12 ounces pineapple (chopped)
4 apples (peeled and chopped, use more or less depending on the size of the apples and what feels right)
4 ounces onions (peeled and chopped, use more if you really like onion)
4 ounces raisins
3 ounces brown sugar
7 ounces light malt vinegar
1/2 teaspoon ground coriander
1/4 teaspoon allspice
1/4 teaspoon ground cloves

Steps:

  • Mix all ingredients in a large saucepan, stir and bring to a boil.
  • Simmer uncovered for about 35-40 minutes, until the chutney is reduced and thickens. Stir frequently!

2 tablespoons cornstarch
1 teaspoon ground mustard
1-1/2 cups water
1/2 cup raisins
2 tablespoons white vinegar
2 tablespoons lemon juice
1/4 teaspoon grated lemon zest
2 tablespoons butter

Steps:

  • In a saucepan, combine brown sugar, cornstarch and mustard. Stir in the water, raisins, vinegar, lemon juice and zest until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in butter until melted. Serve warm over sliced ham.

2 (8 ounce) cans crushed pineapple, in juice (do not drain)
1 cup brown sugar, packed
1 tablespoon cornstarch
1/4 teaspoon salt
2 tablespoons lemon juice
1/2-1 tablespoon Dijon mustard (start with less and adjust to your taste)

Steps:

  • In a small sauce pan mix the brown sugar, cornstarch and salt.
  • Stir in undrained crushed pineapple, lemon juice and mustard.
  • Cook over medium heat, stirring constantly until mixture thickens and comes to a boil.
  • Boil while stirring for 1 minute.
  • Serve warm with ham.

Custard pie is brightened with crushed pineapple in this fun and easy pie. When I was little, my best-friends great-aunt Tootie would make this pie for the family each and every summer at her home in Iowa and it became a favorite of my family too!

⅓ cup white sugar
1 tablespoon cornstarch
1 (8 ounce) can crushed pineapple, with juice
½ cup milk
½ teaspoon vanilla extract
1 (8 ounce) package cream cheese, softened
½ cup white sugar
½ teaspoon salt
2 eggs
1 (9 inch) refrigerated pie crust
1 pinch ground nutmeg

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Stir together 1/3 cup of sugar and cornstarch in a small saucepan. Stir in the crushed pineapple with the juice, then bring to a simmer over medium heat. Cook and stir until the mixture has thickened and turned clear. Remove from the heat and allow to cool.
  • While the pineapple mixture is cooling, place the milk, vanilla extract, cream cheese, 1/2 cup sugar, and salt into a blender. Pulse until the mixture is combined, then add an egg and pulse until smooth. Add the remaining egg, and pulse again until the mixture is smooth. Pour into the pie shell and smooth the top. Carefully pour the pineapple mixture over the pie until evenly covered, then sprinkle with a pinch of nutmeg.
  • Bake in the preheated oven for 10 minutes, then reduce the heat to 325 degrees F (165 degrees C), and continue baking until a knife inserted into the center comes out clean, about 40 minutes more. Cool to room temperature, then refrigerate for several hours before serving cold.

1/4 cup raisins
5 tablespoons water, divided
1/2 cup orange juice
2 tablespoons unsweetened crushed pineapple, undrained
1 tablespoon cornstarch
1/2 teaspoon rum extract, optional
1 boneless fully cooked ham steak (1 pound)

Steps:

  • In a large saucepan, combine the raisins, 4 tablespoons water, orange juice and pineapple. Bring to a boil. Combine cornstarch and remaining water until smooth; gradually stir into raisin mixture. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in extract if desired. , Cut the ham steak into four pieces. In a large skillet coated with cooking spray, cook ham over medium heat for 1-2 minutes on each side or until browned. Serve with raisin sauce.

I made this for our Easter ham. I couldn't find a recipe that I liked that had pieces of pineapple in it, only the juice. I found this on a net search, after going through many pages, lol. I had to make a little change, adding cornstarch to thicken it. The amounts here I have doubled, so we could have sauce with our leftovers, but you can cut the recipe by half, if you prefer.

2 teaspoons dry mustard
2 tablespoons flour
4 tablespoons cider vinegar
4 tablespoons lemon juice
1/2 teaspoon grated fresh lemon rind
2 cups water
1 cup pineapple juice
1/2 crushed pineapple
1 cup raisins
2 -3 teaspoons cornstarch, mixed with a about 2 tbsp water

Steps:

  • In a bowl,mix together the sugar, mustard and flour.
  • In a saucepan, mix the remaining ingredients, then add the dry ingredients to the pan.
  • Bring to a boil, cook on a low boil for about 5-10 minutes.
  • Add the cornstarch-water mixture,and cook a few minutes more, until thickened.
