2 cups vegetable stock
1 small sweet onion, diced
1 clove garlic, minced
3 tablespoons butter, divided
2 tablespoons freshly grated Parmesan cheese
1 cup chopped fresh asparagus
salt and ground black pepper to taste

Steps:

  • Melt 2 tablespoon butter in a 3-quart saucepan over medium heat. Cook and stir onion until softened and turning translucent, about 1 minute. Add garlic and cook for another minute. Stir in the rice, asparagus, and stock. Cover and reduce heat to medium-low.
  • Stir occasionally to prevent the rice from sticking to the bottom of the pan. Continue cooking until the rice is tender, about 10 minutes.
  • Turn off the heat and gently stir in the Parmesan cheese and remaining butter. Serve immediately.

2 cups uncooked egg noodles
1 teaspoon vegetable oil
3 skinless, boneless chicken breast halves
1 pinch salt
1 tablespoon seasoned salt
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 cup shredded Cheddar cheese
1 (4.5 ounce) can sliced mushrooms, drained
1 teaspoon minced garlic
1 (8 ounce) can extra-long asparagus, drained
1 cup crushed buttery round crackers
2 teaspoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a rolling boil. Stir in egg noodles and return to a boil. Cook the noodles uncovered, stirring occasionally, until cooked through but still slightly firm, about 5 minutes. Drain well.
  • Sprinkle both sides of chicken breasts with salt and seasoned salt.
  • Heat vegetable oil in a large skillet over medium heat and cook chicken breast halves in the hot oil until browned and no longer pink in the middle, 5 to 8 minutes per side. Set chicken breasts aside.
  • Mix cream of mushroom and cream of chicken soups, Cheddar cheese, mushrooms, and garlic in a large bowl.
  • Spread noodles in an even layer into the bottom of an 8x8-inch baking dish.
  • Arrange asparagus spears in a layer over the noodles.
  • Dice chicken breasts and spread over the asparagus spears.
  • Pour soup mixture over the asparagus.

½ cup wild rice
1 ¼ teaspoons kosher salt

Steps:

I started with a recipe from the Zuni Cafe Cookbook and added a few ingredients for taste and color and increased the quantity for my hungry family. It requires some chopping but comes together rather quickly and is very tasty! (Made in the Midwest with Michigan Asparagus:)

4 tablespoons extra virgin olive oil
1 large onion, diced
2 stalks celery, diced
1 large carrot, peeled and diced
3/4 cup rice, uncooked
12 cups chicken stock
3 ounces pancetta, diced
16 ounces asparagus, fresh
1 tablespoon lemon juice
2 cups cooked chicken, diced (optional)
salt
black pepper

Steps:

  • In a stockpot, saute the diced onion, celery and carrot in 2 Tablespoons of the olive oil, until the onions are translucent, about 8-10 minutes.
  • Stir in the rice and add the chicken stock.
  • Bring the stock to a simmer, cover and cook on low until the rice is tender, about 20 minutes.
  • Meanwhile, wash the asparagus and trim off the woody ends. (Throw them away or use them to make vegetable stock for another recipe.).
  • Slice the asparagus in 1-inch lengths on the bias, collecting the tips separately (because they cook very quickly and will be added last).
  • Heat the remaining 2 Tablespoons of olive oil in a skillet.
  • Saute the pancetta and asparagus pieces (not the tips yet) about 5 minutes, stirring as needed. The idea is to soften the asparagus but not cook it entirely.
  • Add the asparagus tips and saute an additional minute.
  • When the rice in the stock pot is tender, add the lemon juice, diced chicken, and the pancetta/aspargus mixture.
  • Bring to a boil; remove from heat.
  • Season with salt and pepper.
  • Serve.

1/2 cup extra virgin olive oil
4 plump garlic cloves, crushed and peeled
2 cups potatoes, peeled and cut into 1/2 inch cubes
3 cups chopped leeks, 1/4 inch pieces, white and green
5 quarts water
2 bay leaves
1 tablespoon coarse sea salt or 1 tablespoon kosher salt
1 cup arborio rice
fresh ground black pepper, to taste
1 cup freshly grated grana padano or 1 cup parmigiano-reggiano cheese

Steps:

  • Rinse the asparagus; snap off the tough bottom stubs.
  • Slice the spears crosswise into 1/3 inch chunks, including the tips.
  • Pour 1/3 cup olive oil into a large pot, drop in the crushed garlic, and set over med-high heat.
  • Golden the garlic for a minute or two, just until fragrant and lightly colored, and stir the potato cubes into the hot oil.
  • Cook/stir occasionally, until the potatoes are crusty and starting to stick to the bottom but not browned-lower the heat if necessary-4-5 minutes.
  • Stir in the chopped leeks; cook until softened and sizzling, 3-4 minutes.
  • Pour 5 quarts water into the pot; add in the bay leaves and tablespoon salt; stir well, scraping up any crusty potatoes on the bottom.
  • Cover, and bring to a boil over high heat; stir in all the asparagus, return to a boil, and adjust heat to keep the broth bubbling steadily and slowly reducing.

1/2 cup long grain and wild rice blend, uncooked
1 tablespoon vegetable oil
1 large onion, chopped
2 garlic cloves, finely chopped

1/2 teaspoon salt
1 pinch black pepper

1 bunch asparagus (about 1 pound), ends trimmed
1 tsp. kosher salt, plus more to taste
3 tbsp. salted butter
1/2 onion, finely chopped
2 garlic cloves, minced
3 tbsp. all-purpose flour
2 c. half-and-half
1/2 tsp. ground coriander
Black pepper, to taste

Steps:

  • Fill a large pot with 2 cups water and fit with a steamer basket. Bring to a boil. Add the asparagus and steam until tender, 3 to 4 minutes. Remove the asparagus to a cutting board and pour the water from the pot into a large measuring cup; add more water if needed to equal 2 cups. Set the pot aside.
  • When the asparagus is cool enough to handle, trim off the tips and halve lengthwise; toss with a pinch of salt. Save these pieces for garnish. Add the remaining asparagus pieces to a blender with 1 cup of the reserved steaming water and blend until very smooth.
  • Melt the butter in the pot over medium heat. Add the onion and cook until it begins to soften, 3 to 4 minutes. Add the garlic and cook until fragrant, 30 seconds more. Sprinkle in the flour and stir to combine.

1 1/2 lbs fresh asparagus, trimmed

Steps:

  • Spread rice in a 7" x 11" baking pan (corning dish).
  • Add chicken broth and mushrooms; dot with 2 tablespoons butter.
  • Place chicken breast in the center; sprinkle with garlic and onion powders.
  • Spoon mushroom soup over all.
  • Bake uncovered, at 350 degrees for 1 hour.
  • Remove and arrange asparagus around outer edges of baking dish; brush with melted butter and sprinkle with paprika.
  • Bake 15-20 minutes more or until asparagus is tender.

1 whole boneless, skinless chicken breast, cubed
2 cups wild rice, cooked
½ pound fresh asparagus
3 tablespoons hoisin sauce
4 tablespoons peanut oil
1 tablespoon brown sugar

Steps:

  • Cut asparagus into 3/4 inch to 1 inch pieces, discarding tough bottoms of spears. In a small bowl, mix together the hoisin sauce and brown sugar and set aside. Prepare rice OR reheat cooked rice and keep warm.
  • Heat wok over medium high heat. When hot, dribble 1 tablespoon of oil around the rim. Stir fry asparagus for approximately 2 minutes. Remove from the wok and keep warm. Heat wok to high heat.
  • Heat wok to high heat. Add 2 tablespoons of oil and the chicken pieces and stir fry until the chicken is no longer pink. Add the reserved asparagus and hoisin/sugar sauce and stir fry all together until pieces are coated with sauce. Serve over the hot rice.

This chowder-style soup showcases the hearty, nutty goodness of wild rice. 4 cloves garlic, minced
1 cup chopped red bell pepper
½ cup chopped carrot
¼ teaspoon sea salt
¼ cup almond flour
¼ cup chickpea flour
1 tablespoon snipped fresh thyme
1 tablespoon white wine vinegar

Steps:

  • Combine the stock, mushrooms, wild rice, leek, and garlic in a 5-quart Dutch oven or soup pot. Bring to a boil over high heat; reduce heat to medium-low. Cover and simmer for 45 to 50 minutes or until the rice is tender (kernels will start to pop open). Stir in the bell peppers, carrot, and salt. Cover and simmer for 8 minutes more.
  • Combine the almond flour and chickpea flour in a small bowl; stir in ¼ cup water. Stir the mixture into the soup. Cook, stirring constantly, for 1 to 2 minutes or until thick and bubbly. Stir in up to ½ cup more water to reach the desired consistency. Stir in the thyme and vinegar.
