AUNT RO'S BAKED BEANS
This is my Aunt Ro's recipe for baked beans. It's closer to chili than baked beans, and it's great for a potluck or BBQ.

Steps:
- Place the bacon in a large, deep skillet and cook over medium-high heat until evenly brown. Drain on paper towels, crumble, and set aside. Drain bacon fat from the skillet.
- Using the same skillet, cook the ground beef and onion over medium heat, stirring until the meat is no longer pink, 5 to 7 minutes. Drain.
- Transfer the ground beef to a slow cooker. Add the pinto beans, butter beans, baked beans with pork, barbeque sauce, ketchup, and brown sugar to the ground beef mixture; stir to blend well. Cover and cook for 4 hours on High. Top each serving with crumbled bacon.

MARY'S BAKED BEANS
Steps:
- Preheat the oven to 350 degrees F.
- Add the bacon to a large skillet and fry over medium heat until browned, 8 to 10 minutes. Remove the bacon to a paper towel-lined plate and remove all but 4 tablespoons bacon fat from the skillet.
- Add the beans, ketchup, molasses, brown sugar, dry mustard and onions to an 8-by-8-inch casserole dish. Add in the bacon fat from the skillet. Lay the reserved bacon strips on top of the bean mixture. Bake until heated through, 30 to 45 minutes.

Steps:
- Brown ground beef. Set on paper towel lined plate to drain.
- Brown bacon pieces.
- Sautee the onion and garlic in bacon drippings.
- Mix together the brown sugar, ketchup, molasses, and dry mustard in a big aluminum pan.
- Add the beans, ground beef and bacon pieces.
- Bake at 350 degrees for 1 hour.
- You can adjust the amount of ketchup to your taste. I use between 3/4 and 1 cup.

MY AUNT'S GREEN BEANS
Steps:
- Fill a bowl with ice water. Cook the green beans in salted boiling water until tender but still bright green, about 5 minutes, then drain and chill in the ice water to stop the cooking. Remove from the ice water and pat dry.
- In a large bowl, whisk together the hazelnut oil, vinegar and honey, and season to taste with salt and pepper. Add the green beans to the bowl with the dressing and toss to coat, adding more salt and pepper if needed. Transfer to a serving bowl or platter and top with the toasted nuts and lemon zest.
ALMOST LIKE AUNT JACKIE'S BAKED BEANS
My Aunt Jackie used to make THE BEST baked beans whenever we had a family gathering. - 1. Heat oven to 350 degrees F. Coat a large baking dish with no-stick spray. Set aside.
- 2. In a large bowl, combine the lima beans, ham (or bacon), onion, garlic, ketchup, barbeque sauce, corn syrup, brown sugar, mustard, liquid smoke and ham flavoring (I use Goya ham concentrate - pictured). Transfer to the prepared baking dish.
- 3. Bake for 45-50 minutes or until hot and bubbly. During this step you may have to add some of the reserved cooking liquid so beans don't dry out.
- 4. HINT: dried lima beans must be washed and soaked overnight then drain soaking liquid. Add about 5-6 cups fresh water and cook for approximately 2 hours or until beans are soft, adding water as needed. Refer to instructions on bean packaging for further details. Please note: COOK TIME listed includes the 2 hour stove top cooking, prep time and baking time
- 5. For extra flavor, lay slices of bacon on top of beans when ready to bake.

The title says it all...this is my Aunt Jackie's baked bean recipe. It's very good and different because it has sausage in it instead of ham or bacon.

- 1. Brown sausage and onion. In a large crock pot combine the browned sausage and onion with the remaining ingredients. Cook for 6-8 hours.

- Rinse and soak the beans if necessary. You can set these out to soak overnight and they will be ready the next day.
- Chop up the bacon into 1/2 to 1-inch pieces, and place in skillet on medium to medium low heat. Cook until just starting to brown.
- While the bacon is cooking, chop the onion into small 1/4 inch pieces. Add the onion once the bacon is just starting to brown. Cook till the onions are slightly translucent. Drain grease and transfer to a Dutch oven or another similar cooking vessel.
- Add all the rest of the ingredients, cover and bake at 225° degrees F. for up to 8 hours or until beans are 1-inch cooked. If using a Dutch oven with coals, you can achieve 225° with 15 coals by using 9 on top and 6 on the bottom. However, if you want to cook this faster, raise the temperature and add as many coals as it takes to maintain a constant simmer.
