GARLIC ASPARAGUS AND GREEN BEANS
This recipe could not be easier. It's ready in minutes and is good hot, room temp or cold. If you like your green beans a little more tender you need to put them in the pan first to give them a little more cooking time. I make this when I have the ingredients fresh in the garden and the flavors are so bright and simple.You can add baby carrots too if you have them.

- Heat a heavy bottom saute` pan to medium high. Add olive oil and swirl to coat pan. Add asparagus, green beans (and carrots if using) and stir well to coat vegetables with oil. Sprinkle in salt and pepper and add garlic. Stir constantly 1-2 minutes until garlic is lightly browned. Pour onto serving platter and add a splash of Balsamic vinegar to finish if desired. Can be served hot, room temp or cold.

WHOLE-GRAIN PASTA WITH MUSHROOMS, ASPARAGUS AND FAVAS
Pasta companies have made great strides when it comes to whole-grain pasta. On the small scale, Community Grains in Northern California is producing some excellent pasta with its amazing whole-wheat flour, and on the larger commercial scale, companies like Barilla are selling better and better products. I used Barilla penne for this springtime mix.

Steps:
- Begin heating a large pot of water while you shell the favas. Fill a bowl with cold water. When the water comes to a boil, salt generously and add the asparagus. Blanch thin stalks for 3 minutes, thicker ones for 4 to 5. Transfer to the cold water, drain and cut into 1-inch pieces. Set aside.
- Bring the water back to a boil and add the favas. Boil 3 to 5 minutes, depending on the size of the beans. Drain and transfer immediately to the cold water. Allow the beans to cool for several minutes, then slip off their skins by pinching off the eye of the skin and squeezing gently.
- Heat 1 tablespoon of the olive oil over medium heat in a large, heavy skillet and add the shallot. Cook, stirring, until translucent, 2 to 3 minutes, and add the mushrooms. Cook, stirring often, until the mushrooms have begun to soften and sweat, about 3 minutes, and add the garlic. Cook, stirring, until fragrant, 30 seconds to a minute, and add salt and pepper to taste. Continue to cook, stirring, until the mushrooms are tender, fragrant and juicy, another 2 to 3 minutes. Stir in the asparagus and favas and remove from the heat but keep warm.
- Bring the water in the pot back to a boil and add the pasta. Cook al dente, using the timing instructions on the package as a guide but checking the pasta a minute before the time indicated is up. When the pasta is ready, use a ladle to transfer 1/2 cup of the pasta cooking water to the pan with the vegetables and another 1/2 cup to a bowl, in case you want more to moisten the mixture. Drain the pasta and toss at once with the vegetables and basil. Add more of the cooking water if desired. Serve hot, passing the Parmesan at the table.

Steps:
- Heat oven to 425°F.
- Arrange asparagus, mushrooms and onions on aluminum foil-lined 15x10x1-inch baking pan. Sprinkle with garlic, salt and pepper. Drizzle with melted Butter with Olive Oil & Sea Salt and lemon juice.
- Bake 15-20 minutes or until asparagus is tender and lightly browned.

- Steam the asparagus for three to five minutes, depending on how thick the stalks are. It should be tender but still have some bite. Rinse with cold water, and drain for a minute on a kitchen towel. Cut into 1-inch lengths. Place in a salad bowl, and toss with the mushrooms, herbs and arugula.
- Whisk together the lemon juice, salt and pepper, garlic and olive oil. Toss with the asparagus mixture and the slivered Parmesan, and serve.

- Preheat oven to 400 degrees F (200 degrees C).
- Cook bacon in a large skillet over medium heat until evenly brown and crisp. Drain on paper towels, crumble and set aside.
- Heat oil in a large skillet over medium-high heat. Add onions; cook and stir until translucent. Reduce the heat to medium and add the portobello mushrooms. Continue cooking until the mushrooms are tender. Set aside.
- Bring a saucepan of salted water to a boil over high heat. Cook asparagus in boiling water until just tender, 1 to 2 minutes. Immediately drain and run under cold water to cool.
- Brush the pie shell with the beaten egg white, if using. Place the onion and mushroom mixture, asparagus, and bacon into the bottom of the pie shell. Sprinkle the Cheddar and feta cheeses over the vegetables. In a small bowl, whisk together the eggs, cream, salt, and pepper until smooth. Pour this mixture over the vegetable and cheese filling.
- Bake uncovered for 35 to 40 minutes, or until firm and lightly browned on top. Let cool to room temperature before serving.

THE MONKS MIXED VEGETABLE ENSEMBLE
From Kenneth H.C. Lo's Chinese cookbook. The base recipe is Casserole of Deep fried carrots, asapargus, bamboo shoots, and quick fried chinese cabbage and mushrooms. Warning the lily buds will give it a musky flavor that like the tofu [bean curd] is not Western taste but can be aquired. Hey I eat raw tofu now in a bit of dipping sauce. Also note you amy want to omit the lily buds or sub something else in for them.

- Casserole: trim the asparagus, carrots and bamboo shoots to the same thickness as the asparagus and cut into 1-2 inch segments.
- Soak the dried mushrooms for 1/2 hour in hot water and then shred. Cut cabbage into 1 inch slices.
- Place 1st three in wire basket. Deep fry for 6 to 7 minutes. Drain.
- Heat butter and sesame oil in casserole. When butter melts add mushrooms and cook for 30 seconds then add the cabbage and the salt. Stir fry gently over med heat for 3 to 4 minutes.
- Add deep fried vegetables and remaining ingredients. Increase heat to high and stir and turn vegetables for 3 to 4 minutes. Serve in casserole.

- NOTE: 2 ounces dried lily buds, stems should be 2 ounces lily bud stems. The zaar computer threw fits with the second version. It liked the first which makes no sense in the recipe.
- You can sub any hard vegetable for the asparagus. Use 4 tbsp soy sauce. Increase the broth to 12 tablespoons.
- Cube the tofu [after draining and pressing] into 1 inch cubes. Deep fry for 2 to 2 minutes with the other deep fry vegetables.
- Soak cellophane noodles in hot water for 5 minutes and drain. Cut buds into 2 inch long pieces and soak in 1 cup hot water for 1/2 hour with dried mushrooms [save the water].
- When the mushrooms, noodles and buds are soft, add to casserole with other vegetables along with the soaking water. Thicken if needed with cornstarch.
- Cook for 10 minutes covered in casserole.
- Sprinkle with the sherry and extra seseme oil.

- Cook the noodles following packet instructions. Mix the lime juice, tamarind and chilli sauce in a small bowl. Set aside.
- Heat 1 tbsp oil in a non-stick frying pan or wok and fry the tofu for 5-8 mins, until golden all over. Set aside.

ASPARAGUS, BEAN CURD AND MUSHROOMS

- 1. Heat the oil in a wok or large frying pan and stir-fry the bean curd for a couple of minutes. 2. Add the leek and stir for another minute, then the mushrooms, garlic and ginger, stir-frying until the mushrooms release their moisture. 3. Add the asparagus, stock, soy sauce and sherry, then cover and simmer very gently until the asparagus is tender. 4. Add the cornstarch and stir until the sauce thickens. 5. Serve with noodles.
