4 (7 ounce) double boneless skinless chicken breasts
kosher salt
fresh ground black pepper
8 slices deli ham, thin
16 slices gruyere or 16 slices swiss cheese, thin
2 teaspoons fresh thyme leaves
1/4 cup flour
2 cups panko breadcrumbs
1 teaspoon olive oil
3 eggs
2 teaspoons water

Steps:

  • Preheat oven to 350 degrees F.
  • Lay the chicken between 2 pieces of plastic wrap.
  • Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness.
  • Take care not to pound too hard because the meat may tear or create holes.
  • Lay 2 slices of cheese on each breast, followed by 2 slices of ham, and 2 more of cheese; leaving a 1/2-inch margin on all sides to help seal the roll.
  • Tuck in the sides of the breast and roll up tight like a jellyroll.
  • Squeeze the log gently to seal.
  • Season the flour with salt and pepper; spread out on waxed paper or in a flat dish.
  • Mix the breadcrumbs with thyme, kosher salt, pepper, and oil.
  • The oil will help the crust brown.
  • Beat together the eggs and water, the mixture should be fluid.
  • Lightly dust the chicken with flour, then dip in the egg mixture.
  • Gently coat in the bread crumbs.
  • Carefully transfer the roulades to a baking pan and bake for 20 minutes until browned and cooked through.
  • Cut into pinwheels before serving.

5 thick asparagus spears, chopped
1 teaspoon minced garlic
2 tablespoons nonfat sour cream
1 teaspoon oregano
1 pinch dried rosemary

2 wooden skewers

Steps:

  • Boil asparagus until very tender, about 8-10 minutes.
  • Drain asparagus and mash.
  • Add in garlic, sour cream, oregano, and rosemary; mash well.
  • Spoon mixture into the centre of the chicken.
  • Roll the chicken around the stuffing, securing with skewers.
  • Season both sides of chicken with Italian seasoning.

6 boneless skinless chicken breasts
1/4 cup breadcrumbs
1/4 cup parmesan cheese
1 tablespoon olive oil
salt, to taste
pepper, to taste
3/4 cup diced deli ham
3/4 cup shredded swiss cheese

Steps:

  • Preheat oven to 400°F.
  • Place a chicken breast between two pieces of plastic wrap and pound flat and thin without breaking through the meat (Ideally this would make a 1/8 inch thick rectangle).
  • Remove plastic wrap, season with salt and pepper, repeat with remaining breasts.
  • Mix diced ham and shredded cheese together in a bowl, spoon 2-3 tbsp of mixture onto each flattened breast.
  • Fold in the bottom and sides and roll up (this is often difficult to do depending on how the breast flattens out, so I just fold them over and stick lots of tooth picks in them to keep them closed).
  • Combine bread crumbs and parmesan cheese, brush each roll with olive oil and roll in crumb mixture to coat.
  • Place rolls, seam side down, in a shallow baking dish and bake uncovered for 25 minutes (or until chicken is thoroughly cooked).
  • Remove toothpicks before serving!

1 tablespoon Dijon mustard
4 fresh sage leaves
2 slices provolone cheese (1 ounce each)

1 egg, lightly beaten
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1-1/2 teaspoons butter
1-1/2 teaspoons olive oil

Steps:

  • In a large skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry., Flatten chicken to 1/4-in. thickness. Spread mustard over one side of each chicken breast. Down the center of each, place two sage leaves, a cheese slice, ham slice and four asparagus spears. This classic French chicken dish, adapted from Jane and Michael Stern's book "American Gourmet," more than lives up to its name ("cordon bleu" means "blue ribbon"). It's also far easier to make than you may think. A chicken breast is pounded thin (we've been known to cheat by using pretrimmed cutlets), then wrapped around a slice of smoked ham and a bit of Swiss cheese, and secured with toothpicks. The roulade is coated in egg and bread crumbs, then pan-fried until golden brown, and a simple white wine cream sauce finishes it off.

4 large boneless and skinless chicken breast halves (about 1 1/2 pounds)
4 thin slices smoked ham
2 ounces Swiss cheese, cut into 4 equal "fingers"
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 large egg, beaten
3/4 cup fresh bread crumbs
1/4 cup unsalted butter
3/4 cup plus 2 tablespoons chicken stock
3/4 cup white wine, heavy cream or additional chicken stock

Steps:

  • Lay the chicken breasts between pieces of wax paper and use a mallet to pound them to 1/4 inch to 1/8 inch thick. Take care not to pound holes in the chicken. Layer each breast with the ham, then place a finger of cheese in the center. Roll up to completely enclose the ham and cheese and secure with toothpicks.
  • In a medium bowl, combine the flour, salt and pepper. Lightly dredge the chicken in the seasoned flour, then dip in the egg and coat with bread crumbs. Place on a baking sheet and chill at least 15 minutes and up to 4 hours.
  • In a large skillet over medium heat, heat the butter. Add the chicken and cook, turning carefully with tongs, until browned, about 8 to 10 minutes. Add 1/2 cup of the stock to the skillet, reduce the heat to medium-low, cover and simmer until the chicken is cooked through, 10 to 15 minutes. Move the chicken to a warm platter.
  • Add the remaining 2 tablespoons of stock to the skillet, raise the heat to high, and cook, stirring up browned bits clinging to the bottom, for 1 minute. Add the wine (or heavy cream or additional stock), lower the heat and simmer, uncovered, until the consistency of gravy, about 45 seconds. Pour over the chicken breasts and serve.

4 boneless skinless chicken breasts
2 garlic cloves, minced
12 asparagus spears
1 teaspoon olive oil
1/2 cup dry white wine (can be non-alcoholic)
1 (10 ounce) can chicken broth
3 egg yolks
2 teaspoons lemon juice
1/2 teaspoon dry mustard
1 teaspoon Tabasco sauce
1/2 cup butter, melted
1/2 cup 1% low-fat milk

Steps:

  • Asparagus Stuffed Chicken: Smear 1/2 teaspoon garlic on rough side of each chicken breast.
  • Lay 3 spears of asparagus on top of garlic, roll the breast around the asparagus and secure with toothpicks.
  • Heat oil in a large flat frying pan at medium-high heat. Brown all sides of the rolled chicken.
  • Add wine and chicken broth to pan after all the breasts have browned. Let simmer at medium heat, turning once, until liquid evaporates. Remove toothpicks!
  • Hollandaise: Beat egg yolks with a whisk in a small stove top pot (no heat yet). Add lemon juice, dry mustard and Tabasco to yolks. Whisk together to combine.
  • Melt butter until liquid, about 10 seconds. Very slowly drizzle the butter into egg yolks while whisking. Now place on medium-low heat.
  • Slowly whisk in milk until smooth. Heat through while whisking. Remove from heat. Add a little more milk if you want it thinner.
  • Serve chicken with Hollandaise sauce drizzled over top.

  • Prepare the four chicken breasts by rinsing them, trimming any fat and then slicing lengthwise to create 8 uniform chicken fillets. Place two breasts in a gallon size ziploc bag and use a meat mallet to pound them to a uniform thickness of approximately 1/4".
  • Place a slice of ham on the chicken and then a slice of cheese over the ham. Roll the chicken to create bundles and then secure with toothpicks or kitchen twine. Mix the flour, paprika, salt and pepper in a small bowl and then use the flour mixture to coat the chicken bundles on all sides.
  • Preheat the oven to 350. While the oven is heating, heat half the butter in a large skillet over medium high heat. Cook four chicken bundles at a time, turning as needed, until the chicken is browned on all sides. Remove browned chicken to an oven-proof baking dish and set aside.
