8 large green prawns
1 egg yolk
1 teaspoon coarse grain mustard
1 garlic clove, crushed
1 cup olive oil
1 teaspoon lemon myrtle, powder
salt & pepper

Steps:

  • Thread prawns onto skewers, brush with olive oil and season with salt & pepper.
  • BBQ or grill over a medium heat until opaque.
  • Whisk egg yolk, mustard, garlic and a pinch of salt in a mixing bowl. Gradually add olive oil, whisking constantly, until the aioli is thick. Stir through lemon myrtle.
  • Serve prawns with lemon myrtle aioli for dipping.

1/3 cup oil
1 1/2 tablespoons honey
1 1/2 tablespoons chili sauce
1 tablespoon lemon juice
4 shallots, finely chopped
2 tablespoons chopped fresh parsley
1/4 teaspoon five-spice powder

Steps:

  • Shell the prawns, leaving the tail intact; remove the black vein.
  • Combine remaining ingredients in a bowl, mix well; mix in the prawns, cover, refrigerate 1 - 2 hours.
  • Thread prawns onto skewers, barbecue quickly until cooked and tender. Brush with remaining marinade during cooking.

Rice flour gives this a nice crunch. Backhousia citriodora (common names lemon myrtle, lemon scented myrtle, lemon scented ironwood) is a flowering plant in the family Myrtaceae. From subtropical rainforests of central and south-eastern Queensland, Australia, with a natural distribution from Mackay to Brisbane. Other common names are sweet verbena tree, sweet verbena myrtle, lemon scented verbena, and lemon scented backhousia.

24 large prawns, peeled, deveined with tails on
1 cup rice flour
1 tablespoon ground lemon myrtle or 1 tablespoon ground lemon verbena
1 teaspoon smoked paprika or 1 teaspoon dried chipotle powder
1 pinch chili powder
salt
peanut oil
red pepper flakes
lime slice

Steps:

  • Heat 1 inch of oil in a frying pan.
  • Mix rice flour, lemon myrtle, paprika, chili and salt to taste. Toss prawns into mixture. Remove excess flour.
  • Fry shrimp over heat heat 1 minute per side.
  • Drain on paper towel.
  • Sprinkle with red pepper flakes, salt and a slice of lime.

1/2 cup melted butter
1/4 cup olive oil (good quality)
2 tablespoons flat leaf parsley, chopped fine
2 teaspoons minced garlic
2 tablespoons lemon juice
1/2 teaspoon lemon zest, grated
1 kg large green prawns, peeled, tails still on

Steps:

  • Mix everything together in a glass or ceramic bowl.
  • Marinate for 30 - 60 minutes (while you make a salad, slice the bread, set the table and get the barbie heated up).
  • You can either throw the prawns on just like this OR you can thread them onto skewers - either works.
  • Cook over a medium heat until the prawns are lovely and orange - don't over cook or they will be woody and chewy.
  • Serve with a salad and bread.
