ROASTED ASPARAGUS WITH HOLLANDAISE

Roasted Asparagus with Hollandaise image

Provided by Food Network Kitchen

Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 9

1 pound medium asparagus
1 tablespoon extra-virgin olive oil
1/4 teaspoon kosher salt
Freshly ground black pepper
1 large egg yolk
1 1/2 teaspoons freshly squeezed lemon juice
Pinch cayenne pepper
4 tablespoons unsalted butter (1/2 stick)
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 450 degrees F.
  • Trim the woody ends from the asparagus. Spread the spears in a single layer in a shallow roasting pan baking sheet, drizzle with olive oil, sprinkle with salt, and roll to coat thoroughly. Roast the asparagus until lightly browned and tender, about 10 minutes, giving the pan a good shake about halfway through.
  • Meanwhile, put the egg yolk, lemon juice, and cayenne in a blender. Pulse a couple times to combine.
  • Put the butter in a small microwave proof bowl and heat in a microwave until just melted. With the blender running, gradually add the melted butter into the egg to make a smooth frothy sauce. If the sauce is really thick blend in a teaspoon of lukewarm water to loosen it up. Season with the salt and serve immediately or keep warm in a small heat-proof bowl set over hot (but not simmering) water until ready to serve.
  • Spread the roasted asparagus on a serving platter. Grind a generous amount of pepper over the top.

CREAMY ASPARAGUS & SALMON PASTA

Creamy Asparagus & Salmon Pasta image

Leftover salmon gets a recipe remake with bowtie pasta, fresh asparagus, and dill in this super simple Parmesan cream sauce that makes meal prep a breeze.

Provided by Heidi

Categories     Main Course

Time 22m

Number Of Ingredients 8

1 pound dried bow tie pasta (, or farfalle)
2 cups chopped asparagus spears (, cut into 1-inch pieces)
2 cups heavy cream
2 Meyer lemons (, zested (use 2-3 regular lemons if you can't find Meyer lemons))
½ cup freshly grated Parmesan cheese
1/8 cup fresh dill (, chopped, plus more for serving)
2 cups flaked, cooked salmon
kosher salt and freshly ground pepper

Steps:

  • Bring a large pot of water to boil and cook the bow tie pasta according to package directions until al denté.
  • When noodles are done cooking, use a slotted spoon to transfer the pasta to a colander, reserving the pasta cooking water in the pot. Reheat the pot of water over medium heat and add the chopped asparagus spears, cooking until they turn bright green, about 1-2 minutes, then transfer to the same colander as the pasta. You want the asparagus to still have a snap to but not taste raw.
  • While the pasta and asparagus are cooking, pour the cream into a 12-inch skillet and bring to a boil, then reduce to simmer and cook until reduced by half and the cream easily coats the back of a spoon.
  • Add the lemon zest, Parmesan cheese, fresh dill and cooked salmon to the cream and stir until the Parmesan is melted into the cream and the salmon is warmed through. Season with kosher salt and freshly ground pepper.
  • Add the cooked bow tie pasta to the skillet and toss to coat. Add more salt and pepper if desired, and top with more Parmesan cheese and dill if desired. Serve immediately.

Roasted Salmon & Asparagus with Dill-Mustard Sauce image

The classic pairing of dill and roasted salmon gets an upgrade with a tangy mustard-caper sauce.

Provided by Hilary Meyer

Categories     Healthy Salmon Fillet Recipes

Time 45m

Number Of Ingredients 11

12 ounces baby potatoes, halved
4 tablespoons olive oil, divided
¾ teaspoon salt, divided
½ teaspoon ground pepper, divided
1 bunch asparagus (about 1 lb.), trimmed
1 ¼ pounds salmon fillet, skin removed, cut into 4 portions
4 sprigs fresh dill plus 1/4 cup chopped, divided, plus more for garnish
1 whole lemon, sliced, plus 2 Tbsp. lemon juice, divided
1 large shallot, finely chopped
3 tablespoons Dijon mustard
1 tablespoon capers, rinsed

Steps:

  • Preheat oven to 425 degrees F.
  • Combine potatoes, 1 Tbsp. oil, and 1/4 tsp. each salt and pepper in a medium bowl; stir until evenly coated. Spread on a large rimmed baking sheet. Roast for 10 minutes.
  • Meanwhile, toss asparagus with 1 Tbsp. oil and 1/4 tsp. salt in the medium bowl. After the potatoes have roasted for 10 minutes, remove from oven. Stir the potatoes and add the asparagus in an even layer. Nestle salmon pieces among the vegetables. Sprinkle the salmon with the remaining 1/4 tsp. salt and top with dill sprigs and lemon slices.
  • Continue roasting until the vegetables are tender and beginning to brown and the salmon flakes easily with a fork, about 10 minutes more.
  • Meanwhile, heat the remaining 2 Tbsp. oil in a small skillet over medium heat. Add shallot and cook, stirring, until just beginning to brown, about 3 minutes. Whisk in mustard, capers, lemon juice, and the remaining 1/4 tsp. pepper; heat through. Stir in chopped dill.
  • Discard the lemon slices and dill sprigs. Serve the salmon and vegetables with the dill sauce and garnish with additional fresh dill, if desired.

  • In the meantime, wash the asparagus, remove the lower, woody ends and peel the stalks with a vegetable peeler, starting underneath the head of the asparagus. In case of using green asparagus, remove the lower ends, there is no need to peel.
  • Add the salt, 1 tablespoon butter, and sugar to the boiling water. Place the asparagus in the pot, cover, and lower the heat. Cook the white asparagus for about 16 to 20 minutes, depending on thickness and personal taste (I cooked mine for 16 minutes, I like it to still have a bit of a bite) and the green asparagus for about 10 minutes, but it really depends on its size. Thin asparagus won't need that long.
  • Remove the asparagus from the water and let drain very well. Place it on kitchen towels to make sure the water is absorbed thoroughly.

  • Make the hollandaise sauce: Boil a few inches of water in a medium saucepan. Turn off the heat and place a metal bowl large enough to cover the saucepan on top, making sure the bottom of the bowl does not touch the water directly. Add the egg yolks and 2 tablespoons of water to the bowl and whisk continuously until the mixture becomes light and frothy. Continue whisking until the mixture thickens and forms a ribbon when you lift the whisk, about 5 minutes.
  • Add the melted butter, a little at a time, to the egg mixture, whisking continuously, until you've incorporated all the butter. Add the lemon juice, a pinch each of salt and pepper, and the dill. Keep the hollandaise barely warm over the hot water. (Makes 1 1/2 cups sauce.)
  • Alternatively, you can make the hollandaise in a blender. Place the egg yolks, lemon juice, pinch of salt and white pepper in a blender. Add 2 tablespoons boiling water and blend for a few seconds. Melt the butter until it just starts to boil. Take the butter off the heat, turn the blender back on and add the hot butter in a slow, steady stream until combined. Pour into a bowl and stir in the dill.
  • In a large skillet over high heat, heat the olive oil until quite hot. Toss in the asparagus and a pinch of salt and cook, flipping the spears of asparagus so that they sear evenly. Continue cooking over high heat, until the spears roast and begin to caramelize but haven't lost their vibrant color or some of their crunch, about 5 minutes. Remove from the heat and place on a serving platter; serve with a bowl of the hollandaise sauce.
