CHEF JOHN'S BACON AND ASPARAGUS DUTCH BABY
I'm seeing lots of savory, non-breakfast versions of Dutch Babies on menus lately, so I thought I'd try it with this amazing bacon and asparagus version. The best pan to use is a 12-inch cast iron skillet.

Steps:
- Preheat oven to 475 degrees F (245 degrees C).
- Place eggs in mixing bowl. Add milk, grated Parmigiano-Reggiano cheese, flour, lemon zest, salt, black pepper, and cayenne pepper. Whisk together until completely combined.
- Heat 2 teaspoons olive oil in cast-iron skillet over medium heat. Add bacon and cook until fat is rendered out and bacon begins to crisp up. Add asparagus and raise heat to high. Cook and stir about 1 minute.
- Pour batter into pan in a circular motion.
- Bake in preheated oven until browned and puffed, 12 to 13 minutes.

OVEN-ROASTED ASPARAGUS

- After you wash the asparagus thoroughly, stack a bunch together and lop off the tough/thick bottom an inch or so.
- Spread out the asparagus in a single layer on a rimmed baking sheet. Pat it as dry as you can, as you don't want any water to "steam" the asparagus in the oven.
- Begin by generously drizzling olive oil all over the asparagus and then sprinkle the asparagus generously with kosher salt and freshly ground black pepper.
- Roast the asparagus for about ten minutes. The secret here is for the oven to be very hot so the asparagus can begin to brown on the outside without overcooking and getting too flimsy. You want the finished asparagus to still have a bite to it. Enjoy!

- Poach or steam asparagus in or above boiling salted water until it is bright green and just tender, 3 to 7 minutes, depending on its thickness. Meanwhile, put 4 tablespoons butter in a small saucepan over low heat.
- Place at least 2 tablespoons butter in a large skillet, preferably nonstick, and turn heat to medium. When butter in skillet melts, crack eggs into it. Cook, sprinkling with salt and pepper, until whites are no longer runny, about 5 minutes.
- Drain asparagus and divide among 4 plates. Turn off heat under butter in saucepan the moment it browns; if eggs are not quite ready, keep butter warm over low flame.
- Top asparagus with a portion of ham, then a fried egg, then some browned butter, and finally a few slices of the cheese. Serve.

- In a medium sauté pan, heat 2-3 tablespoons butter until foaming. Add 2 cups sliced asparagus and sauté for a few minutes. Add 1 cup chopped ramps and cook a couple of minutes more until softened.
- Set a stockpot over medium-high heat and add 7-8 cups broth; bring to a near boil. Reduce to low so broth stays hot, but not continuously simmering.
- Heat ¼ cup olive oil in a 10-inch Dutch oven or sauté pan over medium heat. Add ½ cup finely chopped shallot (or onion) and scant ½ teaspoon of salt; stir about 7 or 8 minutes or until softened.
- Add 2 cups Arborio rice to the pan and raise heat to medium. Stir constantly until the rice is coated with oil (a few minutes). The rice should retain its white color.
- Ladle in 1 1/2 cups broth to barely cover the rice and continue to stir; add another ½ teaspoon salt and adjust heat to maintain cooking at a gentle simmer, all the while continuing to stir.
- When you see the liquid has been absorbed and the rice is dry enough that the wooden spoon you’re stirring with leaves a trail on the bottom of the pot, add in more broth in increments of 1 cup at a time, always stirring.
- After you’ve added 5 cups of liquid, add the asparagus and ramp mixture and gently blend into the rice; taste rice for flavor and adjust with additional salt, if necessary.
- Stir in ½ cup grated Parmesan and ¼ cup chopped parsley. Serve and garnish with additional parsley or a chiffonade (sliced leaves into ribbons) of ramp leaves.
