CREAMY AU GRATIN POTATOES
This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

- Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours in the preheated oven.

- Preheat the oven to 350F and spray a baking dish with cooking oil spray or olive oil.
- Add sliced potatoes and season with salt and pepper. Drizzle 2 tbsp oil and toss well to coat. Place in the preheated oven and bake for 15 minutes, or until potatoes begin to soften and the sauce is ready.
- Meanwhile, heat a rimmed pan over medium heat and drizzle with 1 tbsp oil. Sauté the onion and garlic for 2-3 minutes, or until it softens.
- Stir in the mustard and flour. Slowly pour the milk and whisk until sauce is thickened and smooth, 2-3 minutes.
- Season with salt, pepper, and nutmeg.
- Remove the potatoes from the oven and pour over the sauce, stirring gently to mostly cover and coat.
- Top with shredded cheese. (You can now cool and refrigerate the dish for make-ahead.)
- Return to the oven and bake for 60 minutes, or until potatoes are super tender, bubbly, and golden-brown on top. (Cooking time may vary depending on the size of the thickness of your potato slices.)
- Garnish with fresh thyme before serving.

- 1. Peel the potatoes and onions. Slice both potatoes and onions in half lengthwise and slice thinly, you want the slices to look like half moons.
- 2. Put the potatoes and onions in a sauce pan, cover with cold water, and cook until fork tender. You don't want the potatoes mushy, after all you are going to bake them too.
- 3. Pour potatoes and onions into a drainer.
- 4. Meanwhile while the potatoes and onions cook make your sauce.
- 5. Melt the butter, and stir in the flour with a spatula. A spatula for a cream sauce makes a lot of sense and is more efficient than a spoon. Continue stiring to make a paste, let cook a minute to cook out the flour taste. Add the salt, pepper, and mustard.
- 6. Stir in the milk a little at a time. stirring to make smooth. Continue to cook until the sauce starts to bubble and thicken. Watch it keep stirring, and don't walk away. Congradulations beginner!!!! You have just made a white sauce, one of the mother sauces. You will never know how thick your sauce is until it comes to a boil.
- 7. Now stir in the cheese, take off heat and continue to stir until the cheese melts. Now you have a cheese sauce. This is also the sauce for mac and cheese
- 8. Spray a 8x8 inch casserole or gratin dish. Put half your potatoes in, cover with half the cheese sauce, put in the rest of the potatoes and pour the rest of the sauce over.
- 9. Sprinkle with paprika, just for color.
- 10. Bake in a pre heated 350° oven for 45 minutes or until bubbly and browned

- Preheat the oven to 375 degrees F. Spray a 2 quart square baking dish (or an 8x12 is good) with nonstick cooking spray or grease with butter or oil.
- Place sliced potatoes in three tight slanted rows as indicated in the photos. You don't want them to be overly tight, make sure you leave enough space so the potato slices are slightly slanted. Add in onion slices in between the rows and on top of potatoes. Basically wherever you can fit them.
- Next make your sauce: add in 2 tablespoons of butter and place over medium heat. Once butter is melted, whisk in a little bit of the flour and then slowly add in milk, a little bit at a time, alternating with the flour and vigorously whisking away any lumps. Bring mixture to a simmer; it should be a similar consistency to creamy gravy.
- Turn heat to low and stir in shredded cheddar cheese, garlic powder, salt and pepper. Taste and add more salt and pepper, if necessary.
- Pour the sauce evenly over the potatoes and onions to cover them. Don't worry, the sauce will get nice and creamy while baking.
- Cover the pan with foil, then bake for 45 minutes.
- After 45 minutes, remove foil, sprinkle top of potatoes with 1/2 cup shredded gruyere (or more cheddar) and ¼ cup parmesan. Return to the oven and bake for 30-45 more minutes or until potatoes are done and nice and golden brown on top. (Potatoes are done when the middle of the potatoes can be easily pierced with a fork.) Remove from the oven and garnish with fresh chopped parsley. Enjoy!

- Cut potatoes in half lengthwise and slice 1/8" thick. Keep slices in cold water until all are ready to parboil. (It will keep them from darkening) You will need enough to fill a 13x9x2 pan to within 1/2" from the top.
- Parboil potato slices until halfway cooked. Pour into colander to drain.
- Preheat oven to 350 degrees.
- Melt the butter in a medium saucepan. Lightly saute' the onions to flavor the butter. Add the cheddar cheese soup and pepper and stir to mix thoroughly. Stir in milk to thin the sauce a bit.
- Place potato slices in a large bowl, and pour sauce over them. Gently fold the sauce and potato slices together.
- Spread evenly in a greased or sprayed 13x9x2 pan and bake at 350 degrees for 40 minutes or until the top potatoes begin to brown around the edges.
- If you like, you can top these with bread crumbs or shredded cheese before baking. I occasionally throw in a cup or so of 1/2" ham cubes for extra flavor.

This is a very easy way to make creamy, cheesy potatoes. I used a wide baking dish. If using a taller narrower dish make 3 layers. You can vary the cheese. Last night I used a mixture of cheddar and mexican because I had a little of each left.
