1 1/4 cups packed brown sugar
1 cup butter or margarine (2 sticks), room temperature
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla
1/2 teaspoon salt
2 large eggs
3 cups old-fashioned or quick-cooking oats*
1 1/3 cups all-purpose flour
1 cup raisins, if desired

Steps:

  • Heat the oven to 350°F. In a large bowl, stir the brown sugar, butter, baking soda, cinnamon, vanilla, salt and eggs with a wooden spoon until well mixed. Stir in the oats, flour and raisins until mixed.
  • For each cookie, scoop a rounded tablespoonful of dough, using a tableware spoon, and push it onto an ungreased cookie sheet with another spoon or rubber spatula, placing cookies 2 inches apart.
  • Bake 9 to 11 minutes or until light brown. Remove cookies from cookie sheets to a cooling rack, using a turner. Cool cookie sheets 10 minutes between batches.

2/3 cup granulated sugar
2/3 cup packed brown sugar
1/2 cup butter or margarine, softened
1/2 cup shortening
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla
1/2 teaspoon baking powder
1/2 teaspoon salt
2 eggs
3 cups quick-cooking or old-fashioned oats
1 cup Gold Medal™ all-purpose flour
1 cup raisins, chopped nuts or semisweet chocolate chips, if desired

Steps:

  • Heat oven to 375°F. In large bowl, beat all ingredients except oats, flour and raisins with electric mixer on medium speed, or mix with spoon. Stir in oats, flour and raisins.
  • On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
  • Bake 9 to 11 minutes or until light brown. Immediately remove from cookie sheet to cooling rack.

While there is no shortage of oatmeal cookie recipes out there, we love these in particular because they strike the perfect balance of crispiness and chewiness. The ratio of ingredients used turns out a cookie that isn't tall and cakey, but instead a little slender and nicely caramelized around the edges.

3/4 cup granulated sugar
1/4 cup firmly packed brown sugar
1/2 cup butter, softened
1/2 teaspoon vanilla
1 egg
3/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups quick-cooking rolled oats
1/2 cup raisins
1/2 cup chopped nuts

Steps:

  • Heat oven to 375°F. Spray cookie sheets with cooking spray. In large bowl, combine granulated sugar, brown sugar and butter; beat until light and fluffy. Add vanilla and egg; blend well. Add flour, baking soda, cinnamon and salt; mix well. Stir in oats, raisins and nuts.
  • Drop dough by rounded teaspoonfuls 2 inches apart onto sprayed cookie sheets.
  • Bake at 375°F. for 7 to 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets.

1 c butter, room temperature
1 c white sugar
1 c brown sugar, firmly packed
2 large eggs, well-beaten
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1 1/2 c all-purpose flour
3 c quick oatmeal
2 c coconut (or you choice of nuts, raisins, date, chocolate chips, etc.)

Steps:

  • 1. Cream together butter, white sugar, and brown sugar in a large bowl.
  • 2. Add beaten eggs and vanilla.
  • 3. In a separate bowl mix together salt, baking soda, flour, oatmeal, and coconut.
  • 4. Add the dry ingredients to the butter mixture and mix until combined.
  • 5. At this time you can fold in the optional nuts, chocolate chips, raisins, or dates.
  • 6. Use a cookie scoop, drop dough onto a baking sheet (making sure not to overcrowd the pan) and bake immediately. Or, form the dough into 2" rolls in plastic and refrigerate until chilled then slice.
  • 7. Bake at 375 for 10-12 minutes.

1 c crisco shortening
1 c brown sugar (dark for a richer cookie)
1 c fine white premium granulated sugar
2 eggs
2 c plain flour
1/2 tsp kosher salt
1 1/8 tsp baking soda
1 tsp baking powder
1 Tbsp water
2 tsp good vanilla flavoring
2 c old fashioned uncooked regular oatmeal
1 c pecan or walnut pieces

Steps:

  • 1. Cream crisco, sugars together. Add eggs. Sift flour with salt, soda and baking powder. Add sifted items to creamed mixture. Add. . .water, vanilla, oatmeal, nuts, and optional chocolate chips. Mix together. Cover and put in refrigerator for 8 to 10 hours. Use ice cream scoop to make medium large cookies (mixture should be cold as the cold keeps cookie from spreading thin during cooking)and place on parchment paper. Bake at 350 degrees for about 15 minutes (depending on size of cookie). Allow to rest on cookie sheet until set and then transfer to cookie rack to stay until completely cooled.
  • 2. Batter can be kept covered in refrigerated and use as much as you need at different times. Also, good to bake all of recipe and put into freezer bags and freeze cooked cookies. But I like to keep batter in fridge and use as I need them - makes house smell wonderful and you have as many freshly baked cookies needed at that time.
