HOMEMADE BUTTERMILK BISCUITS



Homemade Buttermilk Biscuits image

Buttermilk makes biscuits airy and tangy.

Number Of Ingredients 7

4 cups all-purpose flour, plus more for work surface
4 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons salt
1 teaspoon sugar
1 cup (2 sticks) unsalted butter, cut into pieces
2 cups buttermilk

Steps:

  • Preheat oven to 375 degrees. Line a baking sheet with a Silpat (French nonstick baking mat) or parchment paper; set aside. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  • Transfer about 2 1/2 cups flour mixture to a food processor fitted with the steel blade. Add butter, and pulse until the largest pieces are the size of peas. Return butter mixture to the bowl with the flour mixture. Use your fingers to combine.
  • Add buttermilk, and stir just until mixture comes together; the batter will be sticky. Transfer to lightly floured work surface; use floured fingers to pat dough to 1-inch thickness. Use a 2 1/2-inch round biscuit cutter or cookie cutter to cut biscuits as close together as possible to minimize scraps. Gather scraps together once, pat together and flatten, and cut out.
  • Transfer biscuits to prepared baking sheet; bake until lightly browned, 18 to 20 minutes. Remove from oven; cool on a wire rack. Serve warm.

1 quart sweet milk
4 egg yolks
3 tablespoons flour
1 cup sugar

Steps:

  • Add 1/2 sugar to milk and cook 5 minutes on high in microwave.
  • Add flour, mix well with remaining 1/2 cup sugar and cook 1 minute; stir.
  • Cook 1 more minute.
  • Beat egg yolks well and add 1 cup of hot milk mixture to eggs; mix well.
  • Return to milk mixture. Cook to desired thickness, stirring every 30 seconds (about 6-8 minutes).
  • If you make it too thick, you can always thin it down with milk.

2 cups butter
1 cup fructose (fruit sugar)
1 cup white rice flour
3 cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream together butter and sugar. Mix in rice flour until well blended. Add all-purpose flour. Remove from bowl.
  • Knead dough for 5 minutes. Roll dough out and place in a greased and floured 9 x 13 inch pan.
  • Prick the top with a fork. Bake 35 minutes or until golden brown and a knife inserted in the middle comes out clean. Cut into bars and allow to cool in the pan.

3/4 cup packed light-brown sugar
3 tablespoons water
1/3 cup light corn syrup
5 tablespoons unsalted butter
1/4 cup sweetened condensed milk

Steps:

  • In a small saucepan, combine sugar, water, and corn syrup; cook over medium heat, stirring constantly, until sugar has completely dissolved, about 3 minutes.
  • Add butter; stir until melted. Remove from heat, and stir in condensed milk. Serve warm.
