AUNT TEEN'S CREAMY CHOCOLATE FUDGE
This was my aunt's recipe for fudge, passed down through the family. It's better than any fudge I've ever had at the Jersey shore, and easy enough to whip up in 15 minutes or so.

Steps:
- Line an 8x8 inch pan with aluminum foil. Set aside.
- In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
- Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours, or until firm.

JACK DANIEL'S® FUDGE
This recipe makes a small batch of boozy fudge. Satisfy your craving without overindulging. I buy a 7-ounce can of sweetened condensed milk, make this fudge, and have enough leftover to sweeten my coffee for a few days.

Steps:
- Line a 5x7-inch dish with foil, leaving an overhang for easy removal.
- Place chocolate chips in a glass bowl and microwave for 1 minute. Stir and keep microwaving at 15-second intervals, stirring each time until chocolate is melted. Add sweetened condensed milk, whiskey, vanilla, and salt. Stir until all ingredients are incorporated. Stir in pecans.
- Pour fudge into the lined dish and let set, 2 to 3 hours. Lift out of the dish using the foil overhang and cut into 24 squares.

MEXICAN FUDGE
My sister brought this recipe home from her middle school Spanish class for the Day of the Dead - fudge with the traditional Mexican twist of added cinnamon. I did not include cooling in the cooking time.

Steps:
- Preheat electric skillet to 280 degrees F.
- Quickly add first five ingredients.
- Stir constantly until mixture comes to a full boil. Continue to stir while it boils for five minutes.
- Unplug the skillet.
- Add marshmallows, chocolate chips, and vanilla.
- Stir until blended and pour into a greased pie pan.
- Cool before cutting.

AUNTIE ANNE'S PRETZELS - COPYCAT

Steps:
- Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve.
- Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic.
- Let rise at least 1/2 hour.
- While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 tbsp baking soda.
- Be certain to stir often.
- After dough has risen, pinch off bits of dough and roll into a long rope (about 1/2 inch or less thick) and shape.
- Dip pretzel in soda solution and place on greased baking sheet.
- Allow pretzels to rise again.
- Bake in oven at 450 for about 10 minutes or until golden.
- Brush with melted butter.
- Toppings: After you brush with butter try sprinkling with coarse salt.
- Or for Auntie Anne's famous Cinnamon Sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another shallow bowl make a mixture of cinnamon and sugar.
- Dip the pretzel into the butter, coating both sides generously.
- Then dip again into the cinnamon mixture.
- Notes: The longer and thinner you can make the dough rope, the more like Auntie Anne's they will be.
AUNTY ANN'S MILLION DOLLAR FUDGE

- 1. Butter 13x9x2-inch pan. Combine chocolate chips, German chocolate, marshmallow cream and nuts in bowl. Set aside.
- 2. In heavy saucepan combine sugar, salt, butter and evaporated milk. Let stand about 5 minutes. Heat to boiling, stirring constantly. Boil 7 1/2 minutes after it has a good start to boil. Pour at once over chocolate mixture Stir vigorously until chocolate has melted and mixture is smooth and creamy.
- 3. Pour into prepared pan. Let stand several hours or overnight to set. Cut into squares. Store, tightly covered. Freezes well.
MEXICAN FUDGE APPETIZER
I have served this appetizer many times to rave reviews! (one time I never made it out of the kitchen at a party--it was eaten by the kitchen "crew"!) Can be served warm or cold.

- In a large bowl, mix cheeses together.
- Put 1/2 the cheese mixture in a greased 9X9" pan.
- In a different bowl, mix the eggs and salsa together.
- Pour this mixture on top of the cheese in the pan.
- Sprinkle the remaining cheese on top and bake at 350F for 30 minutes.
- Cool and cut into squares to serve.
- Tastes great cold.

- Heat the chocolate and the sweetened condensed milk over medium low heat until the chocolate is melted. Be sure to keep stirring so it melts evenly.
- Add in the vanilla and the other spices. If you are concerned about the spiciness, add only 1/8 a tsp of the cayenne pepper and taste it, adding more slowly.
- After everything is thoroughly combined, immediately pour the fudge into the pan. Allow it at least four hours to set in the refrigerator.
