- In a large skillet, bring water and salt to a boil; add the asparagus. Cover and cook over medium heat until crisp-tender, about 6-8 minutes; drain. Transfer to a serving platter and keep warm. - Preheat oven to 450 degrees F.
- Trim the woody ends from the asparagus. Spread the spears in a single layer in a shallow roasting pan baking sheet, drizzle with olive oil, sprinkle with salt, and roll to coat thoroughly. Roast the asparagus until lightly browned and tender, about 10 minutes, giving the pan a good shake about halfway through.
- Meanwhile, put the egg yolk, lemon juice, and cayenne in a blender. Pulse a couple times to combine.
- Put the butter in a small microwave proof bowl and heat in a microwave until just melted. With the blender running, gradually add the melted butter into the egg to make a smooth frothy sauce. If the sauce is really thick blend in a teaspoon of lukewarm water to loosen it up. Season with the salt and serve immediately or keep warm in a small heat-proof bowl set over hot (but not simmering) water until ready to serve.
- Spread the roasted asparagus on a serving platter. Grind a generous amount of pepper over the top.

- Bring a large pot of water to boil and cook the bow tie pasta according to package directions until al denté.
- When noodles are done cooking, use a slotted spoon to transfer the pasta to a colander, reserving the pasta cooking water in the pot. Reheat the pot of water over medium heat and add the chopped asparagus spears, cooking until they turn bright green, about 1-2 minutes, then transfer to the same colander as the pasta. You want the asparagus to still have a snap to but not taste raw.
- While the pasta and asparagus are cooking, pour the cream into a 12-inch skillet and bring to a boil, then reduce to simmer and cook until reduced by half and the cream easily coats the back of a spoon.

- Combine potatoes, 1 Tbsp. oil, and 1/4 tsp. each salt and pepper in a medium bowl; stir until evenly coated. Spread on a large rimmed baking sheet. Roast for 10 minutes.

- Bring a large pot of lightly salted water to a boil.
- Add the pasta and boil vigorously for the time recommended on the pasta package or until the pasta is tender.
- Meanwhile, heat the tablespoon of oil and the butter in a medium skillet until the butter melts.
- Add the shallots and cook until softened, about 2 minutes.
- Add the asparagus and cook until it loses its raw look, about 2 minutes.
- Add 1 cup of the pasta water, raise the heat to medium-high, and boil until the aspargus turns bright green, about 2 minutes.
- Add the garlic, dill and shrimp.
- Remove from the heat and stir in the additional olive oil, salt and pepper.

- Make the hollandaise sauce: Boil a few inches of water in a medium saucepan. Turn off the heat and place a metal bowl large enough to cover the saucepan on top, making sure the bottom of the bowl does not touch the water directly. Add the egg yolks and 2 tablespoons of water to the bowl and whisk continuously until the mixture becomes light and frothy. - In a large skillet over high heat, heat the olive oil until quite hot. Toss in the asparagus and a pinch of salt and cook, flipping the spears of asparagus so that they sear evenly. Continue cooking over high heat, until the spears roast and begin to caramelize but haven't lost their vibrant color or some of their crunch, about 5 minutes. Remove from the heat and place on a serving platter; serve with a bowl of the hollandaise sauce.
