1 teaspoon salt
3/4 cup vegetable oil
3 tablespoons cold water
8 eggs
1 container (8 oz) sour cream
2 cups milk
2 teaspoons dried minced onion
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground red pepper (cayenne)
2 cups chopped cooked chicken
1/2 cup chopped red bell pepper
1 box (9 oz) frozen asparagus cuts, thawed, drained
2 cups shredded Swiss cheese (8 oz)

Steps:

  • Heat oven to 425°F. In medium bowl, mix flour, 1 teaspoon salt and the oil with fork until moistened. Sprinkle with cold water, 1 tablespoon at a time, until all water is absorbed. Gather pastry into a ball. In ungreased 13x9-inch (3-quart) glass baking dish, press pastry in bottom and up sides to within 1/2 inch of top of dish. Bake 12 to 15 minutes or until golden brown.
  • Meanwhile, in large bowl, beat eggs, sour cream, milk, onion, 1 teaspoon salt, the nutmeg and ground red pepper with wire whisk.
  • In partially baked crust, evenly layer chicken, bell pepper, asparagus and cheese. Carefully pour egg mixture over top.
  • Reduce oven temperature to 325°F. Bake 50 to 60 minutes or until knife inserted in center comes out clean. Cool 10 minutes before serving.

2 tablespoons butter, plus extra for greasing
3-4 spring onions, finely sliced, plus extra to garnish
2 cloves of garlic, peeled and minced
300 g asparagus
4 medium free-range eggs
100 g ricotta
50 ml whole milk
50 g Parmesan, freshly grated
300 g cooked free-range chicken, roughly chopped

Steps:

  • Preheat the oven to 180°C/gas 4. Lightly grease a 24cm round tart tin, 3cm deep, then line with greaseproof paper.
  • Melt the butter in a frying pan, then sauté the spring onion and garlic over a gentle heat to soften.
  • Snap off the woody ends of the asparagus, then slice into 1cm pieces, keeping the tips whole. Add the asparagus to the pan and cook gently for a couple of minutes. Season with salt and pepper, take off the heat, drain and set aside to cool. Keep the asparagus tips to one side.
  • Meanwhile, in a bowl, beat the eggs, ricotta, milk and two-thirds of the Parmesan, then season.
  • Add the cooled asparagus mixture, along with the chicken. Gently stir it together, then pour into the tin, making sure all the ingredients are evenly distributed. Scatter the tips on top of the tart, and push them into the mixture a little.
  • Sprinkle the rest of the Parmesan on top, then put the tart on a baking tray in the oven for 20-25 minutes, until just about set in the middle. If it's not golden, put it under the grill for a few seconds.
  • Leave the tart to cool to room temperature, then garnish with some extra sliced spring onion, cut into slices, and serve.

I found this wonderful recipe in one of the calendars put out every year by the Ontario Milk Marketing Board. It's a great way to use up cooked asparagus if you have any left from Sunday dinner.

1 partially baked pie shell (10 or 11 inch)
1 tablespoon Dijon mustard
2 tablespoons butter
1 onion, finely chopped
1/4 cup finely chopped fresh dill (or 1 tsp. dried)
1 lb cooked asparagus, coarsely chopped
1 1/2 cups grated old cheddar cheese
4 eggs
1 cup milk
1 teaspoon salt
1/4 teaspoon pepper
nutmeg
cayenne

Steps:

  • Preheat oven to 375 degrees F.
  • Brush the partially baked pie shell with mustard.
  • Reserve.
  • Melt butter.
  • Cook onion until tender but do not brown.
  • Combine onion with dill, asparagus and cheese.
  • Spoon evenly into the pie shell.
  • Beat eggs.
  • Add milk, salt, pepper, nutmeg and cayenne.
  • Pour the mixture over the asparagus and cheese.
  • Bake 35 to 45 minutes or until just set.
  • Cool 10 minutes before serving.

4 eggs
1 cup + 1 tablespoon shredded gruyere cheese
1 1/2 cups whole cream
1/2 cup milk
1/4 teaspoon salt
1 tablespoon butter ((melted))
1 pre-made pie crust (unbaked)

Steps:

  • Pre-heat oven to 350° (180 celsius)
  • TO CLEAN THE ASPARAGUS
  • If you buy really thick asparagus then you might want to peel the outside woody part with a potato peeler. Snap off the tough base of each spear, this is usually around the bottom third
  • of the spear, where the stem starts to turn tender. Keep only the tender part. Chop into 1/4 inch (3/4 centimeter) sizes. Boil or steam for approximately 10 minutes. Drain and set aside.
  • In a 10 inch (26 centimeter) pie plate, place the pre made (or homemade) pie pastry, brush with melted butter, and spread the steamed asparagus on top.
  • In a medium bowl, whisk together eggs, cream, milk and salt, stir in grated cheese.
  • Pour mixture over the asparagus.
  • Bake for 15 minutes then turn oven down to 325° (160° celsius) and bake approximately 30 minutes more. Quiche will be cooked when a knife inserted comes out clean. Let stand 5-10 minutes before serving. Enjoy!

3/4 cup milk
1/2 cup all-purpose flour
3/4 teaspoon sugar

1 cup chopped cooked chicken
1 cup cut fresh or frozen asparagus, thawed
1/3 cup chopped fully cooked ham
1/2 cup grated Parmesan cheese, divided
1/2 cup heavy whipping cream, whipped
1/3 cup mayonnaise

Steps:

  • For crepe batter, beat eggs and milk in a small bowl. Combine flour and sugar; add to egg mixture and mix well. Cover and refrigerate for 1 hour., Heat a lightly greased 8-in. nonstick skillet; pour 3 tablespoons batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. This quick and easy quiche is a tasty way of using up leftover roast chicken - and it makes great picnic food too!

flour, for dusting
300g/10½oz ready-made shortcrust pastry
9 free-range eggs, 1 beaten for the glaze
600ml/20fl oz double cream
100g/3½oz asparagus
300g/10½fl oz cooked leftover roast chicken, cut into 3cm/1¼in chunks
1 tbsp chopped fresh marjoram
100g/3½oz vintage Comté cheese, finely grated
1 bag green salad leaves, to serve
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Grease a 23cm/9in (4cm/2in deep) loose-bottomed tart tin with butter. Roll out the pastry on a lightly floured work surface to a thickness of 5mm/¼in. Wrap the pastry around your rolling pin and gently lower it into the prepared tin, pressing the pastry gently into the base and sides.
  • Cover the pastry case with cling film or baking parchment, then fill with baking beans, uncooked rice or flour. Bake in the oven for 20-25 minutes. Remove the lining paper and baking beads.
  • Brush the inside of the tart all over with the beaten egg. Return the pastry case to the oven for a further 5 minutes, or until golden-brown. Remove the pastry case from the oven.
  • Reduce the oven temperature to 180C/160C Fan/Gas 4.
  • In a bowl, whisk 8 eggs and the cream together, then season with salt and freshly ground black pepper.
  • Arrange the asparagus spears inside the tart case, then sprinkle over the chicken pieces and marjoram. Pour over the egg and cream mixture until almost level with the top of the pastry case. Scatter the Comté on top.
  • Bake the quiche for 20-25 minutes, or until the filling has set and the pastry is golden-brown. Remove from the oven and set aside on a wire rack to cool slightly.
  • To serve, cut the quiche into slices and serve with the salad leaves.

1/2 cup milk
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 cup chopped cooked chicken or 1/2 cup turkey
4 slices crisp-cooked bacon, crumbled
2 1/2 cups flour
1 teaspoon salt
1 teaspoon sugar
1 cup unsalted butter, chopped
1/4-1/2 cup ice water

Steps:

  • For the Quiche, break off the woody ends of the asparagus spears; the spears should be approximately 4 ½ inches long. Cook the asparagus in boiling water in a saucepan for 5 minutes; drain.
  • Prepare the pastry, adding the chives or green onion tops with the flour and salt. Roll the dough into a 13-inch circle on a lightly floured surface. Fit the pastry into a 10-inch quiche dish; trim the edge. Line the bottom with a double thickness of heavy-duty foil. Bake at 450 degrees for 8 minutes; discard the foil. Bake for 4 to 5 minutes longer or until set and dry. Remove from oven. Reduce the oven temperature to 325 degrees.

1 teaspoon curry powder
1 teaspoon poppy seeds
1 teaspoon kosher salt, plus additional as needed
1 1/2 sticks (12 tablespoons) unsalted butter, cubed and chilled
3 to 4 tablespoons ice water
2 tablespoons extra-virgin olive oil
1 bunch (about 12 ounces) "pencil" asparagus, ends trimmed
Kosher salt and freshly ground black pepper
Unsalted butter or nonstick cooking spray, for the pie dish
1/2 pound (8 ounces) cream cheese, softened
4 large eggs, lightly beaten
1 cup heavy cream
2 teaspoons Worcestershire sauce
1 teaspoon hot sauce, preferably Tabasco
1/8 teaspoon ground nutmeg
1/2 cup finely grated Parmesan

Steps:

  • For the dough: Pulse the flour, curry powder, poppy seeds and salt in a food processor. Pulse in the butter until it turns to loose crumbs. (Do not overmix.) Add 2 to 3 tablespoons ice water through the top and pulse until the dough comes together and forms a loose ball, adding additional ice water as needed. Remove the dough and form it into a disc. Wrap in plastic and refrigerate for at least 20 minutes.
  • For the batter: Heat a 12-inch skillet over medium heat and add the olive oil. Once the oil is hot and begins to smoke lightly, add the asparagus and cook over high heat until the excess water is cooked out and the stems are softened slightly, 3 to 4 minutes. Season with salt. Remove from the skillet and arrange in a single layer on a kitchen towel to drain and cool.
  • Place a baking sheet in the center of the oven and preheat to 350 degrees F. Grease a 9-inch pie dish with butter or nonstick cooking spray.
  • Turn the dough onto a floured surface. Roll the dough into an 11- to 12-inch round. Roll the dough up around the rolling pin and roll it back over the pie dish. Press it gently into the bottom and up the sides. (Ideally, there should be about an inch of excess dough hanging over the sides.) Pinch the dough up to create a crimped top edge. Line the dough with a piece of parchment paper, then fill it with pie weights or dry beans and bake until light brown, 18 to 20 minutes. Remove the parchment and weights and cool at least 15 minutes.
  • Whisk the cream cheese with the eggs in a large bowl until smooth. Whisk in the heavy cream, Worcestershire, hot sauce, nutmeg and black pepper to taste. Line the asparagus up in piles of 5 to 6 at a time. Cut three-quarters of each asparagus into 1-inch slices, leaving the pretty tips separated and intact. Fill the quiche shell with the batter and the 1-inch pieces of asparagus stems. (Reserve the tips for later.) Place the quiche carefully on the baking sheet in the oven and bake until the batter sets and browns on top, 20 to 25 minutes. Remove from the oven and place the reserved asparagus tips on top, then sprinkle with an even layer of the Parmesan. Place back in the oven until the top browns slightly, an additional 5 to 8 minutes. Cool at least 20 minutes, then cut and serve.
