SAUSAGE BALLS I
Sage-seasoned sausage balls get dressed up with a nice tangy sauce. Reheat before serving.

Steps:
- In a medium-sized mixing bowl, combine sausage, egg, crushed crackers and sage. Separate the mixture into two balls.
- Heat a skillet to a high heat and brown the sausage balls. Drain on paper towels. Transfer the balls to a container with a lid.
- Combine ketchup, vinegar, brown sugar and soy sauce in a small pot. Stir while heating the sauce. Let the sauce come to a boil, then reduce the heat to simmer. Let the sauce simmer for 20 minutes before pouring the sauce over the balls.
- Allow to cool, then cover the balls and sauce, and refrigerate overnight. Reheat before serving.

SWEET AND SPICY SAUSAGE BALLS
This is one of my favorite recipes handed down from my mother in-law.

Steps:
- Roll sausage into 100 very small balls using no more than 1 1/2 teaspoons meat per ball.
- Stir red wine vinegar, ketchup, brown sugar, soy sauce, and ground ginger together in a large saucepan over medium heat; bring to a simmer, reduce heat to low, and cook at a simmer until beginning to thicken, about 15 minutes.
- Heat a skillet over medium heat. Fry sausage balls in batches in the hot skillet until browned on all sides and no longer pink in the center, 3 to 5 minutes per batch. Remove cooked sausage balls with a slotted spoon to the saucepan and stir into the sauce to coat.

AUNT POLLY'S SAUSAGE BALLS
I have to make these once or twice during the holidays. I don't know why only during the holidays, because they are good any time of year. They are great cold, but I love to pop a few into the microwave for a few seconds and eat them hot.

Steps:
- 1. Preheat oven to 350*
- 2. Place all ingredients into large mixing bowl. Mix by hand. I use latex gloves and just keep mashing it until I get everything mixed in well. It will be stiff, but you can add a little more milk if you feel you need it to get it all mixed together.
- 3. Roll into 1 inch balls (I wear the gloves for this too. Keeps it from sticking to your hands). Place onto non-stick cookie sheet. They can be placed close together, but not touching because they don't get a lot bigger than the original size.
- 4. Bake for 20 minutes until they start to become brown. Sometimes the bottoms will brown quicker because of the sausage and cheese, but they are just dark, not burnt.
- 5. I usually double this recipe so I can take some to work and leave some for home. Enjoy!

SAUSAGE BALLS
Steps:
- Mix together sausage, cheese, milk and egg in a large bowl. Add buttermilk pancake and waffle mix with onion soup mix and ground red pepper. Blend well. Pinch off bits of dough and shape into 1- inch balls. Place on lightly greased baking sheets, spacing 1 1/2 inches apart, and sprinkle lightly with paprika.
