SPINACH BALL APPETIZERS
Savory little bites of spinach, garlic, spices, and two kinds of cheese, today I'm sharing with you my recipe for the Best Ever Spinach Balls Appetizer. You might want to make a second batch, because these go fast at parties!

Steps:
- Preheat oven to 350°F.
- In a large bowl mix together spinach, breadcrumbs, Parmesan, butter, green onions, eggs, cheddar, salt, pepper, and garlic.
- Form into balls and place on a large greased baking sheet.
- Bake for 20-25 minutes, or until spinach balls are golden brown and cooked through.

These delicious little appetizers are always a hit. Serve warm or at room temperature with a good quality mustard. These can be frozen unbaked and popped into the oven when unexpected guests pop in.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.
- Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.

These are wonderful appetizers. My guests rave about them and they disappear fast! You can use prepared breadcrumbs but they don't taste as good as with the homemade ones.

Steps:
- Place toast in a blender or food processor and blend until finely crumbed.
- Combine all ingredients in a large bowl and chill for at least three hours or overnight.
- Form into balls and place on a greased cookie sheet.
- Balls can be covered and refrigerated at this point for up to twelve hours.
- Bake at 400 degrees for 12-15 minutes, or until golden brown.

SPINACH BALLS
I got this recipe from my mother-in-law, who says these were my veggie-hating husband's favorite childhood snack. They are a great way to get kids to eat spinach!! Prep time includes chill time. This can be a little salty depending on the butter, cheese and bread crumbs you use, if you are concerned about saltiness use unsalted butter and garlic powder in place of the garlic salt. I have also made these with only 1/2 cup of melted butter (1 stick) and they are just as good but you need to spray the cookie sheet because they will stick.
