PUERTO RICAN MOJITOS
Steps:
- In a cocktail shaker, muddle the turbinado and mint leaves. The mixture should look syrupy and smell minty.
- Add a cup of ice to the cocktail shaker, followed by rum and lime juice. Shake the cocktail shaker vigorously until the shaker frosts over.
- Fill two highball glasses with ice and strain the mojito base into the glasses. Pour the lemon-lime soda to top it. Leave a 1/4" headspace so you can stir the cocktail.
- Garnish your cocktails with fresh mint and/or lime wheels. Serve immediately and enjoy responsibly.

- In a cocktail shaker, add in the lime wedges and mint leaves. Using a muddler or a wooden spoon handle, muddle the mixture for a good 30 seconds to 1 minute to really release the juices from the limes and oils from the mint. Add in the simple syrup, rum, and enough ice to nearly fill the cocktail shaker.
- Shake the cocktail shaker vigorously for about 30 seconds or until ice cold to the touch. Remove the cocktail shaker lid and pour the entire mixture - ice, limes, mint, and liquids - into a fresh glass. Top with club soda or tonic water.
THE REAL MOJITO
This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

- Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

MOJO SAUCE MARINADE
Steps:
- Start by taking apart the garlic head into cloves and remove the papery skin. Next, place the garlic cloves and white onion into a food processor or blender and blend into a finely chopped mixture.
- Then, pour the garlic and white onion mixture into a mixing bowl with remaining ingredients. Mix everything well with a whisk or spoon and let the marinade sit for 45 minutes before using or storing inside the refrigerator.
