PANDEBONO (COLOMBIAN CASSAVA BREAD)
Pandebono (or pan de bono) is a Colombian cheese bread made with cassava starch. This gluten free cheese bread is often eaten for breakfast or as a snack.

- Preheat oven to 420F and grease a baking sheet.
- In a big bowl, add cassava flour, corn flour (masa), sugar, baking powder, and cheeses. Mix to combine.
- Taste your mixture and add salt as needed.* Mix to distribute the salt.
- Add the egg, and butter. Mix well using the tips of your fingers.
- Add 4 tablespoons of milk, one at a time, mixing until the dough comes together. If the dough crumbles when you make a little ball, it needs more milk. Add more milk, one tablespoon at a time, until the dough comes together and doesn't crumble when you form a ball.**
- Divide the dough into 16 portions, roll each one into a ball and place on the prepared baking sheet. Bake for 17-20 minutes, until golden.
- To make filled pandebono: Make a ball with the dough and press with your thumb making a little well in the center. Add a small cube (1 inch) of guava paste and bring the dough together covering the paste, pinching the seam to seal. Shape into a ball again and place on the baking sheet and bake 17-20 minutes, until golden.
- To make a pandebono ring: Roll each ball by hand in to a 6-inch rope. Bring the two edges together to form a circle. Press to seal well. Place on the baking sheet and bake 15-17 minutes, until golden.
- Pandebono is best eaten fresh out of the oven (as soon as it is cool enough to handle) or while still warm. (Reheat any leftover pandebono in an oven or toaster oven set at 350F for around 10 minutes, keeping an eye on them so they don't burn.)

- Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
- Bring water, milk, oil, and salt to boil in a large saucepan. Remove from heat; add tapioca starch and mix well. Let cool, 10 to 15 minutes.
- Transfer tapioca mixture to a large bowl. Add egg and mix well to combine. Fold in Parmesan cheese and knead until dough is smooth but still sticky.
- Scoop out 1 tablespoon of the dough and roll into a small ball; place on baking sheet. Repeat with remaining dough.
- Bake in the preheated oven until golden brown, about 20 minutes.

- Combine canela, anise and water in a small sauce pan. Bring to a boil; reduce heat and simmer for 3 minutes. Remove from heat and cool completely.
- Pre-heat your oven to 350 degrees. Place the canela sticks (cinnamon) on a baking sheet and warm in oven for 3 minutes. This helps to make the canela easier to grind. In a molcajete or food processor finely grind warmed canela sticks and sugar. Place in a bowl and set aside until ready to dust cookies.
- Combine all of the dough ingredients in a large bowl and knead for 15 minutes, add 1 cup of tea by ¼ cup at a time (with varying temperatures you might not need all the tea) and continue kneading until the dough come together.
- Combine well, then remove dough from the bowl, divide dough in fourths and roll out to ¼ inch thick on a floured board and use your favorite cookie cutter and bake on an ungreased cookie sheet for 12- 15 minutes.
- Remove from oven, allow to cool a few minutes and dust with cinnamon sugar.

- Take a small bowl and dissolve the yeast and sugar in 1/4 cup of warm (110 degrees F) water. Place the bowl in a warm place and let it stand until it starts to foam and double in volume, about 10 minutes.
- Meanwhile, measure out 1/4 cup of lard and place the lard in a Pyrex measuring cup or other suitable container. Heat in the microwave on high for about 90 seconds until melted.

- Continue adding more flour -- A LITTLE AT A TIME -- until you make a smooth and pliable dough. Try to add just enough flour to make the dough elastic -- just as much as necessary so that the dough hook barely cleans the sides of the bowl.
- Now let the machine and the dough hook go to work kneading the dough. Set the mixer on a low speed and knead for about 3 to 4 minutes, no more! Your dough will be fairly sticky at this point.
- NOTE: If you don't have a mixer with a dough hook, you can also do this the old fashioned way. Turn the dough out onto a lightly floured surface. Pound the dough ball down and knead by hand until the dough is smooth and elastic, about ten minutes.
