If you have hard-cooked eggs left over from Easter, here's a way to use some of them. It's delicious for a luncheon or light supper.

1 pound fresh asparagus, trimmed
2 hard-boiled large eggs, sliced
1/4 cup plus 3 tablespoons butter, divided
1/4 cup all-purpose flour
1/4 teaspoon salt
Dash pepper
2 cups whole milk
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs
4 slices bread, toasted and halved

Steps:

  • In a large skillet, bring 1/2 in of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender. Drain. Transfer to a greased 11x7-in. baking dish. Arrange eggs over the top. , In a large saucepan, melt 1/4 cup of butter; gradually stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted. Pour over eggs. , In a small skillet, melt the remaining butter; toss with bread crumbs. Sprinkle over top of casserole. Bake, uncovered, at 375° for 15 minutes or until lightly browned. Serve with toast.

4 rashers of higher-welfare smoked streaky bacon
4 large ripe tomatoes
500 g asparagus

WORCESTERSHIRE ASPARAGUS & MUSHROOMS ON TOAST
4 cloves of garlic
olive oil

1 small handful of fresh flat-leaf parsley
8 tablespoons Worcestershire sauce
1-2 knobs of butter

500 g asparagus
1 knob of butter
1 squeeze lemon juice
2 large handfuls salad leaves
extra virgin olive oil
1 squeeze lemon juice

MINTED RAW ASPARAGUS SALAD WITH BABY SPINACH & FRESH GARDEN PEAS
2 large handfuls baby spinach leaves
2 large handfuls spring peas
1 handful fresh mint leaves
8 large asparagus spears
1 lemon, juice of
extra virgin olive oil
1 small handful soft goat's cheese

Steps:

  • 1. STEAMED ASPARAGUS & QUICK TOMATO SAUCE
  • Bring 2.5cm of water to the boil in a large pan. Meanwhile, pick the leaves from 4 sprigs of fresh rosemary, slice 4 rashers of quality smoked streaky bacon into matchsticks, and halve 4 large ripe tomatoes. Grate the tomato halves cut side down on a fine grater, discarding the skins. Put 500g of washed asparagus (woody ends snapped off) into a colander and place over the pan of boiling water. Cover with a lid or tin foil and cook for 3 to 4 minutes, or until just tender. Meanwhile, put a large frying pan on a high heat. Add a lug of olive oil and the sliced bacon. Once the bacon is crispy, add the rosemary leaves and cook for about 40 seconds, then remove both to a plate. Add a knob of butter to the same pan, then add the tomato, bring to the boil and season well. Move the asparagus to a serving platter, pour over the hot tomato sauce, scatter over the crispy bacon and rosemary and serve. 2. WORCESTERSHIRE ASPARAGUS & MUSHROOMS ON TOAST Peel and finely slice 4 cloves of garlic. Put a large frying pan on a high heat and add a good lug of olive oil. Whack 4 slices of nice bread into the toaster. Slice 2 handfuls of mushrooms (brushed clean) and 500g of washed asparagus (woody ends snapped off) into bite-sized chunks. Add them to the hot pan with the sliced garlic and toss and fry for around 4 minutes. Finely chop a small handful of fresh flat-leaf parsley and add most of it to the pan, along with 8 tablespoons of Worcestershire sauce and a knob or two of butter. Take the pan off the heat and shake and stir around for 30 seconds, or until the sauce has reduced down. Season to taste, then spoon over the slices of hot toast and top with the rest of the parsley. 3. LEMON BUTTERED GRILLED ASPARAGUS & SHAVED LANCASHIRE CHEESE Put your griddle pan on a high heat. Place 500g of washed asparagus (woody ends snapped off) on the dry griddle pan. Turn and lightly char on both sides until just tender (roughly 2 to 3 minutes on each side), then toss in a large bowl with a knob of butter, a good squeeze of lemon juice and a pinch of salt and pepper. Divide between plates or serve on a big platter. Toss 2 large handfuls of salad leaves with a little extra virgin olive oil, a pinch of salt and pepper and a good squeeze of lemon juice. Use a speed-peeler to shave over a nice crumbly British cheese like Lancashire or Ticklemore, and serve. 4. MINTED RAW ASPARAGUS SALAD WITH BABY SPINACH & FRESH GARDEN PEAS Put 2 large handfuls of washed baby spinach leaves and 2 large handfuls of freshly podded spring peas into a salad bowl. Finely slice a handful of fresh mint leaves and add to the bowl, then use a speed-peeler to shave 8 large spears of raw washed asparagus (woody ends snapped off) into ribbons. Season with a good pinch of salt and pepper. Squeeze in the juice of 1 lemon, and drizzle over three times as much extra virgin olive oil. Crumble over a small handful of soft goat's cheese, then toss and serve on a platter. The peas always fall to the bottom of the bowl, so pick them up, scatter them over the top and serve.

Steps:

  • Peel white asparagus with a vegetable peeler from top to bottom, starting below the tips. Cut off any woody ends with a knife.
  • Place asparagus spears and salt in a large, wide saucepan and pour in enough water to just cover. Bring to a boil. Reduce heat; simmer until spears are tender and easily pierced with a knife, 15 to 25 minutes. Drain.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Toast bread slices; arrange on a baking sheet. Spread butter over warm bread.
  • Lay 1/2 slice ham on top of each slice of bread; trim excess on all sides. Cut asparagus spears in half; divide evenly over ham. Cover asparagus spears with Edam cheese.

3 tablespoons all-purpose flour
2 cups milk

  • Place asparagus into a large pot or skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 8 to 10 minutes. Drain.

2 or more slice good bread toasted, i love multi-grain
2 Tbsp butter for toast, or on top of asparagus

Steps:

  • 1. Cut off the bottom hard part of the asparagus, about 1 & 1/2 inches;wash thoroughly.
  • 2. Place in round baking dish, add about half a cup of water, cover with plastic wrap and vent at side.
  • 3. Microwave just a few minutes, perhaps three to start, and test for crispness. It should be bright green and still a bit crunchy.
  • 4. Carefully uncover, and remove from water, and place on top of buttered toast. Add salt and pepper as desired. It's so comforting and good!

12 spears of asparagus
½ teaspoon sweet smoked paprika
2 large free-range eggs
Parmesan cheese
4 sprigs of fresh mint

  • Bring a pan of salted water to the boil, then reduce to a simmer.
  • Heat a griddle pan over a high heat and toast the bread. Move each slice to a plate or board and drizzle with a little oil.
  • Snap the woody end off the asparagus, then griddle for a few minutes on each side, sprinkle with the paprika and divide between the pieces of toast.

1 lemon , zested and juiced
2 tbsp olive oil
small handful flat-leaf parsley leaves, chopped

1 small gherkin , chopped
6 tbsp good-quality thick mayonnaise
200g white crabmeat
4 small slices of sourdough
4 small handfuls rocket (about 50g)

Steps:

  • Use a swivel blade peeler to shave the asparagus into ribbons. Put in a bowl and season with salt and pepper, then dress with the lemon juice and olive oil and set aside.
  • Mix the parsley, capers, gherkin and lemon zest into the mayonnaise in a small bowl, then gently fold through the crabmeat. Toast or griddle the sourdough and top with the crab mixture. Toss the rocket in with the asparagus and top each crab toast with a tangle of the asparagus salad. Season with flaky sea salt and serve.

  • Par-cook asparagus in boiling water for 3-4 minutes or until crisp tender.

1 pound thin asparagus spears
Salt
1 loaf chewy, crusty farmhouse style white bread, cut into 3/4-inch slices
1/2 stick butter, softened
2 tablespoons Dijon or grain mustard
1 1/4 pounds boiled, baked or smoked ham, order thick slices at deli counter
Freshly ground black pepper
1 pound fontina, shredded or sliced

Steps:

  • Holding 1 spear at each end snap off the tough stem of asparagus. Use this spear as a guide line to trim the bundle with a sharp knife. Simmer asparagus in salted boiling water 3 minutes. Drain and run under cold water. Cut asparagus to fit the size of the toasts.
  • Toast 8 thick slices of farmhouse style bread under a preheated broiler 6 inches from heat. Combine softened butter and mustard. Spread the toasted bread with mustard butter. Cut sliced ham into smaller pieces to process. Grind the ham in your food processor. Spread the toast with ground ham. Arrange steamed asparagus spears on top of the layer of ham. Top each toast with a few grinds of black pepper and a mound of fontina cheese. Return toasts to hot oven under broiler and cook toasts until cheese melts and lightly browns at edges. Arrange ham and asparagus toast on a platter and serve.

  • Heat the oven to 120°C/100°C fan/gas ½. Mix the polenta with a little salt and white pepper. Carefully turn the tub of ricotta out onto a baking tray lined with baking paper, then spoon the polenta over the ricotta to roughly coat it – this helps the ricotta dry out in the oven. Bake for 2½ hours until it starts to dry out and firm up. Take out of the oven and leave to cool (see Make Ahead).
  • Clean the asparagus, breaking off the tougher ends, peeling the bottom of each spear, then breaking each into three pieces. Put the prepared spears in iced water and set aside. Put the trimmings in a pan with 1 litre water and some salt, bring to the boil and simmer for 30 minutes to make a stock. When the stock is ready, pass it through a sieve (discard the solids), return the stock to the pan and bring it back to the boil. Blanch the iced asparagus spears in the stock for about 30 seconds, then return them to the iced water. Keep the stock to one side.
  • Put a good splash of olive oil in a large frying pan set over a medium-high heat. Break the eggs into the hot pan and quickly add the blanched asparagus spears, tomatoes, olives, chives, salt and pepper, then the cheese. When the egg whites are half-set, break the yolks with a wooden spoon and briefly mix together. Remove from the heat and briefly stir again. This is the Italian way, in which the eggs are not scrambled, but quickly stirred so the whites and yolks remain mostly separate. We would never add cream to eggs in Calabria, but you can add a splash of asparagus stock if you want a little extra moisture.
  • Put 2 toast halves on each of 6 warmed serving plates. Top with the eggs and a dollop or two of baked ricotta, then scatter over the pea shoots, toasted chopped hazelnuts and a little extra grated cheese.
