SWEET POTATO FRIES WITH AUNT TC'S SECRET SAUCES
What's my secret for super-crispy sweet potato fries? I actually have two. First, I soak the potatoes in cold water to remove the excess starch. Then, I give them a toss in a cornstarch and seltzer water mixture. The cherry on top? I dust these with a spicy-sweet spice blend and serve them with two different awesome sauces. Bet you can't eat just one!

Steps:
- For the sweet potato fries: Soak the potatoes in cold water 30 minutes. Dry on paper towels.
- Stir together the brown sugar, garlic, paprika, salt and pepper in a small bowl.
- For the creamy barbecue sauce: Stir together the barbecue sauce, mayonnaise and House Seasoning in a bowl.
- For the spicy sauce: Stir together the ketchup, mayonnaise, House Seasoning and hot sauce in a separate bowl.
- For the sweet potato fries: Pour the oil to a depth of 3 inches in a Dutch oven. Heat the oil to 325 degrees F. Line wire racks with paper towels.
- Stir together the cornstarch and seltzer water in a medium bowl. Dip the sweet potatoes in the cornstarch mixture in batches until coated. (The coating will be thin. Stir the cornstarch mixture after each batch.) Fry the sweet potatoes, in batches, until they float to the top, 1 to 2 minutes. (The sweet potatoes won't brown yet.) Remove to lined wire racks to drain.
- Increase the oil temperature to 350 degrees F.
- Fry the potatoes a second time, in batches, until browned and crispy, 4 to 5 minutes. Remove to the lined racks to drain. Sprinkle immediately with the brown sugar seasoning. Serve right away with the sauces.
- Stir together the garlic and onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

Steps:
- In 2-qt.
- saucepan place potatoes.
- Add enough water to cover; bring to a full boil.
- Cook over medium heat, stirring occasionally, until potatoes are tender (about 10 to 15 minutes).
- Meanwhile, in 10" skillet, cook bacon over medium high heat, stirring occasionally, until partially cooked (about 4 minutes).
- Add onion; continue cooking until browned.
- Drain off fat except for 2 tablespoons; set bacon and onion aside.
- Stir flour, thyme leaves, salt and pepper into reserved 2 tablespoons of fat.
- Cook over medium heat, stirring constantly until smooth and bubbly (about 30 seconds).
- Stir in Whipping cream, peas, bacon, onion and potatoes.
- Continue cooking, stirring occasionally, until mixture thickens and is heated through (about 3 to 4 minutes).
EVA'S POTATOES
Steps:
- Slice the potatoes on a mandoline and set aside. Heat a large saute pan and add the butter and olive oil. Add the onions and garlic and saute until translucent, about 3 minutes. Add the potatoes and spread out evenly. Season with salt and pepper and paprika. Deglaze with white wine and add the chicken stock. Cover and cook over medium heat until most of the liquid is absorbed and the potatoes are tender. Add more chicken stock, if needed.
CREAMY AU GRATIN POTATOES
This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

- Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours in the preheated oven.

- 1. Preheat Oven @ 400 degrees
- 2. Spray or Butter casserole dish. (6X6 casserole or Double recipe for a 9 X 11 casserole dish) Place Layers of Potatoes, onion, cheese, & ham with seasonings in Baking dish/ Casserole. Ending with a layer of Cheese on the Top. Pour the Cream over the top of the mixture Top with 3 pats of butter, Cover and bake.
- 3. BAKE @ 400.00 for 20 Min, then reduce Oven temp to 350 for 40 min. Total Baking time 1 Hr. NOTE: If you Double this Recipe, You will have to Adjust the Baking time ALSO. to approx. 1 1/2- 1 3/4 hrs total Baking time. (more or Less) for the 9X11 Pan size Remove from Oven, Sprinkle with more Cheese on top place back in oven UNCOVERED, just untill Cheese is melted and serve Hot.
