BRIE AND PROSCIUTTO ASPARAGUS BUNDLES
Try this easy recipe for an elegant appetizer or gourmet side dish of asparagus bundles wrapped in prosciutto and topped with melted Brie.

Steps:
- Place asparagus spears in a resealable plastic bag.
- Whisk olive oil, vinegar, and mustard in a bowl. Pour over asparagus in the bag and distribute evenly. Marinate for 1 hour.
- Preheat the oven to 400 degrees F (200 degrees C).
- Divide asparagus into bundles of 3 stalks each. Cut prosciutto slices in half lengthwise and lay on a cutting board. Wrap a piece of prosciutto around each bundle to create 7 or 8 bundles. Place bundles in a 9x13-inch baking dish.
- Bake in the preheated oven until asparagus is tender, 14 to 16 minutes.
- Remove dish from oven and set oven to broil. Place 1 slice of Brie cheese on top of each bundle and sprinkle with crushed walnuts. Return to the oven and broil until cheese begins to melt, about 1 minute.

My husband is an avowed vegetable hater, but I have no trouble getting him to eat this easy to prepare dish. Good for company too.

- Preheat oven to 350 degrees F (175 degrees C).
- Place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still crisp, about 2 to 6 minutes. Drain and place in a shallow baking dish.
- Lay cheese slices over asparagus. In a small bowl combine melted butter, bread crumbs and sesame seeds. Sprinkle over cheese.
- Bake in preheated oven for 8 minutes.
- Increase oven to broil. Broil just until breadcrumbs are golden brown.

ROASTED ASPARAGUS WITH HOLLANDAISE

- Preheat oven to 450 degrees F.
- Trim the woody ends from the asparagus. Spread the spears in a single layer in a shallow roasting pan baking sheet, drizzle with olive oil, sprinkle with salt, and roll to coat thoroughly. Roast the asparagus until lightly browned and tender, about 10 minutes, giving the pan a good shake about halfway through.
- Meanwhile, put the egg yolk, lemon juice, and cayenne in a blender. Pulse a couple times to combine.
- Put the butter in a small microwave proof bowl and heat in a microwave until just melted. With the blender running, gradually add the melted butter into the egg to make a smooth frothy sauce. If the sauce is really thick blend in a teaspoon of lukewarm water to loosen it up. Season with the salt and serve immediately or keep warm in a small heat-proof bowl set over hot (but not simmering) water until ready to serve.
- Spread the roasted asparagus on a serving platter. Grind a generous amount of pepper over the top.

ASPARAGUS BUNDLES
Steps:
- Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish. In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.
BRIE AND ASPARAGUS IN PHYLLO

- Preheat oven to 350 degrees F.
- Make sure phyllo is completely defrosted. Once removed from package, you will need to cover phyllo with waxed paper and a damp towel to prevent it from drying out. Lay out sheet of dough, lightly butter with pastry brush. Fold sheet in half, butter again. Keep re-buttering and folding in half (probably 3 "folds" total) until you have a rectangle with dimensions close to 4 by 4 inches. Cut into 3 sections. Sprinkle Parmesan on each piece of dough. Crumble a bit of brie on each. Lay asparagus tip on top and roll dough around asparagus. The tip of the asparagus should show out of the end. Repeat to make 16 pieces. Lay all pieces out on a cookie sheet. Brush each piece with butter and bake in oven until golden brown. Serve warm.
ASPARAGUS BUNDLES
My mom gave me this recipe using green beans, but I like it much better with Asparagus. The asparagus is tender, with a slightly sweet, but tangy sauce.

- Cook the asparagus in boiling water for 2 minutes; drain and set aside.
- Melt butter or margarine.
- Mix Worcestershire sauce, brown sugar, butter and garlic in a bowl.
- Wrap the asparagus in bundles of 4-5 stalks with a piece of bacon. Place bundles in the bottom of a baking dish.
- Pour sauce over the bundles and bake at 325°F until bacon is crispy.
- Remove and serve warm.
WARM ASPARAGUS, MELTED CHEESE
I have used Taleggio, Camembert, and English Tunworth from Hampshire as an impromptu "sauce" for warm asparagus with great success. A very soft blue would work as well.

- Bring a deep pan of lightly salted water to a boil. Trim any woody ends from the asparagus and lower the spears gently into the water as soon as it is boiling. Cook for four or five minutes, until tender enough to bend. Lift the spears out with a slotted spoon and lower them into a shallow baking dish. Brush them lightly with olive oil or melted butter.
- Preheat the broiler. Slice the cheese thickly-smaller whole cheeses can simply be sliced in half horizontally-and lay them over the top of the spears. Place under a hot broiler for four or five minutes till the cheese melts. Eat immediately, while the cheese is still runny.
CRANBERRY-BRIE PHYLLO TRIANGLES
A creamy fruit filling is tucked inside flaky phyllo dough in this special appetizer. One big batch never lasts long at my house!

- Cut phyllo sheets lengthwise into 2-in. strips; cut each strip in half widthwise. Using five strips at a time, brush each strip with butter and stack on top of one another. (Keep remaining phyllo covered with waxed paper to avoid drying out.) Place 1 teaspoon cranberry sauce and one to two cheese cubes at the end of each stack. Fold into a triangle as you would fold a flag., Place in an ungreased 15x10x1-in. baking pan; brush with butter. Bake at 400° for 10 minutes or until golden brown. Let stand for 5 minutes before serving.

ASPARAGUS BUNDLES WITH MELTED BRIE
Steps:
- Preheat the oven to 350°F. In a large pot of salted boiling water, cook the asparagus until crisp-tender, 2 to 3 minutes. Using tongs, transfer to a colander to drain. Add the green onion leaves to the boiling water and cook for 30 seconds. Drain in a colander and rinse under cold running water to stop the cooking. In a small skillet, melt the butter over medium heat. Add the bread crumbs and sesame seeds and saute until browned, about 2 minutes. Arrange the asparagus in 6 bundles of 3 spears each and tie each bundle together with a green onion leaf. Arrange the asparagus bundles in a shallow baking pan. Place 1 slice of Brie on top of each bundle. Sprinkle each bundle equally with the bread crumb mixture. Bake until the cheese melts, 6 to 8 minutes. Sprinkle with salt and pepper and serve each bundle on a small plate. Serves: 6
