Steps:
- Flatten chicken to 1/4-in. thickness; sprinkle with salt and pepper. Dip into eggs, then coat with crumbs. In a large skillet, heat butter and oil. Saute chicken and garlic over medium heat, turning chicken once, for 12-15 minutes or until juices run clear. Remove to a serving platter; keep warm. Add broth and lemon juice to skillet; simmer for 2-3 minutes or until volume is reduced by half. Spoon over chicken.

Steps:
- Cook pasta according to package directions; drain.
- Melt 2 Saute Express® squares in 12-inch nonstick skillet over medium-low heat just until bubbles begin to form.
- Add chicken.
- Saute 13-18 minutes or until chicken is golden brown on both sides and done (165 degrees F). Remove from skillet.
- Melt remaining 1 Saute Express® square in skillet. Add onions; cook 1-2 minutes or until softened. Toss in pasta and tomatoes to coat.
- Slice chicken; serve over pasta. Sprinkle with Parmesan cheese.

- In a small bowl, combine the oregano, garlic powder, 1/8 teaspoon salt and 1/8 teaspoon pepper; rub over chicken. In a large nonstick skillet coated with cooking spray, brown chicken in oil for 3-4 minutes on each side. , Transfer to an 11x7-in. baking dish coated with cooking spray. Combine ricotta cheese and remaining salt and pepper; spoon over chicken. Top with tomatoes. , Bake, uncovered, at 350° for 15 minutes. Top with cheese. Steps:
- Heat 2 tablespoons olive oil in a skillet over medium heat and cook onion, stirring often, until soft and translucent, about 5 minutes. Transfer to a pot.
- Combine flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Toss chicken thighs in the flour mixture until evenly coated.
- Heat remaining 2 tablespoons olive oil in the skillet over medium heat, add chicken thighs, and brown on one side, without turning, for 5 minutes. Turn and cook until browned on the other side, about 5 minutes more. Transfer browned chicken thighs to the pot.
- Pour white wine into the skillet; bring to a boil. Stir to loosen all the browned bits of chicken and flavors in the skillet pour into the pot. Add diced tomatoes, tomato paste, and sugar; season with salt and pepper. Add as much chicken stock as needed to cover the chicken. Cover pot and simmer over medium heat, stirring occasionally, until chicken is no longer pink in the center, about 45 minutes.
- Stir in olives, parsley, and basil. Stir to heat through.

AUGIE OLIVER'S ITALIAN SAUSAGE
To stuff the casings, you will need a meat grinder with a sausage horn attachment. If you don't have such a device, use the mixture to make fried patties by shaping 1/4 cup of filling into a 1/2 inch thick patty and frying in hot oil until golden brown on both sides.

- To prepare casings: Let casings soak in cool water about five minutes to remove salt on outer surface (no longer, or they will become too tender to stuff) and flush salt from the inside by placing one end on faucet nozzle and turn on cold tap water (if you see holes or water leaking, cut and discard).
- Remove casing from faucet and gently squeeze out water; cover rinsed casings and refrigerate until ready to use.
- First grind meat coarsely, incorporate seasonings evenly, and re-grind.
- Fill the casings using the sausage horn attachment and make links by twisting the sausage where you wish the links to be. Four inches is a good size for a regular serving, smaller links may be made for appetizer servings.
- To cook, place the sausage in large saucepan or dutch oven in a single layer; add a little water or broth, cover and heat.
- to a low simmer.
- Maintain a low simmer (sausages may burst if cooked at too high a heat) until the sausage is heated through and cooked thoroughly, approximately 15 minutes.
- Drain and let rest for about 15 minutes before slicing; serve while still warm.

AUGIE'S CHICKEN ITALIANO
I was messing around with chicken, stewed Italian tomatoes, mushrooms and chicken broth. I didn't have a recipe and a lot of veggies, so I winged it. My husband liked this so much, he started requesting it a least once a week. I kept adding to the recipe until I finally got what I was looking for. Hope you enjoy it as much as my family and friends do.

- Wash and dry cut up chicken. Add 1/3 cup olive oil to large dutch oven or large frying pan. Over medium heat, lightly brown chicken pieces being careful not to over brown or burn. Lower heat and add Italian Stewed Tomatoes, Tomato Sauce,celery, onions and chicken broth. Lightly season with salt and pepper, add sliced garlic, dried mustard, and bay leaves. Simmer for about 1 hour. If broth cooks down, add either more chicken broth or water keeping in mind that it will obsorb into the rice at the end of the cooking time.
- As chicken becomes tender, add sliced mushrooms to allow them to start cooking. After another 30 minutes, add 1 16 oz bag of Asparagus Stir Fry Veggies. Continue to simmer on low for 15 minutes, add 2 cups of quick cooking rice and continue cooking until rice is to your liking. Serve and enjoy!
- I use a large electric frying pan to make this dish and when I add the rice, I move all the veggies to one end, leave the chicken in the middle and put the rice at the hotter end of the pan. I raise the veggie end of the pan 1/2 inch from counter surface so the broth all ends up with the rice. I then serve it in the pan.
- All stoves and pans are different, so my times might not be exact for you. After you make this dish a time or two, it will become automatic to judge when to put in the different ingredients. We don't usually have any other vegetables or salads with this meal. Add some good bread and your meal is complete.
