6 ounces uncooked whole wheat linguine
1 pound fresh asparagus, trimmed and cut into 1/2-inch pieces
2 tablespoons olive oil
1 medium onion, chopped
1-1/2 pounds uncooked shrimp (26-30 per pound), peeled and deveined
4 garlic cloves, minced
1/4 cup reduced-sodium chicken broth
4 wedges The Laughing Cow garlic and herb Swiss cheese
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese

Steps:

  • In a large saucepan, cook linguine according to package directions, adding asparagus during the last 3 minutes of cooking., Meanwhile, in a large skillet, heat oil over medium-high heat. Add onion; cook and stir 6-8 minutes or until tender. Add shrimp and garlic; cook 2-4 minutes longer or until shrimp turn pink. Stir in broth; cook over medium heat 1-2 minutes or until liquid is almost evaporated. Add Swiss cheese, lemon juice, salt and pepper; stir until cheese is melted., Drain linguine and asparagus, reserving 1/4 cup pasta water. Stir linguine and asparagus into shrimp mixture, adding enough reserved pasta water to moisten pasta. Sprinkle with Parmesan cheese.

1 pound linguine
2 tablespoons extra-virgin olive oil
Two 12-ounce bags cherry tomatoes, stemmed and halved
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried crushed red pepper
3 large cloves garlic, flattened and chopped
1/2 cup dry white wine
1 pound asparagus, trimmed, stalks cut on a diagonal into 1 to 1 1/2-inch pieces
1 pound large shrimp, peeled and deveined
1/2 cup chopped fresh basil
1/2 cup chopped fresh mint
2 teaspoons chopped fresh oregano

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and place in a large bowl.
  • Heat the oil in a large deep skillet over medium-high heat. Add the tomatoes, 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Cook, stirring occasionally, until softened, about 2 minutes. Add the crushed red pepper flakes and garlic. Cook for 30 seconds until aromatic. Add the wine and asparagus. Bring to a boil and simmer for 5 minutes.
  • Sprinkle the shrimp with the remaining 1/4 teaspoon of salt and 1/4 teaspoon black pepper. Add the shrimp to the pan and continue to simmer until the shrimp is cooked through, 5 to 7 minutes. Stir in the basil, mint and oregano.
  • Pour the sauce over the pasta and toss to combine. Serve immediately.

I learnt this technique for cooking asparagus from one of the nonnas I met at the market in Rome. By frying, then adding a little liquid and reducing to a low temperature, you ensure the flavours combine beautifully. Creating emulsification at the very end gives a perfect sauce that's as much about flavour as it is texture.

300 g dried linguine
300 g mixed asparagus, (wild, white, regular)
4 cloves of garlic
2 dried red chillies
olive oil
1 knob of unsalted butter
30 g pecorino, or Parmesan cheese, plus extra to serve

  • Cook the pasta in a pan of boiling salted water according to the packet instructions.
  • Meanwhile, snap off and discard the woody ends of the asparagus, then finely slice the spears at an angle, leaving the tips whole.
  • Peel and finely slice the garlic, crumble up the dried chillies, and place both in a large frying pan on a medium heat with 2 tablespoons of oil and the butter. When the garlic starts to sizzle, stir in the asparagus. Let it start to fry, then add a spoonful of pasta water, cover, and leave to simmer on a low heat until the pasta is al dente.
  • Using tongs, drag the pasta straight into the asparagus pan, letting a little starchy cooking water go with it. Turn the heat off, then finely grate in the pecorino and toss together until the fat, cheese and liquid make a natural creamy sauce - loosen with a little extra cooking water, if needed.
  • Taste and season to perfection, then divide between your plates. Finish with a grating of pecorino and a little lemon zest, to taste.

2 tablespoons olive oil
2 cups sliced fresh mushrooms
1 cup dry white wine
½ pound medium shrimp, peeled and deveined
1 pound steamer clams in shell, scrubbed
1 pound asparagus, trimmed and cut into 2-inch pieces
½ pound bay scallops
⅓ cup freshly grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a boil. Stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through, but still firm to the bite, about 11 minutes. Drain well in a colander; cover and keep warm.
  • Heat the olive oil over medium heat in a large pot with a cover that will hold a steamer basket. Add the mushrooms; stir and cook for 3 minutes. Pour in the wine and bring to a boil; add the shrimp.
  • Put the clams and asparagus into the steamer basket and place the basket into the pot over the shrimp and mushrooms. Cover and steam for 2 minutes. Lift the steamer basket and add the scallops to the shrimp and mushrooms. Cover and continue to steam until clam shells open and seafood is cooked, about 4 minutes.
  • Tip the clams and asparagus into the pot and combine with the shrimp and scallops. To serve, ladle seafood over the cooked linguine and sprinkle with grated Parmesan cheese.

¼ cup chicken broth
½ pound fresh mushrooms, sliced

1 lb. linguine
2 pkgs dry chicken noodle soup mix
1/3 c grated cheese

Steps:

  • Cut asparagus in 2" pieces and saute in olive oil for 10 mins. Sprinkle with seasoned salt. In 1" olive oil, saute 4-5 cloves garlic, hot pepper, onions. Drain linguine reserving 2 c liquid. Smash soup mix and mix with oil. Toss asparagus with linguine and pour olive oil mix over top. Add cheese. It needed, can add small amount of reserved liquid. Serve with extra cheese.

1 bunch asparagus ((trimmed and washed // ~12 ounces as original recipe is written))
1 pinch each sea salt + black pepper
2 medium lemons ((sliced thinly))
3 1/2 Tbsp olive oil ((divided))
3-4 large cloves garlic ((minced))
10 ounces bow tie pasta ((~5 cups as original recipe is written // see notes if GF*))
2 1/2 cups unsweetened plain almond milk*
3-4 Tbsp all-purpose flour ((sub another thickener if GF*))
1-2 Tbsp nutritional yeast ((optional // for a subtle cheesy flavor))

Steps:

  • Preheat oven to 400 degrees F (204 C). Add asparagus to a baking sheet and toss with 1/2 Tbsp olive oil and a pinch each salt and pepper (amounts as original recipe is written // alter if adjusting batch size). Top with several thin slices of lemon and bake for 20-25 minutes. Once finished cooking, remove from oven and roughly chop into thirds.
  • In the meantime, bring a pot of water to a boil and salt generously.
  • While the water's heating, bring a large skillet to medium heat. Once hot, add 3 Tbsp olive oil (amount as original recipe is written // adjust if altering batch size) and garlic. Whisk and continue cooking for 1-2 minutes or until garlic is just starting to brown.
  • Add 3 Tbsp flour (amount as original recipe is written // adjust if altering batch size) and whisk. Cook for 30 seconds, then whisk in almond milk 1/2 cup at a time. TIP: Use a large flat spatula to smash down the bits of garlic and flour to properly incorporate. Add a healthy pinch salt and pepper and whisk. Slightly lower heat and continue cooking to thicken, stirring occasionally.
  • Add pasta to boiling water and cook according to package instructions. Then drain and set aside.
  • For extra creamy sauce, add sauce to a blender or use an immersion blender to blend. Add nutritional yeast and another pinch of salt and pepper. If it looks runny, add remaining flour (or cornstarch). Blend until creamy and smooth, using the "puree" or "liquify" setting if possible. Taste and adjust seasonings as needed, then add back to pan and continue cooking over medium to medium-low heat to thicken.
  • Once your sauce has reached desired thickness, add the juice of half a lemon and stir.
  • Add 3/4 of the chopped asparagus and the cooked pasta to the sauce and toss to coat.
  • Divide between 2-3 serving plates (per original recipe // adjust if altering batch size) and top with remaining asparagus. Serve with a lemon wedge and vegan parmesan cheese.
  • Store leftovers in the refrigerator for up to a few days.

1 tsp salt
1 1/4 lb asparagus, trimmmed, cut into 1-inch lengths
2 oz sliced mushrooms, or wild mushrooms
1/2 c dry white wine
1/4 c olive oil
4 garlic cloves, chopped
1 tsp fennel seed, crushed
1 pinch dried red pepper flakes
6 basil leaves, finely chopped
salt and freshly ground black pepper
2 Tbsp butter
1/4 c grated parmesan cheese, or romano cheese

Steps:

  • 1. BRING A LARGE POT of salted water to a boil, add the pasta, and cook until al dente, about 8 to 10 minutes.
  • 2. WHILE THE PASTA is cooking, combine the asparagus, mushrooms, wine, olive oil, garlic, fennel seeds, and pepper flakes in a skillet and bring just to a boil.
  • 3. Reduce the heat and simmer, partly covered, until the asparagus is just tender but still crisp and most of the liquid has evaporated, about 10 minutes. (If the liquid evaporates before the asparagus is cooked, add a tablespoon of water.)
  • 4. When the asparagus is cooked, stir in the basil, adding salt and pepper to taste.
  • 5. WHEN THE PASTA is cooked, drain well and return it to the pot.
  • 6. Add the butter to the hot pasta and toss to coat well.
  • 7. Arrange the pasta on warmed plates and top with the asparagus and sauce.
