FRESH ASPARAGUS AND PROSCIUTTO STRATA



Fresh Asparagus and Prosciutto Strata image

Freshly grated Parmesan cheese can be substituted for the asiago cheese, watch your salt amount as the prosciutto is salty. Plan ahead this needs to chill for a minimum of 1 hour before baking. Prep time includes 1 hour chilling time.

1 lb fresh asparagus, tough ends removed discarded (cut the asparagus into about 2-inch pieces)
1 loaf bread (use a crusty French or Italian bread cut into 1-inch cubes)
4 ounces prosciutto (thinly-sliced and cut into 1/2-inch strips)
1 1/2 cups shredded asiago cheese
1/2 cup chopped fresh chives
6 large eggs
3 1/2 cups full-fat milk
1 tablespoon grated lemon peel
salt and black pepper
1 pinch cayenne pepper (optional)

Steps:

  • Butter a 13 x 9-inch baking dish.
  • Cook the asparagus in boiling water (or steam) for about 2-3 minutes; drain and plunge into ice water or very cold water; drain and pat dry with paper towels.
  • Spread half of the cubed bread into the baking dish.
  • Top with half of the prosciutto, then half of the cooked asparagus, half of the cheese and half of the chives.
  • Layer remaining bread cubes on top, followed by remaining prosciutto, asparagus, cheese and then chives.
  • In a bowl whisk eggs, milk, lemon peel, salt, pepper and pinch cayenne (if using) until well blended; pour evenly over the layered ingredients.
  • Cover with plastic wrap and chill at least 1 hour.
  • Bake in a 350°F oven for about 40-50 minutes.
  • Serve warm or at room temperature.

Steps:

  • Heat oil in a large ovenproof skillet over medium heat. Add bacon and cook, stirring, until golden brown, about 4 minutes. Add onion and asparagus; sauté until vegetable are soft, about 3 to 5 minutes. Remove vegetables from pan and set aside. Preheat broiler. Off heat, coat same skillet with cooking spray. Arrange bread slices tightly in bottom of skillet. In a large bowl, whisk together eggs, egg whites, milk, mustard, salt and pepper; pour over bread and allow milk mixture to soak in entirely (like when you make French toast). Sprinkle bread with 1 tablespoon of Parmesan cheese. Place skillet over medium to medium-high heat. Cook, shaking pan frequently to promote even cooking, until almost cooked through to the top, about 4 or 5 minutes. Place skillet under broiler to set eggs, about 2 minutes. Butter, for greasing the baking dish
4 thick slices hearty whole-wheat/wholemeal or multigrain artisan bread {about 4 1/2 oz/130 g}
2 large eggs, lightly beaten
1 cup/240 ml whole milk
8 oz/225 g grated Fontina cheese {about 1 cup}
Sea salt
Freshly ground black pepper
6 to 8 asparagus stalks
4 thin slices mortadella or prosciutto {optional}
1 tbsp finely snipped chives

Steps:

  • Preheat the oven to 350°F/180°C/gas 4. Butter a small 4-cup/960-ml ovenproof baking dish.
  • Remove the crusts from the bread and cut into slices; you should have about 3 cups. Lay the slices across the baking dish, slightly overlapping and allowing some edges to hang over the sides.
  • Whisk together the eggs and milk in a large bowl. Stir in half of the cheese and season with salt and pepper. Pour three-fourths of the egg mixture over the bread cubes.
  • Peel the bottom half of the asparagus and break off the stem ends where it snaps naturally. Discard any woody stems.
  • Layer the mortadella over the bread and top with asparagus spears. Pour the remaining egg mixture over the top and finish with the remaining cheese. At this point, you can bake the strata immediately, or cover with plastic wrap/cling film and refrigerate overnight for a surprise breakfast in bed.
  • Bake the strata until just set, 30 to 35 minutes. Let cool slightly, sprinkle the top with chopped chives, and serve in the baking dish.

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
  • Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.

1 tablespoon vegetable oil
1 quart half-and-half
12 eggs
1 teaspoon salt and several grinds of pepper
12 slices fluffy white bread
1 pound cubed fully cooked ham
12 ounces extra-sharp cheddar cheese, grated
½ cup thinly sliced scallions

Steps:

  • Saute mushrooms in 1 tablespoon of oil. Season with salt and set aside.
  • Whisk half-and-half, eggs, salt and pepper until smooth. Spray a 9-by-13-inch Pyrex or ceramic baking dish with vegetable cooking spray.
  • Line bottom with 6 slices of bread. Scatter half of the ham, and half of the mushrooms over the bread, then sprinkle with half of the scallions and cheese. Pour 1 cup of egg mixture over the top. Repeat layers with remaining bread, ham, mushrooms, cheese and scallions. Slowly pour remaining egg mixture evenly over top. Cover with plastic wrap, then weight down casserole with 3 16-ounce cans for at least 15 minutes to submerge ingredients.
