Asparagus, mint & lemon risotto image

This is such a simple, clean and delicious risotto. When buying asparagus, have a look around because there are lots of varieties available now - purple-tipped, white, thin straggly Japanese, wild Spanish and dozens of good locally grown English. In this recipe, the stalks are finely sliced to an inch below the tips - this will give you lots of flavour from the stalks and you'll then have those whole beautiful tips as a bit of a prize! There are variations on this risotto that I love to do, like sprinkling in a little picked crab or lobster meat or fresh, peeled prawns or sliced scallops - all of these work particularly well with asparagus if you fancy a little upgrade. (If you do decide to add any of these seafood suggestions, then reduce your Parmesan by half.)

RISOTTO BASE
1 litre organic vegetable or chicken stock
2 tablespoons olive oil
1 large onion, peeled and finely chopped
4-5 sticks celery, trimmed and finely chopped
600 g risotto rice
250 ml vermouth or dry white wine
RISOTTO
2 bunches asparagus, woody ends removed and discarded
700 ml organic vegetable or chicken stock
50 g butter
1 small handful Parmesan cheese, freshly grated, plus a block for grating
1 bunch fresh mint, leaves picked and finely chopped
2 lemons, zest and juice of
sea salt
freshly ground black pepper
extra virgin olive oil

Steps:

  • Finely chop your asparagus stalks into tiny discs, keeping the tips whole. Then start making your basic risotto recipe.
  • Stage 1:
  • Bring the stock to a simmer in a saucepan. Put the olive oil in a separate large pan, add the onion and celery and cook very gently for about 15 minutes, without colouring, until soft. Add the rice (it will sizzle) and turn up the heat. Don't let the rice or veg catch on the bottom of the pan, so keep it moving.
  • Stage 2:
  • Quickly pour in the vermouth or wine. You will smell the alcohol immediately, so keep stirring all the time until it has evaporated, leaving the rice with a lovely perfume.
  • Stage 3:
  • Add the stock to the rice a ladle at a time, stirring and waiting until it has been fully absorbed before adding the next. Turn the heat down to low so the rice doesn't cook too quickly, otherwise the outside of each grain will be stodgy and the inside hard and nutty (you don't want to cook it too slowly either, or it will turn into rice pudding!) and continue to add ladlefuls of stock until it has all be absorbed. This should take about 14 to 15 minutes and give you rice that is beginning to soften but is still a little al dente. Put to one side.
  • Now put a large saucepan on a medium to high heat and pour in half the stock, followed by all your risotto base and the finely sliced asparagus stalks and the tips. Stirring all the time, gently bring to the boil, then turn the heat down and simmer until almost all the stock has been absorbed. Add the rest of the stock a ladleful at a time until the rice and asparagus are cooked. You might not need all your stock. Be careful not to overcook the rice - check it throughout cooking to make sure it's a pleasure to eat. It should hold its shape but be soft, creamy and oozy, and the overall texture should be slightly looser than you think you want it.
  • Turn off the heat, beat in your butter and Parmesan, mint, almost all the lemon zest and all the juice. Check the seasoning and add salt and pepper if needed. Put a lid on the pan and leave the risotto to rest for a minute. Serve with a drizzle of olive oil, a scattering of lemon zest and a block of Parmesan on the table.

2 tbsp olive oil
Bunch spring onions, white parts and green parts separated and finely chopped (we used some red spring onions for colour)
1 large celery stick, finely chopped
300g bunch asparagus, stalks finely sliced and tips reserved
1-1.25 litres fresh chicken or vegetable stock
350g risotto rice
200ml dry white wine
Bunch fresh mint, finely chopped
3 anchovy fillets in oil, finely chopped
3 tbsp extra-virgin olive oil
Grated zest and juice 1 lemon
200g frozen peas
50g butter
75g pecorino, grated
For the pea purée
200g frozen peas
100g spinach
2 tbsp rapeseed oil
Juice 1 lemon
Large handful fresh parsley leaves

Steps:

  • For the pea purée, put the frozen peas in a heatproof bowl and defrost by covering with boiling water for 30 seconds. Drain and transfer to a blender or food processor and whizz with the spinach, rapeseed oil, lemon and parsley until smooth. Season with salt and pepper.
  • Heat the 2 tbsp olive oil in a large, heavy-based pan and gently cook the chopped white part of the spring onions, celery and asparagus stalks until softened (about 10 minutes).
  • Meanwhile, put the stock in a pan and gently heat until hot but not boiling. Keep warm on a low heat.
  • Stir the rice into the vegetables to coat the grains in the oil, then cook for 1-2 minutes more. Pour n the wine, bring up to a fast simmer and cook until most of the wine has evaporated. Start adding a litre of stock a ladleful at a time, stirring often, only adding more once the liquid has been absorbed by the rice. (This should take around 20 minutes.)
  • Meanwhile, make a salsa: chop the reserved green part of the spring onions and mix in a bowl with the mint, anchovies, extra-virgin olive oil, lemon zest and juice. Add salt and pepper to taste. If the rice is still hard after it has absorbed a litre of stock, stir in a little more. As the rice is starting to become plump and tender, about 5 minutes before the end of the cooking time, stir in the asparagus tips, peas and pea purée, then cook until the rice is tender.
  • Stir in the butter and pecorino, taste, season and serve with the mint salsa for drizzling over.

1 tablespoon coconut oil
1/2 cup small diced onion
1 cup short grain brown rice
8 ounces organic Chardonnay
About 32 ounces chicken or vegetable stock
1/2 cup (about 4 to 5 stalks) asparagus, cut into 1-inch pieces
1/2 cup frozen (thawed) or fresh shucked peas
1/2 teaspoon smoked sea salt
2 teaspoons sea salt
1/2 teaspoon fresh black pepper
2 teaspoon fresh chopped mint
2 to 3 tablespoons coconut butter

Steps:

  • Heat a 2-quart sauce pot over medium-high heat. Melt the coconut oil, then add the onion, cook until translucent, about 2 minutes. Reduce the heat to medium, stir in the rice and cook for an additional 2 minutes. This toasts the rice and gives it a wonderful nutty flavor. Pour in the white wine and allow it to reduce by half before adding 12 ounces of stock. Stir often and allow the rice to absorb most of the liquid before adding more. Continue cooking the rice, adding the liquid in 4-ounce increments and remembering to stir often.
  • When the rice feels just about fully cooked add the asparagus and continue to cook. At this point the rice should be thick and creamy. Add the peas, stir to combine, and heat through. Season with the salts, black pepper, and stir in the mint and coconut butter. Serve immediately.

1 bunch of asparagus (about 250g)
300g fresh peas, podded and pods reserved, or use 100g frozen peas
30g parmesan or vegetarian alternative, finely grated, plus the rind, if available
1 litre vegetable stock (or chicken stock if not vegetarian)
2 tbsp olive oil, plus a drizzle
1 onion, finely chopped
200g risotto rice
100ml white wine or vermouth
30g cold butter, cut into cubes
squeeze of lemon juice
handful of pea shoots (optional)

Steps:

  • Snap the woody ends off the asparagus stalks and roughly bash with the blade of a knife. Tip the ends into a saucepan along with the reserved pea pods, if using, and parmesan rind, if you have it. Pour over 700ml of the stock, set the pan over a low heat and bring to a simmer. Meanwhile, cut the tips off the asparagus, set aside, and slice the stalks into rounds.
  • Bring the rest of the stock to the boil in a small saucepan, tip in the asparagus tips and cook for 1 min. Scoop out into a bowl using a slotted spoon and set aside. Tip the rest of the asparagus and the peas into the pan and simmer for 3-4 mins until just tender. Tip half the cooked veg and the stock from the pan into a blender and blitz until frothy and green. Return to the pan with the whole vegetables and set aside.
  • Heat most of the oil in a large, shallow saucepan over a low heat and cook the onions for 8-10 mins until soft but not translucent. Stir in the rice to coat in the onions and oil, turn the heat up slightly and cook for 3 mins. Pour over the wine or vermouth, then stir and simmer until the liquid has evaporated.
  • Add a ladleful of stock from the large pan, avoiding the pea pods and asparagus ends, stirring vigorously and only adding more when the first ladle has been absorbed by the rice. Keep adding stock in this way until it is absorbed, the pan is dry and the rice is al dente (about 15 mins), then add the green stock, along with the veg, and cook for 3-4 mins more until the rice is just tender and you can see the bottom of the pan when you draw a spoon through it.
  • Remove from the heat and leave to stand for a minute, then beat in the butter, most of the cheese, a squeeze of lemon juice and some seasoning. Stir until the cheese has melted and the risotto is thick. Serve in warmed bowls topped with the asparagus tips, pea shoots (if using), the rest of the cheese and a drizzle of olive oil.
