Mix dry seasonings. Cook onions and pepper and butter with 3 T of dry seasonings in frying pan over high heat until brown. Use this to stuff the chicken.
One T. seasoning - rub onto chicken well. Put chicken in lg. baking pan. Bake 3 hours at 250 degrees.
Gravy: Use juice from chicken and stuffing. Put in sauce pan on high heat. Mix with flour. Mix with wisk and then add chicken stock.
Serve over mashed potatoes
