I've eaten antipasti like this all over Italy. Sometimes celery is substituted for asparagus, but there's no need at this time of year. Both thick and thin stems will work.

Steps:
- Steam the asparagus for three to five minutes, depending on how thick the stalks are. It should be tender but still have some bite. Rinse with cold water, and drain for a minute on a kitchen towel. Cut into 1-inch lengths. Place in a salad bowl, and toss with the mushrooms, herbs and arugula.
- Whisk together the lemon juice, salt and pepper, garlic and olive oil. Toss with the asparagus mixture and the slivered Parmesan, and serve.

- For the Vegetable Saute: Warm the oil in a large skillet over medium-high heat. Add the shallot and the garlic and cook until tender, about 2 minutes. Add the mushrooms and asparagus to the pan and cook until tender. Add the artichoke hearts and season with salt and pepper, then cook until the artichoke hearts are heated through. Remove the skillet from the heat, then add in the tomatoes and stir to warm them up.
- For the Tarragon Vinaigrette: Combine the oil, vinegar, tarragon, salt and pepper in a glass screw-top jar. Seal the jar and shake vigorously to mix the vinaigrette.
- Toss the vegetables with the vinaigrette and serve.

- Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source.
- Toss the asparagus with 4 teaspoons olive oil, salt, and pepper. Spread out onto the prepared baking sheet, and broil in the preheated oven until the asparagus spears are just tender and begin to turn lightly brown, about 8 minutes. Turn the spears over halfway through cooking.
- While the spears are cooking, prepare the dressing by whisking together the lemon juice, shallot, tarragon, mustard, and olive oil in a small bowl; season to taste with salt and pepper. Once the asparagus is done, place it onto a serving platter and pour the dressing overtop.

- Put morels, porcinis or both in a bowl with very hot water to cover; soak until soft, about 20 minutes. Drain morels and reserve soaking liquid. Cut morels in half; if porcinis are large, chop them roughly.
- Melt butter in a large skillet over medium-high heat; when butter is hot and foam has subsided, add shallots and reconstituted and fresh mushrooms to pan. Cook until shallots soften and fresh mushrooms have released their liquid and it has cooked off, about 10 minutes.

- If using dried morels, place in 2-cup measuring cup and pour enough hot water over to reach 2-cup mark. Let soak until soft, pushing down occasionally if morels rise to top, about 20 minutes. Drain, reserving soaking liquid; add enough water to measure 1 1/4 cups if needed. Cut large morels in half.
- Melt butter in heavy large skillet over medium-high heat. Add shallots and fresh or reconstituted morels; sauté until shallots are tender, about 6 minutes. Add asparagus and 1 1/4 cups broth (if using fresh morels) or reserved soaking liquid (if using dried morels). Bring to boil, cover, and cook 2 minutes. - Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta and return to pot. ASPARAGUS WITH MUSHROOMS AND TARRAGON
This recipe is so simple, healthy, and yummy! It is based on one I found in Gourmet Magazine (May 2007). They recommend using morel mushrooms, but the recipe works just as well with any kind of mushroom. If you don't have tarragon, you can use fresh basil instead. If you can find the white asparagus, you can use 1 pound of the white asparagus and one of the green for a lovely presentation. If you do use the white asparagus, cook it for a little longer (about 5 minutes) in a separate pot.

- Cook asparagus separately in a 5- to 6-quart pot of boiling salted water, uncovered, until just tender, about 3 minutes.

- Trim the tough ends from the asparagus, reserving the ends for flavoring the broth. Cut the asparagus spears in 1-inch pieces. Cut off 1 thin slice from the tip of each mushroom stem, and reserve the slices to flavor the broth.
- To make the broth, combine the asparagus ends, mushroom stem slices, tarragon and parsley stems in a saucepan. Add the water, cover and bring to a boil. Cover and cook over low heat until the broth is aromatic and delicately flavored and the asparagus ends are tender when pierced with a knife, about 30 minutes. Strain and discard the vegetable and herb trimmings.

Remove the asparagus with a slotted spoon, rinse briefly with cold water and drain. Pour the broth into a measuring cup and add water if necessary to make 2 cups. Dry the pan.
- Heat 1 tablespoon oil and 1 tablespoon butter in the saucepan over medium heat. Add two-thirds cup chopped onion and cook, stirring occasionally, until softened, about 4 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the bulgur and cook, stirring, for 2 minutes. Add the hot asparagus broth, standing back to avoid any steam. Add one-half teaspoon salt and a pinch of pepper. Stir and bring to a boil. Reduce the heat to low, cover and cook without stirring until the broth is absorbed and the bulgur is tender, about 15 minutes. Add the red pepper and mix in lightly. Cover the bulgur and set aside for 5 to 10 minutes.
