¼ cup butter
3 ounces thinly sliced prosciutto, chopped
2 cloves garlic, minced
½ cup pine nuts
⅓ cup fresh lemon juice
2 pounds fresh asparagus, trimmed
salt and pepper to taste

Steps:

  • Melt butter in a skillet over medium heat; cook and stir the prosciutto, garlic, and pine nuts in the melted butter until the garlic is fragrant and the nuts begin to turn brown, about 2 minutes. Stir in the lemon juice.
  • Bring a pot filled with lightly salted water to boil. Gently boil the asparagus until the bright green and barely tender, about 3 minutes; drain. Add the asparagus to the prosciutto mixture and toss to mix evenly. Season with salt and pepper; serve hot.

  • Preheat oven to 400°. Place the asparagus, tomatoes and pine nuts on a foil-lined 15x10x1-in. baking pan. 1 cup balsamic vinegar
1/2 cup pine nuts (toasted)
1/2 cup shaved parmesan cheese

Steps:

  • Preheat oven to 425 degrees.
  • Break off the woody ends of the asparagus and place in a large bowl.
  • Toss the asparagus with the olive oil to coat.
  • Spread the asparagus on a baking sheet in a single layer. Sprinkle with salt and pepper
  • Roast in the oven for 10 minutes or until tender.
  • While the asparagus is roasting, pour the balsamic vinegar in a small saucepan and bring to a boil over medium-high heat.

⅓ cup dried cranberries
1 pinch salt

Steps:

  • Break off or trim the woody ends from the asparagus and discard. Set the spears aside.
  • Heat the olive oil in a skillet over medium heat. Stir in the pine nuts, cranberries, and salt. Cook and stir until the pine nuts start to look translucent, 5 to 6 minutes. Add the asparagus spears and cook, adding a little more olive oil if needed, until stalks are bright green and tender, about 5 to 8 minutes.   • Asparagus is one of my favorite spring time vegetables. And while it is available all year long, flown in from far away points, in the spring, when local and fresh, it’s crazy good. I know that asparagus brings some challenges with wine pairings, but as a food pairing it’s near the top of the list. It goes great with seafood, chicken, pork and beef, and it’s great prepared simply or with some extras. In this recipe video, I use a few of those “extras” to jazz the asparagus up a bit. Bacon is a naturally combination (you may have seen prosciutto wrapped asparagus spears); and the pine nuts add a texture and nutty quality that I love. Hope you enjoy it. Recipe Overview & Keys to Success There isn’t much to this recipe, just be careful of the following:
  • Don’t overcook the asparagus. It becomes soggy and limp, and even a bit bitter/sulfuric tasting when overdone. Try blanching the spears so that you get them just tender Make sure you crisp up the bacon on it’s own. Making bacon lardons is easy, but they need to be cooked alone in the pan – once you add the asparagus the moisture will start making them soggy; so add them at just the last month I like to toast the pine nuts. Toasting them gives them a richer flavor, and crispier texture Make sure you season properly – after tasting. Remember the bacon is salty so factor that into your final seasoning
