 9-inch cake. Cook until underside is golden, 4 to 5 minutes, rotating noodle cake with a metal spatula to brown evenly and lifting edges occasionally to check color.
  • Carefully flip noodle cake over with spatula and tongs, then cook, rotating cake, until other side is golden, 2 to 3 minutes more. Transfer noodle cake to a large paper-towel-lined plate to drain excess oil. Discard any oil remaining in wok and wipe out wok with paper towels.
  • Transfer drained noodle cake to a platter and loosely cover with foil to keep warm.
  • Heat wok over high heat until a drop of water evaporates within 1 to 2 seconds of contact.
  • Add 1 tablespoon oil to wok over high heat. When oil just begins to smoke, add ginger and garlic and stir-fry 5 seconds, then add scallions and stir-fry 30 seconds. Add mushrooms and stir-fry until softened, about 3 minutes. Add choy sum and stir-fry until leaves are bright green and just wilted, 2 to 3 minutes (if using broccoli, cook until almost crisp-tender).
  • Stir broth mixture, then pour into wok and stir-fry until sauce is slightly thickened, about 2 minutes.
  • Return mixture just to a boil, then pour over noodle cake.

VEGETABLE LO MEIN

Vegetable Lo Mein image

This vegetable lo mein is a really simple, versatile and healthy noodle dish. Vegetable lo mein can be a staple vegetarian meal or a meatless Monday dinner!

Provided by Bill

Categories     Noodles and Pasta

Time 25m

Number Of Ingredients 15

1 pound fresh white noodles or lo mein egg noodles ((450g))
1 tablespoon dark soy sauce
2 tablespoons light soy sauce
1 teaspoon sesame oil
1 teaspoon sugar ((plus 1 teaspoon hot water to dissolve the sugar in))
Pinch of five spice powder ((optional))
1 tablespoon oil
1 clove garlic ((minced))
1 cup sliced mushrooms ((shiitakes, button mushrooms, or anything you like))
1 scallion ((split at the thick parts and cut into 2-inch lengths))
1 bell pepper ((red, orange, or yellow; julienned))
1 small carrot ((julienned))
1 tablespoon Shaoxing wine
1 cup snow peas ((trimmed))
1 cup leafy greens ((bok choy, choy sum, etc.))

Steps:

  • Boil water in a large pot for the noodles. If using the lo mein egg noodles, you can skip this step, as those noodles do not require any pre-cooking. But if using fresh white noodles, you will have to boil them. Just cook until al dente, drain, and rinse in cold water. Set aside.
  • In a small bowl, combine the soy sauces, sesame oil, dissolved sugar, and five spice powder, if using.
  • Heat 1 tablespoon oil in a wok over high heat and add the garlic, mushrooms, and the white parts of the scallions. Stir-fry for 30 seconds and add the peppers and carrots. Make sure your wok is searing hot, and then add the Shaoxing wine. Stir-fry for another minute.
  • Next, add the snow peas and leafy greens to the wok and cook until the greens are just wilted. Then add your noodles. Make sure that before you add them, they're somewhat loose and not all clumped together (you can rinse them in warm water to loosen them up before adding them to the wok).
  • Pour your sauce mixture over the noodles and stir-fry until the color of the noodles are uniform. A folding or scoop-and-lift motion works well for that. Once everything is well-combined, dish out the noodles and serve.

  • Bring 2 quarts of water to a boil (we use our wok because it heats quickly), and add the Hong Kong-style noodles. Fresh noodles should be boiled for about 1 minute. For dried noodles, boil for 2-3 minutes. Rinse in cold water and drain very thoroughly.
  • Rinse the mung bean sprouts in cold water twice to ensure they are cleaned. Drain just before you are ready to cook the dish so they stay hydrated and crunchy.
  • In a small bowl, mix the hot water and sugar, the soy sauces, sesame oil, 2 teaspoons Shaoxing wine and white pepper, and set aside.
  • Place your wok over high heat, and add 2 tablespoons of oil to coat the wok. Spread the Hong Kong noodles in a thin, even layer, and let the noodles cook for 1-2 minutes. Adjust the heat lower if the noodles start to scorch or higher if the noodles are not turning golden brown.

  • Cook the noodles: Bring the water to a boil in a large pot, cook the noodles according to package instructions. Then toss the noodles with a little oil to prevent them from sticking to each other and set aside.
