AUNT GUN-MARIE'S WAFFLES
My Swedish aunt makes the best waffles ever - crispy on the outside, tender on the inside. They are a bit of a project, but the best part is that they freeze really well too. We freeze them between sheets of parchment, then pop them in the toaster for a quick breakfast.

Steps:
- Sift flour, sugar, baking powder, and salt into a large bowl. Stir egg yolks and vanilla extract into flour mixture. Mix milk, alternating with butter in 3 to 4 additions, into flour mixture until batter is smooth.
- Beat egg whites in a glass, metal, or ceramic bowl until soft peaks form. Lift your beater or whisk straight up: the egg whites will form soft mounds. Gently fold egg whites into batter; let rest 10 to 15 minutes.
- Preheat a waffle iron according to manufacturer's instructions.
- Spoon batter into the waffle iron and cook according to manufacturer's instructions.

- Preheat the waffle iron according to the manufacturer's directions.
- Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine.
- In a small bowl, mix egg yolks, milk, and butter. Set aside.
- In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
- Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites.
- Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.

AUNT JEMIMA WAFFLE RECIPE
Steps:
- Grease and preheat your waffle iron.
- Stir together Aunt Jemima mix, milk, egg, and oil until you get a smooth and lump-free mixture. Let the batter rest for 4-5 minutes before you bake.
- Pour the batter onto your waffle iron and close the lid. Let the waffle cook until the steaming stops. Lift the lid and take out the waffle.
- Repeat step 3 until you cook up all your batter.

LIGHT AND CRISPY WAFFLES
These light and crispy waffles come together quickly. Cornstarch is the secret to crispy waffles. It guarantees that your waffles will be perfectly crisp and tender. This recipe makes four standard waffles (1/2-inch to 3/4-inch thick). If you want to make thicker Belgian waffles or use a deep waffle iron, you will get closer to three waffles using our recipe below. Separating the egg is optional but is recommended. We do not do this in the video; however, after years of feedback from readers, we have determined that whipping the egg white thickens the batter slightly and improves the results for deeper waffle irons.

- Whisk together the flour, cornstarch, salt, baking powder, baking soda, and sugar in a large bowl.
- In a separate bowl, whisk the buttermilk, oil, and vanilla extract.
- For the lightest waffles, separate the egg. Whisk the egg yolk into the milk mixture. If you do not plan on separating the egg, whisk the whole egg into the milk mixture.
- If you separate the egg, add the egg white to another bowl, use a handheld mixer to beat until stiff, and then set aside.
- Whisk the milk mixture into the dry ingredients until only small lumps are left. Switch to a rubber spatula and gently fold in the whipped egg whites.
- Set the batter aside for five to ten minutes while preparing the waffle iron.
- Heat the waffle iron to the highest heat setting.
- Cook waffles until golden and crisp, adding enough batter to the waffle iron to fill the entire lower grid. If the waffles look too dark, turn the heat down slightly.
- Serve the waffles immediately or keep them warm and crispy on a rack in a 200°F oven until ready to serve. Stacking them outside the oven will cause them to steam and become floppy.

- Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
- In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
- Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
AUNT LOU'S WAFFLES

- Version 1 Sift dry ingredients together into large mixing bowl. Mix eggs yolks with milk and add to dry ingredients slowly beating until batter is smooth. add melter butter and fold in stiffly beaten egg whites. Version 2 Pre-heat your Waring wafflemake on setting 4. Beat egg whites till stiff. Mix dry ingredients, egg yolks, melted butter, and milk and mix until smooth. Fold in egg whites. Pour into wafflemaker and wait two minutes til it beeps. Sprinkle crushed pecans on batter just before closing the wafflemaker lid to make pecan waffles. Hint: Buy a Waring waffle maker. You won't regret it.
