AUNT RUTH'S FAMOUS BUTTERSCOTCH CHEESECAKE

Aunt Ruth's Famous Butterscotch Cheesecake image

Aunt Ruth was our nanny when I was little and made this cheesecake often. Since it had to chill overnight, it was torture when my sister and I had to wait until the next day to have a piece. When I visited my old neighborhood and stopped by her house, she offered me a piece of that wonderful cheesecake. I made sure to leave with a copy of the recipe! -Trisha Kruse, Eagle, Idaho

Aunt Ruth's Graham Cracker Pie. My great aunt Ruth made the most wonderful pie she called Graham Cracker Pie. She used to sell this and other pies to local restaurants in West Virginia and guarded her recipes pretty closely. Thankfully, she taught my grandmother (her sister) how to make the pie, then my grandmother secretly taught my sister, who then secretly taught me (since I was the pie ...

  • There are two ways to integrate the butter into the dry ingredients… by hand mixing or with a food processor. In my experience, both methods work equally well as long as you mix the water in by hand. Don't process the water into the dough, or you'll end up with a tough crust.
  • BREAK UP BUTTER BY HAND: Add flour and salt to a large mixing bowl, stir with a fork to blend. Take cold butter out of the refrigerator and add it to the bowl. Use a pastry cutter to cut the cold butter into the flour, using firm pressure and pushing down repeatedly to break the butter into small pieces.
  • Work as quickly as you comfortably can. Stop when the flour and butter mixture looks like large-curd cottage cheese. There should be a variety of sizes in the butter pieces… the largest should be about the size of a pea. Place flour and butter mixture in the freezer for 2 minutes before proceeding.

SIMPLE SLOPPY JOE PIE - MID-CENTURY MENU
2011-01-26 Since this is a PB-O recipe, I’ll tell you this story. My Aunt Ruth (Mrs. Molloy) entered the 1964 PB-O with Peanut Butter and Jelly Cake. She won Honorable Mention, or some such. She was so incensed by not winning first prize that she told Art Linkletter (the host in those days) that she never did like that crappy old Pilsbury flour anyway.
