DATE NUT BALLS
A friend gave me this recipe more than 30 years ago. It is my husband's favorite treat. I like these with pecans or walnuts. If you do not like nuts, omit the nuts and use 3 cups Rice Krispies. -Melinda Lord, Washington, Iowa

DATE-NUT BALLS
This is one of my very favorite treats to make for the holidays and package up along with some fudge, pecan tarts, and pecan tasties, to give to the neighbors. This way my husband and I can have a few too.

DATE BALLS
This was one of my mother's recipes for Christmas cookies. These moist and crisp cookies are fun and easy to make. These cookies get better over time when the flavors blend together. Enjoy.

GRANDMA'S PECAN BALLS (FROM AUNT KATIE)
I always thought the origin of these cookies was Germany, and my paternal Grandmother set me straight when I asked for the recipe today - it came from Aunt Katie (who isn't really my Aunt, she's my godmother). In any case, here are my most favourite cookies that Grandma makes - I'll have to post the rest of the authentic German recipes she gave me years ago as well... she's been making these since I was kneehigh to a grasshopper!

Steps:
- Preheat oven to 350.
- Cream butter with sugar.
- Add flour and pecans, mix well.
- Roll into balls, about the size of a large gumball, and place on a cookie sheet (I prefer to line mine with parchment, but I'm sure cooking spray would do.).
- Bake at 350 for 20 minutes, or until very lightly browned.
- While still warm, roll in superfine sugar - this is important because the dough does not have much sugar.

Steps:
- In a medium skillet over medium heat, add the butter, celery and onion. Saute the vegetables until tender and just starting to brown...the butter may start to brown as well, that just adds to the flavor. Make sure it doesn't burn though.
- In a large bowl, pour in the 2 boxes of stuffing mix. To that add the chicken broth, eggs, corn, onions, celery, butter that onions and celery cooked in, sausage, salt and pepper. Mix well.
- Preheat oven to 375 degree F. In a 9 x 13 baking dish, mix the soup and milk with a whisk. This will be a gravy that the balls will bake in.
- With your hands grab a good portion of the mixture and squeeze to shape like a ball. I used as much as would fit in the palm of my hand. Place the balls in the gravy. You should get at least 12. I then had some left over gravy I drizzled over each one...up to you. Cover and place in preheated oven. Bake for 40 - 45 minutes. Can take the foil off when about 10 minutes are left, if you want them a little crispy on the outsides.
- Enjoy!
