ASPARAGUS DUTCH STYLE

1 1/2 to 2 pounds asparagus, trimmed
6 tablespoons butter, or more
4 eggs
Salt and pepper
8 thin slices dry-cured ham, like prosciutto
12 or 16 paper-thin slices Parmigiano-Reggiano

Steps:

  • Poach or steam asparagus in or above boiling salted water until it is bright green and just tender, 3 to 7 minutes, depending on its thickness. Meanwhile, put 4 tablespoons butter in a small saucepan over low heat.
  • Place at least 2 tablespoons butter in a large skillet, preferably nonstick, and turn heat to medium. When butter in skillet melts, crack eggs into it. Cook, sprinkling with salt and pepper, until whites are no longer runny, about 5 minutes.
  • Drain asparagus and divide among 4 plates. Turn off heat under butter in saucepan the moment it browns; if eggs are not quite ready, keep butter warm over low flame.
  • Top asparagus with a portion of ham, then a fried egg, then some browned butter, and finally a few slices of the cheese. Serve.

Crispy and puffed on the edges, with the most luscious custard-like inside, our Savory Dutch baby is going to be the showstopper of your next spring brunch. We toss Canadian Bacon, crispy asparagus, and nutty gruyere together and then sprinkle it over our fool-proof dutch baby batter.

3 large eggs
1 cup whole milk
1/2 tsp salt
2/3 cup all-purpose flour
2 tbsp chives
2 tbsp unsalted butter
1 cup chopped asparagus (1/2-inch pieces)
4 slices slices Jones Dairy Farm Canadian Bacon, ½-inch pieces
6 oz shredded gruyere cheese

Steps:

  • Preheat oven to 425 degrees. Place an oven-proof 10-inch skillet in the oven. Cast iron or non-stick work best.
  • Add eggs and milk to a blender. Blend until smooth. Add flour and salt. Blend on high until smooth, about 1 minute. Add chives. Pulse once to combine. Let the batter rest while you prep the rest of the ingredients and the oven comes to temperature.
  • When the oven preheats, remove the pan from the oven and add the butter. Swirl and then sprinkle all but 1/4 cup each of the asparagus and Canadian Bacon on the bottom of the pan. Pour the batter on top. Sprinkle the middle with cheese leaving a 1-inch border around the sides. Sprinkle the remaining asparagus and Canadian bacon on top of the cheese. Place in the oven and set the timer for 15 minutes.
  • After 15 minutes, reduce the heat to 375 degrees and cook another 10-15 minutes until golden brown and puffed.
  • Garnish with extra chives.

ROASTED ASPARAGUS WITH HOLLANDAISE



Roasted Asparagus with Hollandaise image

Number Of Ingredients 7

12 tablespoons unsalted butter (1 1/2 sticks)
4 extra-large egg yolks, at room temperature
3 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
2 pinches of cayenne pepper
2 pounds fresh asparagus
Good olive oil

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter in a small sauce pan. Place the egg yolks, lemon juice, 1 1/2 teaspoons salt, 3/4 teaspoon pepper and cayenne in the jar of a blender. Blend for 15 seconds. With the blender running, slowly pour the hot butter into the blender and blend for 30 seconds, until the sauce is thick. (You can leave it in the blender at room temperature for up to 1 hour. If it is made in advance, add 1 tablespoon hot tap water and blend for a few seconds before serving.)
  • Break off the tough ends of the asparagus and, if they're thick, peel them. Place the asparagus on a baking sheet, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper. Roast the asparagus for 15 to 20 minutes, until tender but still crisp.
  • Pour the hollandaise sauce over the warm asparagus and serve.

4 slices ham (approx 4 oz)
2 hard-boiled eggs
4 ounces butter, melted
12 new potatoes, boiled

Steps:

  • Break off tough ends of the asparagus and boil in salted water until just tender. Drain.
  • Meanwhile chop the ham and egg finely.
  • Put asparagus on a serving plate and garnish with the chopped ham and eggs.
  • Serve with the boiled potatoes and melted butter in a jug on the side.

1 pound fresh asparagus spears, trimmed

Steps:

  • Melt butter in a skillet over medium-high heat. Stir in the olive oil, salt, and pepper. Cook garlic in butter for a minute, but do not brown. Add asparagus, and cook for 10 minutes, turning asparagus to ensure even cooking.
