EASY ASPARAGUS CASSEROLE
A great easy casserole for the asparagus season. I use any type of pasta and often put extra Cheddar or mozzarella cheese on top.

Steps:
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add asparagus, cover, and steam until tender, 3 to 6 minutes. Remove asparagus and cut into 2-inch pieces.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.
- Combine penne pasta and asparagus in the greased casserole dish. Mix milk, Parmesan cheese, eggs, dill, salt, and pepper in a bowl; pour over asparagus mixture.
- Bake in the preheated oven until topping is set and lightly browned, about 20 minutes.

ONE POT CREAMY CHICKEN AND ASPARAGUS CASSEROLE
Steps:
- Preheat oven to broil. Season the cut chicken with salt, pepper and cayenne pepper.
- Heat a large skillet over medium-high heat. Spray the skillet generously with with cooking spray or add enough oil to coat the bottom. Add the chicken to the skillet and sauté until nearly cooked, about 4 minutes. Remove the chicken onto a plate and set aside.
- Coat the skillet with more cooking spray or oil and add in the onion and garlic and sauté for 1 minute. Add in the mushrooms and asparagus and season with salt and pepper.
- Sauté the vegetables for another 2-3 minutes or until they start to soften. Sprinkle the flour over the top of the vegetables and stir together until the flour taste is cooked off, about 1 minute.
- Add the chicken back in with the vegetables. Pour in the chicken broth and milk and stir together until smooth. Cook the mixture for 2-3 minutes or until the sauce has thickened. Add in the cream cheese and stir together until smooth.
- Remove the skillet from the heat and stir in most of the gruyere and cheddar cheese until melted, reserve a little cheese for the top of the casserole. Stir in the Greek yogurt until smooth then top the casserole with the remaining cheese.
- Place in the oven and broil until the cheese is melted and starts to turn golden brown. Serve the casserole as is or on top of rice or quinoa.

- In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender. Drain well; set aside. , In a large saucepan over medium heat, melt butter. Stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Add salt and pepper. , Preheat oven to 350°. In an ungreased 11x7-in. baking dish, layer half of the asparagus. Cover with half of the eggs, cheese and sauce. Repeat layers. - Cook macaroni according to package directions for al dente; drain. Transfer to a 4- or 5-qt. greased slow cooker. Stir in soup, mushrooms, red pepper, onion, lemon juice, 1-1/2 teaspoons parsley, 1 teaspoon paprika, garlic salt and pepper. Cook, covered, on low 4 hours., Stir in asparagus and tuna. SLOW COOKED ASPARAGUS
This is a great way to cook fresh asparagus that isn't as tender to cook by other methods. It's perfect for those thicker stalks, just be sure to trim off the tough woody ends.

- Snap any woody ends from the asparagus. Lightly grease a slow cooker with non-stick cooking spray. Combine the broth, butter buds, and garlic salt in the slow cooker until mixed. Place the fresh asparagus in the slow cooker, it's ok if the asparagus isn't covered in the broth or you can cut it in half to fit. The steam that forms inside will cook any exposed parts that aren't covered by liquid. Cover the slow cooker and cook on low for 6 hours or until the asparagus is tender.

- Preheat Oven to 400˚F with the rack in the center. Butter a 9x13 casserole dish. Arrange trimmed asparagus in prepared casserole dish, packing it down for a fairly flat and even surface.
- Place a saucepan over medium heat. Melt in 3 Tbsp butter then add 2 1/2 Tbsp flour and whisk constantly for 3 minutes or until butter just starts to turn golden in color. Whisk in 2 cups half and half, 2 tsp garlic salt and 1/4 tsp black pepper. Whisk until sauce just starts to thicken then remove from heat. Sprinkle in 1/2 cup parmesan and whisk until cheese is melted and incorporated.
- Pour sauce evenly over the asparagus, leaving about 1" space on the long sides of the casserole dish. Bake uncovered at 400˚F for 15-18 minutes (depending on thickness of asparagus), or until asparagus reaches desired tenderness.
- While the casserole is baking, make the topping: in a small mixing bowl, melt 1 Tbsp butter. Mix in 1/2 cup bread crumbs, stirring until evenly moistened, then stir in 1/2 cup remaining parmesan cheese. Halfway through baking, sprinkle the bread crumb topping evenly over the casserole then return it to the oven to finish baking.
- When asparagus has reached desired doneness, set oven to broil for 2-3 minutes or until bread crumbs are golden brown. Remove from oven and serve.

- 1. Butter a casserole dish.

EASY SLOW COOKER CHICKEN AND ASPARAGUS
Steps:
- Cut the chicken breasts into chunks, and place them in the slow cooker.
- In a bowl, combine the chicken stock, cream of onion soup, tarragon, and lemon pepper seasoning. Stir to blend. Pour the mixture over the chicken.
- Cover and cook for about 4 to 6 hours on low. The chicken should be tender and thoroughly cooked. Taste and add salt and pepper, as needed.
- Cut the asparagus into 1-inch lengths and add it to the chicken.
- In a small bowl, combine the cornstarch and cold water; stir until the mixture is smooth.
- Add the cornstarch mixture to the pot and stir gently.
- Turn the slow cooker to high, and continue cooking for about 10 to 15 minutes longer, or until the asparagus is tender and the liquids have thickened.
- Serve hot with noodles or rice. Garnish with toasted almonds, breadcrumbs, or Parmesan cheese as desired.
