NEELY'S ASPARAGUS CASSEROLE

Steps:
- Preheat the oven to 350 degrees F.
- Heat the oil in a saute pan over medium-high heat. Stir in the onions and garlic; saute until translucent and fragrant and season with salt and pepper. Add the asparagus and saute until just tender. Remove from heat and let cool.
- In a small bowl, whisk together the eggs, heavy cream, dill and cheeses.
- In a separate bowl, add panko, paprika and butter. Mix well to combine.
- Place asparagus in casserole dish. Pour the egg mixture over the asparagus and top with the panko, spreading evenly.
- Place in the preheated oven and bake until casserole is set and the bread crumbs are golden brown, about 20 minutes.

- Spray 9x13 pan with non-stick cooking spray.
- In a medium skillet, melt butter over medium heat.
- Add steamed asparagus, red pepper and onion.
- Cook 3-5 minutes, stirring occasionally.
- In the prepared pan layer bread, ham, vegetables and 1 cup cheese.
- In a large bowl combine eggs, milk and seasonings.
- Pour evenly over bread mixture.
- Cover and refrigerate 12-24 hours.
- Bake uncovered at 350 degrees 45-55 minutes, until golden.
- Sprinkle remaining 1 cup cheese evenly over top and bake until cheese melts.
- Let cool 10-15 minutes before cutting.

SKILLET STRATA WITH ASPARAGUS AND BOURSIN
Strata is a baked bread and egg casserole served for breakfast or brunch. This a quick and easy version that could be prepared any time of day as a one-pot meal. The strata can be prepared in a single skillet by building it in steps. Sauté onions, add the bread, and finally the eggs and asparagus, which have been par-cooked in the microwave. The skillet is then slid into an oven to cook through. Tangy, herb-and-garlic-flavored Boursin cheese adds big flavor easily.

- Adjust oven rack to middle position and heat oven to 400 degrees.
- Toss asparagus with 2 tablespoons water in microwave-safe bowl.
- Cover with plastic wrap and microwave on high power until crisp-tender, about 2 minutes. Drain.
- Whisk eggs, milk, and 1/4 teaspoon pepper together in large bowl.
- Melt butter in large nonstick ovensafe skillet over medium-high heat.
- When butter foams, swirl to coat skillet and add onion and 1/2 teaspoon salt.
- Cook until onion is soft, about 3 minutes.
- Toast the bread so that it better absorbs the egg mixture and also deepens the bread's flavor.
- Add bread and cook, stirring frequently, until bread and onion are lightly browned, about 3 minutes. Be careful not to brown the onions too quickly--they will continue to brown as they cook with the bread.
- Off heat, stir in asparagus and egg mixture until well incorporated.
- Scatter cheese on top and bake until top is puffed and edges have pulled away from sides of pan, 15 to 20 minutes.
- Serve.

- Melt butter; blend in flour and mustard and wisk until smooth.
- Add milk gradually, stirring constantly so it doesn't lump.
- Cook, stirring, until thickened.
- Season with salt, pepper, and celery salt.
- Reserve 1/2 cup potato chips.
- Arrange alternate layers of egg, potato chips, and asparagas in 2 qt.
- casserole.
- Pour sauce over all.

- Melt butter and swirl to cover bottom and sides of a 9x13-inch pan.
- Spread potatoes (still frozen is okay) in bottom of pan.
- Top with chopped onions, ham and asparagus.
- Salt and pepper slightly.
- Sprinkle 1 cup swiss cheese on top.
- At this point you can continue or casserole may be refrigerated overnight.
- Pour beaten eggs over hash browns & vegetables.

- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender. Drain well; set aside. , In a large saucepan over medium heat, melt butter. SCALLION ASPARAGUS EGG BAKE
This is a wonderful dish to be served at a brunch. The sour cream in the eggs adds a real rich flavor, and the scallions add the perfect hint of onion. Please feel free to use any cheese or combo of cheeses that you, or your family prefers. Pepper jack or Swiss might be nice alternatives to the ones I listed below. I served this for our Mother's Day brunch this year and it went over real well!

- Add asparagus and scallions along bottom of dish.
