Steps:
- In a large cast-iron or other heavy skillet, heat oil over medium-high heat. Add mushrooms; cook, stirring occasionally, until lightly browned, 4-6 minutes. Add asparagus, garlic, oregano, salt and pepper; cook and stir until crisp-tender, 2-4 minutes. Stir in kale; cook and stir until wilted, 2-4 minutes. Remove from heat; stir in fish sauce and vinegar. If desired, top with sesame seeds.

Steps:
- Heat a wok or large, deep skillet over high heat.
- Add oil, making sure bottom of pan is completely oiled.
- Add garlic and minced chile, toss until garlic begins to turn golden; about 15 seconds.
- Add the asparagus; stir-fry until coated with oil, about 15 seconds.
- Add the soy sauces, sugar, basil, and 1 T water; stir-fry until basil starts to wilt.
- Serve hot.
- Garnish with sliced chiles.
- For Vegetarian do not use the fish sauce, use the soy sauce.

- Cook asparagus in a large pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Transfer to bowl of ice water and cool. Drain and pat dry.
- Stir sesame seeds in a heavy small skillet over low heat until light brown, about 3 minutes; transfer to a small bowl.
- Whisk vinegar, mustard, soy sauce, ginger, orange peel and garlic in another small bowl. Gradually whisk in both oils. Season vinaigrette to taste with salt and pepper.
- Arrange asparagus on plates. Spoon vinaigrette over. Sprinkle with sesame seeds.

- Break off tough ends of asparagus.
- Bring large skillet of water to boil. Add asparagus and cook for 3 - 4 minutes or until it is bright green and stalks bend slightly.
- Drain well and place on serving dish. (If serving chilled -- run asparagus under cold water to stop the cooking process and pat dry before combining with the sauce).
- In a small bowl, whisk together lime juice, sugar, fish sauce, water, vinegar and chili paste. Drizzle over asparagus or use as dipping sauce.

THAI SHRIMP AND ASPARAGUS
This is an incredibly quick and easy recipe, perfect for busy weekday meals. I found this in the Chicago Sun-Times and it stated that it serves 2 but I have to double it for my husband and myself. I use Thai Kitchen Sweet Red Chile sauce.

Steps:
- Pour the chile sauce and broth into a medium-size skillet and bring to a simmer over medium-high heat. Add the shrimp, reduce the heat to medium and cook, turning the shrimp, until they turn pink and opaque and are cooked through and the sauce thickens somewhat, about 3-4 minutes.
- Add water to a large skillet to a depth of about 1 inch and bring to a boil over medium-high heat. Rinse the asparagus spears and snap off and discard their tough ends. Add the asparagus to the boiling water, reduce heat and simmer until the spears turn bright green, about 3 minutes. Drain the asparagus and cut them into 1 1/2-inch pieces, then add the soy sauce to them.
- Spoon the shrimp onto plates; garnish the shrimp with asparagus, cilantro and sesame seeds.
- I serve this with steamed jasmine rice.
ROASTED ASPARAGUS WITH MISO DRESSING
Miso has a rich taste, which is perfect for asparagus. This recipe has a nice Asian flavor and I like to serve this especially with teriyaki steak or salmon, and a crisp green salad.

- Preheat oven to 375F.
- Bend asparagus gently and allow to snap where they naturally break; discard end pieces.
- Lay asparagus on a roasting pan, and drizzle with oil and lightly sprinkle with salt.
- Roast for 20 minutes or until they are cooked through but not soft, shaking the pan mid-way through cooking.
- Remove from oven and allow to cool.
- Whisk together the rice vinegar, miso, water, sesame oil, and sugar, until sugar is dissolved and everything is thoroughly combined.
- Drizzle dressing over cool asparagus and allow to"marinate" at room temperature for 15-20 minutes before serving.
ROASTED ASPARAGUS SALAD WITH TANGERINE DRESSING
Steps:
- Preheat oven to 450°F. Place asparagus in medium bowl. Pour enough cold water over asparagus to cover; let stand 15 minutes. Drain. Spread asparagus in 13 x 9 x 2-inch baking pan; drizzle with oil. Roast asparagus until crisp-tender, turning occasionally, about 10 minutes. Transfer asparagus to platter; cool.
- Using sharp knife, cut peel and white pith from tangerines. Cut between membranes to release segments. Arrange tangerine segments atop asparagus. Whisk tangerine juice, vinegar, sesame oil, peel, garlic and ginger in small bowl to blend. Season dressing to taste with salt and pepper. Drizzle over asparagus. Sprinkle with green onion tops and peanuts and serve.
