Categories     asian inspired

Yield 6 servings

Number Of Ingredients 11

1 1/2 pounds boneless rib eye steak
1/2 small pear, peeled and coarsely grated
1/4 cup reduced sodium soy sauce
2 tablespoons brown sugar
2 tablespoons toasted sesame oil
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon gochujang (Korean red pepper paste)
2 tablespoons vegetable oil, divided
2 green onions, thinly sliced
1 teaspoon toasted sesame seeds

  • Wrap steak in plastic wrap, and place in the freezer for 30 minutes. Unwrap and slice across the grain into 1/4-inch thick slices. Repeat with remaining 1 tablespoon vegetable oil and steak. Serve immediately, garnished with green onions and sesame seeds, if desired.

SPICY PORK BULGOGI

Spicy Pork Bulgogi image

Spicy, savory, sweet, gingery pork bulgogi made with Korean gochujang sauce.

Provided by JinJoo Lee

Categories     Main Course     Pork

Time 25m

Number Of Ingredients 13

1 lb thinly sliced pork neck butt/leg/shoulder
2 Tbsp soy sauce
2 Tbsp Korean red pepper bean paste ((고추장 gochujang))
2 Tbsp cooking rice wine or mirin
3 Tbsp sugar
1 Tbsp sesame oil
1 Tbsp sesame seeds
1 Tbsp chopped garlic
1 Tbsp grated or chopped fresh ginger
1 Tbsp chopped green onions
1/4 tsp garlic powder
1 tsp Korean red chili powder ((고추가루 gochukaroo) +1 tsp to taste)
1/4 tsp black pepper

Steps:

  • Thinly sliced pieces from the neck, shoulder or hind leg (ham area) are used for pork bulgogi. The cut I bought from my local market is from the neck (collar butt) and it's called moksal (목살) in Korean.
  • Make the marinade by mixing all of the ingredients above.
  • Mix the pork slices and the sauce together and marinate for at least 15 min. or more the better. You can marinate pork bulgogi in the fridge for up to a day.
  • The best way to cook pork bulgogi is to BBQ it over a grill. But it's not easy to just directly cook them over the conventional American BBQ grill because the pieces can fall through. Koreans usually use a grill that have smaller openings.
  • If using a standard American style grill, you can put a piece of tin foil and poke holes into it with a fork so some direct heat can come through.

GROUND BEEF BULGOGI

Easy and quick weeknight menu, perfect with any vegetable side dish you choose to make but no side needed! All you need is a hint of chili sauce for a kick!

Provided by Seonkyoung Longest

Time 10m

Yield 4

Number Of Ingredients 12

1 lb grass-fed or lean ground beef
10 cloves garlic, chopped
1 medium size onion, small diced
4 tbsp soy sauce
2 tbsp mirin
2 tbsp sugar
1 tbsp plum extract(you can substitute to apricot jam)
1/2 tsp black pepper
1 tbsp cooking oil
3 to 5 green onions, chopped
1 tsp sesame seeds
1 tsp sesame oil

Steps:

  • Combine beef, garlic, onion, soy sauce, mirin, sugar, plum extract and black pepper in a large mixing bowl. You could marinate for 30 minutes but it's not necessary because we are using ground beef.
  • Heat a wok or large skillet over high heat, add cooking oil and swirl to coat. Add the ground beef mixture, stir fry and break down the meat into little pieces. Keep cooking until there's no moisture and everything is fulled cooked, about 8 to 10 minutes. Stir occasionally.
  • When you hear the sizzling and all the moisture from the beef is gone, toss in chopped green onions. Turn off the heat. Add sesame seeds and oil, toss one last time.
  • Serve on top of warm cooked rice, cauliflower rice, quinoa or any starch of your choice. Garnish with some sesame seeds and green onion if you'd like to. Enjoy!

DAK BULGOGI (KOREAN CHICKEN BBQ)

Dak Bulgogi (Korean Chicken BBQ) image

Delicious chicken bulgogi!

Provided by Hyosun

Categories     Main

Number Of Ingredients 11

1 pound boneless chicken thigh and/or breast.
3 tablespoons soy sauce
1 tablespoon lemon juice
1 tablespoon brown sugar (Use regular sugar if unavailable )
1 tablespoon honey (or 1 - ⅓ more tablespoons brown sugar)
1 tablespoon rice wine (or mirin or white wine)
1 tablespoon minced garlic
1 teaspoon grated ginger
1 tablespoon sesame oil
pinch black pepper
1/2 teaspoon sesame seeds

Steps:

  • Rinse chicken pieces. Trim off excess fat. Cut each of the chicken pieces into small sizes (about 2-inch long and 1-inch wide). If you want to use this recipe for outdoor grilling, cut the chicken into larger pieces and marinate longer. Double (or triple) the recipe as needed.
  • Mix the marinade ingredients in a bowl until the sugar has dissolved.
  • Coat the chicken pieces with the marinade. Marinate for about 30 minutes in the refrigerator.
  • Preheat a skillet over medium high heat. Add the chicken pieces, reserving the marinade. Cook until cooked through and slightly caramelized, about 2 minutes each side. (The sugar and honey in the marinade will burn easily, so watch it carefully and add the reserved marinade by tablespoon when the pan gets dry. You can slightly reduce the heat to avoid burning, if needed.)

BULGOGI BEEF RECIPE

Bulgogi Beef Recipe image

Bulgogi Beef Recipe - A traditional Korean bbq beef dish that's stir-fried in a sweet and savory marinade; the perfect meal served with rice and kimchi!

Provided by Sommer Collier

Categories     Main Course

Time 31m

Number Of Ingredients 10

1 1/2 pounds lean steak, (frozen (I used New York Strips))
1/3 cup soy sauce
2 1/2 tablespoons brown sugar
2 tablespoons sesame oil
3 cloves garlic, (minced)
1 tablespoon freshly grated ginger
1 bunch chopped green onions, (whites and greens separated)
1/2 teaspoon ground black pepper
1 teaspoon Sriracha (or gochujang Korean chile paste)
1 tablespoon toasted sesame seeds

Steps:

  • While the steak is frozen, trim the fat and slice paper-thin. Frozen meat is much easier to cut thin than thawed meat.
  • Place the steak strips in a large bowl and top with: Soy sauce, brown sugar, sesame oil, garlic, ginger, chopped onion whites, pepper, and sriracha. Toss to coat and allow the steak to thaw and marinate for 45-60 minutes.
  • Heat a wok (or large skillet) to high heat. Use tongs to transfer half of the meat to the hot wok. Spread the steak pieces around the skillet and allow them to sear on one side before using the tongs to move them around and caramelize on all sides. Once the juices have evaporated and the steak has a nice brown color, remove from the wok, 5-8 minutes.
  • Cover the cooked steak to keep warm. Repeat with the remaining meat, and throw out the leftover marinade. Serve warm, sprinkled with the reserved green onion tops and sesame seeds.

BULGOGI (KOREAN BBQ BEEF)

Bulgogi (Korean BBQ Beef) image

How to make the most delicious bulgogi (Korean BBQ beef) from scratch. Don't forget to read my best cooking tips from above!

Provided by Sue | My Korean Kitchen

Categories     Main

Time 4h20m

Number Of Ingredients 15

800 g rib eye ((1.76 pounds) or top sirloin (or any tender prime beef cut), thinly sliced, 2mm to 3mm (1/8 inch) thickness)
1 onion ((130 g / 4.6 ounces), optional, peeled & thinly sliced)
2 stalks green onion ((55 g / 2 ounces), optional, thinly sliced)
1/2 carrot ((55 g / 2 ounces), optional, peeled & thinly sliced)
1 Tbsp toasted sesame oil
1 Tbsp toasted sesame seeds
1 Tbsp cooking oil ((I used rice bran oil))
6 Tbsp soy sauce ((I use regular Kikkoman soy sauce))
3 Tbsp brown sugar
2 Tbsp rice wine ((mirin))
1 red apple (or asian pear (155 g / 5.5 ounces))
1/2 onion ((80 g / 2.8 ounces))
1 Tbsp minced garlic
1 tsp minced ginger
1/8 tsp ground black pepper

Steps:

  • Blend the marinade ingredients in a mixer or food processor until smooth. Set aside.
  • Place the thinly sliced meat in a mixing bowl and pour the marinade over it. Mix them well together while gently massaging the meat with your hands. (Wearing a food prep glove is very handy here!)Add the sesame oil and mix it into the meat. (I prefer adding the sesame oil separately as opposed to mixing it in the marinade sauce. I read somewhere that the oil can prevent the other sauce getting absorbed effectively into the meat.)Cover the bowl with cling wrap (or move the marinated meat into a glass container with a lid) and marinate the meat for at least 4 hours in the fridge. (If you have more time, you can also marinate it overnight to deepen the flavour even more).
  • Preheat a skillet / bbq grill on medium high heat until well heated. Add the cooking oil and spread it well. Add the meat (and vegetables) and cook it on medium high to high heat for 3 to 5 mins (until the meat and vegetables cook to your desired doneness). Toss in the sesame seeds and stir them quickly.
  • Serve the bulgogi with steamed rice and other Korean side dishes. (refer above for more tips)

  • To marinate chicken: In a large bowl, combine the marinade ingredients: Soy sauce, calamansi (or lemon) juice, brown sugar, honey, rice wine, garlic, ginger, sesame oil, salt and pepper. Mix well. Add the chicken and marinate for 3 hours or overnight. Keep covered in the refrigerator while marinating.
  • When ready to cook, remove the chicken pieces from the marinade. Reserve the marinade. Set the liquid aside. To cook: In a large, grill pan, over medium-high heat, add the vegetable oil. When oil is hot enough. add the chicken pieces. Cook the chicken pieces thoroughly, about 8 to 10 minutes, turning the pieces to cook evenly. Lower the heat to medium if the skillet becomes too hot. You don't want the pieces to burn because of the sugar and honey content in the marinade. When the chicken is cooked, transfer to a chopping board and slice into bite-sized pieces, about 1-2 inches in length each.Pour the reserved marinade into the skillet. Add the 1/2 cup chicken broth. When the liquid boils and is slightly reduced in about 1 to 2 minutes, return the sliced cooked chicken. Mix well.Garnish with sesame seeds. Serve warm with rice.
