Asparagus Salad with Lemon Vinaigrette image

This fresh asparagus salad is one of my favorites and I can't wait to show you how to make it. With lemon vinaigrette dressing drizzled on top this salad has a light and flavorful crisp crunch in every bite.

1 bunch asparagus (cut into thirds)
3 cups spinach
1/2 cup radish (sliced)
1 cup cherry tomatoes (sliced in half)
1/2 cup peas
1/2 red onion (sliced)
1/4 cup feta cheese
1/4 cup olive oil
juice of one lemon
2 Tablespoons apple cider vinegar
salt and pepper

Steps:

  • In a large pot boil the asparagus for 3-5 minutes. Rinse in cold water.
  • In a large bowl combine spinach, radish, cherry tomatoes, peas, onion, and feta cheese.
  • In a small bowl whisk together olive oil, lemon juice, vinegar, salt and pepper.
  • Pour the desired amount of dressing over the salad and mix together.

2 cups couscous
1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
8 ounces grape tomatoes, halved
6 ounces feta cheese, crumbled
3 tablespoons balsamic vinegar
2 tablespoons extra-virgin olive oil
Black pepper, to taste

Steps:

  • Cook couscous according to package instructions. Put aside and allow to cool slightly.
  • Meanwhile, place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and cool.
  • Toss the asparagus, tomatoes, and feta with couscous. Add the olive oil, balsamic vinegar, and black pepper and toss to incorporate.

1 lb. fresh asparagus, cut into 2-inch pieces
1 can (15 oz.) chickpeas (garbanzo beans), drained, rinsed
1 red onion, finely chopped (about 1 cup)
4 oz. (1/2 of 8-oz. pkg.) KRAFT Monterey Jack Cheese, cut into 1/4-inch cubes
1/2 cup KRAFT Zesty Italian Dressing
2 Tbsp. chopped fresh mint leaves

Steps:

  • Bring water to boil in medium saucepan. Add asparagus; cook 3 min. or until crisp-tender. Drain; immediately immerse asparagus in ice water. Cool completely; drain. Place in large bowl.
  • Add remaining ingredients; toss lightly.
  • Serve immediately. Or, cover and refrigerate until ready to serve.

1 corn on the cob or 3/4 cup frozen corn kernels
1 (540 ml) can chickpeas, rinsed and drained
1/2 red bell pepper, diced
1/2 orange bell pepper, diced
2 tablespoons olive oil
2 1/2 tablespoons rice wine vinegar
1 1/2 tablespoons light soy sauce
1/2 teaspoon mustard powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 teaspoon fresh thyme, finely chopped

Steps:

  • In a large bowl, combine the oil, vinegar, soy sauce, mustard powder, garlic powder, black pepper and thyme.
  • Chop the asparagus diagonally into 2-3 cm pieces and add to bowl.
  • Slice the corn from the cob and place into the bowl (can be fresh or cooked, or substitute thawed frozen corn if you can't get it on the cob).
  • Dice the bell peppers and add to bowl.
  • Ensure the chickpeas are well drained then add to the bowl.
  • Gently combine all ingredients and serve.

This is a Weight Watchers recipe for both the Core and Flex programs. Point value 3. I found it a bit bland and tweaked it with 2 packets of Splenda. I have also added a 14 ounce can of quartered artichoke hearts to this recipe. I've made some changes which I've mentioned at the end of the instructions.

1 tablespoon extra virgin olive oil
3 garlic cloves, minced
1 1/2 cups fresh corn kernels (or thawed frozen)
1 lb fresh asparagus, trimmed and cut into 1 1/2 inch pieces
1 (11 1/2 ounce) can chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1/2 small red onion, finely chopped
1/2 cup fresh basil, thinly sliced
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper

Steps:

  • Heat the oil in a large nonstick skillet over nedium-high heat.
  • Add the garlic and cook, stirring constantly until fragrant, about 30 seconds.
  • Add the corn and cook, stirring occasionally, until lightly browned, about 2 minutes.
  • Add the asparagus and cook, stiring occasionally, until bright green, about 3 minutes.
  • Add the chickpeas and cook, stirring occasionally, until asparagus are tender, about 2 minutes.
  • Remove the skillet from the heat; stir in the tomatoes, onion, basil, salt and pepper.
  • Serve right away or at room temperature.
  • NOTE:.
  • 1) I add the onions right after the garlic and saute' for about 5 minutes.
  • 2) I parboil the asparagus for 3 minutes prior to adding.
  • 3) I add the tomatoes at the very end once heat is turned off -- they stay plumper that way.

  • Roast Chickpeas: Preheat oven at 450 degrees Fahrenheit. Pat dry rinsed chickpeas with a paper towel. In a bowl, toss chickpeas with 1 tbsp olive oil, garlic powder, lemon juice, and generous few pinches of salt and black pepper (as per taste). Spread on baking sheet (lined with parchment paper), and bake for 22-28 minutes, or until chickpeas have browned and crunchy. Watch carefully for last few minutes to avoid burning.
  • Blanch Asparagus: In a wide bowl (that can hold asparagus), add water and ice. Set aside. Bring a pot of water to rolling boil, season with salt. Drop in asparagus and cook for 5 minutes. Then immediately shock it in cold water to stop cooking. Remove from water when cold to touch and set aside.
  • Prepare Chicken: Heat grill or a heavy bottom pan. If chicken breasts are very thick, slice them lengthwise in half or pound with meat-pounder. Massage 1 tbsp oil on chicken. Season with salt and black pepper. Place chicken on grill and cook each side for 3 minutes or until chicken is cooked through.
  • Assemble Chicken Caesar Salad: On a salad platter, place asparagus and top with chopped lettuce romaine. Top with sliced grilled chicken, drizzle ** Caesar dressing on top. Sprinkle grated parsmean cheese. Top with roasted chickpeas. Serve and enjoy!
