These roll-ups are simply divine. A friend shared the recipe after serving them at a church brunch, where they disappeared fast. They make a unique finger food, a side dish at supper or a lovely lunch served with soup.

16 fresh asparagus, trimmed
16 slices sandwich bread, crusts removed
1 package (8 ounces) cream cheese, softened
8 bacon strips, cooked and crumbled
2 tablespoons minced chives
1/4 cup butter, melted
3 tablespoons grated Parmesan cheese

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry. Set aside., Flatten bread with a rolling pin. Combine the cream cheese, bacon and chives; spread 1 tablespoonful on each slice of bread. Top with an asparagus spear. Roll up tightly; place seam side down on a greased baking sheet. Brush with butter and sprinkle with Parmesan cheese. , Cut roll-ups in half. Bake at 400° for 10-12 minutes or until lightly browned.

1 1/2 cups water
36 fresh asparagus spears, trimmed
1 (8 ounce) carton chive & onion cream cheese
3 -5 tablespoons prepared horseradish
2 (5 ounce) packages thinly sliced roast beef

Steps:

  • In a large skillet, bring water to a boil. Add asparagus, cover and boil for 2-3 minutes or until crisp-tender.
  • Drain and immediately place aspargus in ice water. Drain and pat dry.
  • In a small mixing bowl, combine cream cheese and horseradish.
  • Pat beef slices dry with paper towels.
  • Spread each slice with a thin layer of cream cheese mixture; top with an asapargus spear and roll up tightly.
  • Refrigerate until serving.

1-1/2 pounds boneless beef round steak
1/4 cup chopped onion
1/4 cup butter, melted
2 cups fresh bread cubes
1/2 cup chopped celery
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon poultry seasoning
1/4 teaspoon pepper
1 cup all-purpose flour
2 tablespoons canola oil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/3 cups water
3/4 teaspoon browning sauce, optional

Steps:

  • Flatten steak to 1/3-in. thickness. Cut into six pieces. In a small bowl, combine the next eight ingredients. Place 1/3 cup on each piece of steak; roll up and fasten with a toothpick. Roll in flour. , In a large skillet, brown roll-ups in oil. In a small bowl, combine the soup, water and browning sauce if desired; pour over roll-ups. Cover and simmer for 2 hours or until meat is tender, turning occasionally.

A delicious appetizer that is also excellent at any party. I have been making the asparagus roll-ups for many years and most everyone just loves them.

1 lb fresh asparagus (younger, thin asparagus)
2 tablespoons water
6 slices white bread
4 tablespoons butter
1/4 cup mayonnaise (Kraft Miracle Whip preferred)
salt
pepper

Steps:

  • Snap off tough ends of asparagus and discard.
  • In a micro-wave proof casserole dish, place asparagus in a single layer, with spears facing the centre.
  • Add 2 tablespoons of water and microwave on HIGH (full power) for 4 minutes turning once at half time; DO NOT OVERCOOK.
  • Remove from microwave, drain and immediately pour cold water over asparagus and place a few ice cubes to cool and stop any further cooking.
  • Drain well and pat dry with paper towelling before using.
  • Cut off the crust from the bread slices and discard.
  • Using a roller, carefully roll each slice to flatten to about 1/4 inch thickness.
  • Spread butter on one side on each piece of flattened bread.
  • Then spread some mayonnaise over the butter.
  • Place 3 asparagus spears to one side of the flattened bread (facing opposite direcions to each other).
  • Sprinkle with salt and pepper to taste.
  • Carefully roll bread/asparagus.
  • Cut each roll to about 1/2 inch thick slices.
  • Place on a platter and serve.
  • Refrigerate any unused portions.

½ pound thin skirt steak, trimmed of excess fat
1 tablespoon Montreal steak seasoning
½ pound thin asparagus spears, trimmed
1 teaspoon olive oil
salt and ground black pepper to taste
⅓ cup grated Parmesan cheese
½ jarred roasted red pepper, cut into six 1/2-inch strips
6 toothpicks
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Butterfly or pound steak with a meat mallet to 1/4-inch thickness. Cut into 6 strips, approximately 2 inches wide by 5 inches long. Season both sides with Montreal steak seasoning and place in the refrigerator.
  • Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.
  • Place asparagus in a shallow dish; drizzle olive oil on top. Season with salt and pepper.
  • Grill asparagus for 2 minutes, turning after 1 minute. Transfer to a plate.

24 thin asparagus spears, trimmed
1/2 cup soy sauce
1/4 cup sugar
1/4 cup mirin or 1/4 cup dry sherry
1 tablespoon fresh ginger, grated
1 garlic clove, minced
1 bunch green onion, greens portions only
1 1/2 lbs beef tenderloin
fresh ground black pepper, to taste

Steps:

  • Preheat grill pan until hot; bring salted water to a boil over medium high heat in a saucepan.
  • Blanch asparagus spears for 1 minute; drain and plunge in an ice water bath to stop cooking.
  • In a small saucepan combine soy sauce, sugar, mirin (or dry sherry), ginger, and garlic; heat over medium heat until reduced and slightly thickened; set aside to cool.
  • Cut green onions in fourths, lengthwise, so you have long strips.
  • Slice beef in 1/4 inch slices, then pound to tenderize and thin out.
  • Dip beef slice in soy sauce mixture and place on a clean work surface; season with pepper.
  • Place an asparagus spear and a piece of green onion on the beef slice and roll up.
  • Do the same with the remaining asparagus and beef.
  • Grill beef rolls about 2 minutes until slightly charred and medium rare. Turn several times and brush with soy sauce mixture.
  • Remove to a serving platter and drizzle generously with soy sauce mixture.

1 teaspoon prepared horseradish, or more to taste
2 tablespoons light sour cream

6 ounces thinly sliced or shaved Simple Grilled London Broil, Pot Roast, or extra-lean deli roast beef

Steps:

  • Stovetop Instructions:
  • Half-fill a large bowl with ice water. Place a steamer rack insert in a large pot. Fill the pot with water so it reaches just below the steamer rack. Place the pot over high heat, cover it with a lid, and bring the water to a boil. Add the asparagus, cover the pot (leaving the lid slightly ajar), and steam the asparagus until crisp-tender, 3 to 5 minutes, depending on thickness. Transfer the asparagus to the bowl of ice water to stop the cooking. Drain well. Meanwhile, in a small bowl, mix the horseradish and sour cream until well combined. Season with salt and pepper. Lay 1 1/2 ounces of the beef on a flat work surface or cutting board. Spread one-quarter (about 1/2 tablespoon) of the horseradish mixture over the beef, leaving a small border. Place 3 asparagus spears at one of the narrower ends of each beef slice so the tips hang over. Roll the beef around the bundle of asparagus until you reach the other end of the beef.   • Follow the directions above, except instead of steaming the asparagus, add 1 tablespoon of water and the asparagus to a medium microwave-safe bowl or dish. Cover the dish with a microwave-safe plate. Microwave on high for 1 to 2 minutes, or until the asparagus is crisp tender. Transfer the asparagus to a bowl of ice water to stop the cooking. 24 spears fresh asparagus, trimmed
1 (8 ounce) package cream cheese, softened

12 slices white bread, crusts removed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Grease a baking sheet.
  • Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • When bacon is cool, crumble and set aside in a bowl.

I got this recipe from Paula Deen's show. This is so easy and yummy. Perfect for a dinner party but simple enough for everyday too. Serving size is approximate because this is easily adjustable for more or less roll-ups. Also - phyllo dough keeps in the fridge/freezer for a long time so you can use one package of the dough many many times.

1 bunch fresh asparagus, with ends broken off
phyllo dough
melted butter (for brushing)
parmesan cheese (for sprinkling on top)

Steps:

  • Preheat oven to 375°F.
  • Cut phyllo dough sheets into thirds (you need one cut sheet per asparagus spear).
  • Lie the dough flat and brush melted better on it.
  • Place one asparagus spear at one end leaving the ends of the asparagus exposed and roll it up.
  • Place 'asparagus roll-up' on a cookie sheet (I line the sheet w/foil for easy clean-up).
