- Preheat oven to 425 degrees.
- Break off the woody ends of the asparagus and place in a large bowl.
- Toss the asparagus with the olive oil to coat.
- Spread the asparagus on a baking sheet in a single layer. Sprinkle with salt and pepper
- Roast in the oven for 10 minutes or until tender.
- While the asparagus is roasting, pour the balsamic vinegar in a small saucepan and bring to a boil over medium-high heat.

- Heat the olive oil in a skillet over medium heat. Stir in the pine nuts, cranberries, and salt. Cook and stir until the pine nuts start to look translucent, 5 to 6 minutes. Add the asparagus spears and cook, adding a little more olive oil if needed, until stalks are bright green and tender, about 5 to 8 minutes. Try blanching the spears so that you get them just tender Make sure you crisp up the bacon on it’s own. Making bacon lardons is easy, but they need to be cooked alone in the pan – once you add the asparagus the moisture will start making them soggy; so add them at just the last month I like to toast the pine nuts.
